- Hey everybody, it's Bobby here,
0:02
filling in for my mom on the...
0:05
I guess it's the Paula Deen Cooking Show on YouTube.
0:09
Mama's still recovering from her eye surgery,
0:12
she's doing really, really well,
0:13
but I think that she's enjoying the downtime
0:16
and having Jamie and me fill in,
0:18
and I certainly don't mind,
0:19
and I've got a pocket full of recipes,
0:21
better yet, a book full of recipes to choose from.
0:23
So today, we're gonna make some corn muffins.
0:27
We're gonna make pumpkin corn muffins.
0:30
These things are really good, they're very easy,
0:32
and I'm gonna walk you right through it.
0:34
Thing about corn muffins is,
0:36
they're just always good, they're always appropriate,
0:38
you can make them a day in advance
0:41
and have them for breakfast the next day,
0:43
or snacks for the kids, or whatever you want.
0:46
So let's get started.
0:47
I've got in front of me all the ingredients
0:49
and it's really simple as pie.
0:52
So here we go, I've got my oven pre-heated to 350,
0:56
and I have sprayed down with a non-stick coating spray
1:01
my baking pans.
1:03
So together, I'm gonna combine
1:05
some flour, (slapping bowl)
1:07
all purpose flour,
1:08
some cornmeal,
1:11
some sugar, half cup of sugar,
1:13
so that's one and a half cups of all purpose flour,
1:16
one half cup of cornmeal, half cup of sugar,
1:20
one and a half teaspoons baking powder,
1:26
baking soda, half teaspoon,
1:29
little bit of cinnamon,
1:32
half teaspoon,
1:33
and a quarter teaspoon of salt.
1:37
So we'll whisk all of these ingredients together,
1:40
so this is gonna be my dry ingredients,
1:44
and then we'll stir together the wet ingredients,
1:50
and then we'll combine the two.
1:51
So, so simple. (whisk scraping bowl)
1:54
If you don't make muffins, you really should.
1:57
My wife Claudia made some the other day
1:59
that were so good and they were so simple,
2:01
a recipe that she got from a friend of hers.
2:04
So that's the fun thing about muffins is they're,
2:07
you know, you can be creative
2:09
and make any flavor you want.
2:12
And they will go away fast, in fact, I asked Claudia,
2:15
(laughs)
2:16
I asked Claudia a couple days ago,
2:18
I think it was two days ago, I was like,
2:19
"Hey, are there any of those muffins left?"
2:21
and she was like, "Huh?
2:23
"No, they been gone."
2:25
I'm like, "All right."
2:27
Ya boy didn't get none.
2:29
All right, so I've whisked together those ingredients,
2:31
all the dry ingredients, and in another bowl,
2:33
I will whisk together my pumpkin.
2:38
(pumpkin splatting)
2:41
Time to eat, y'all.
2:43
(laughs)
2:45
Gets me every time because the punctuation,
2:47
the lack of punctuation, "It's time to eat y'all,"
2:49
I just don't feel good about it.
2:51
(laughs)
2:52
All right, so my pumpkin and some buttermilk,
2:59
some vegetable oil,
3:04
and before I--
3:05
Okay.
3:05
And a little bit of orange zest,
3:10
and a little vanilla.
3:14
Okay. (bowl clattering)
3:15
Couple of eggs, I'm gonna beat these lightly
3:18
before I add them in.
3:20
(eggs splashing)
3:22
These eggs, everybody, this is no joke,
3:24
these eggs are less than 24 hours old,
3:29
and I mean from delivery.
3:31
My mom has got a hen house out back
3:35
and she gets fresh eggs every day and I'm so jealous.
3:41
Unless I come over here and get some,
3:42
which I often do.
3:44
Then I'm no longer jealous.
3:46
All right, so two fresh eggs.
3:49
(bowl clattering)
3:50
And we'll stir all this together.
3:52
(ingredients splashing)
3:55
(hums affirmatively)
3:57
Smells delicious already.
4:01
These
4:03
muffins came from my cook book,
4:06
I've got two cook books out solo,
4:09
I've got a bunch out with my brother,
4:12
those were all great books.
4:15
We've got some family cook books out,
4:18
and then, when I was doing a show
4:20
called "Not My Mama's Meals"--
4:23
Sorry. (laughs)
4:25
Sorry about that.
4:26
When I was doing a show called "Not My Mama's Meals,"
4:30
I came out with a couple of cook books that were just grand,
4:33
and they were all based on
4:36
taking traditional recipes, let's say,
4:40
not necessarily like my mom's,
4:41
but traditional recipes and then just slimming them down
4:44
(spatula tapping) in smart, creative ways.
4:49
All right, so whisk again with my dry ingredients
4:51
and just make sure that they are
4:54
well put together, and then we're gonna combine
4:57
the two of them. (whisk tapping)
5:00
And it's just that simple.
5:02
Once we get them into the oven,
5:04
this is only gonna take about 20 minutes.
5:09
Okay.
5:11
So my wet ingredients into my dry,
5:13
and we'll just fold it in together.
5:19
These are great bowls, too.
5:20
Are these Mama's bowls?
5:21
- [Ed] Yeah. - Golly.
5:23
These things are fantastic.
5:29
Just a great bowl.
5:31
When you do a lot of cooking,
5:32
you just really appreciate good products, man.
5:37
These are great.
5:38
So we're just gonna kind of stir this
5:39
and fold it all together
5:42
until it's
5:44
one,
5:45
you know, 'til it's married together, you'll see.
5:48
When it doesn't look like this anymore,
5:50
you'll know when it's ready.
5:53
And then, we'll just
5:55
spoon it into our muffin trays.
6:00
Gosh, these smell terrific already.
6:05
I love the smell of pumpkin,
6:06
I love all the Fall flavors.
6:09
You know what, today is...
6:12
We're still in late August, it's August 31st.
6:15
By the time you see this, it won't be, but
6:18
I was talking to my landscaper today and he said,
6:20
"You know, believe it or not, we're already in Fall."
6:24
We were talking about grass and stuff like that.
6:26
He was like, "Your grass is just very soon to go dormant,
6:28
"it's already slowed way down."
6:30
He said, "Believe it or not, Fall is here."
6:32
I was like, (sighs).
6:34
From your lips to God's ears.
6:36
We live in Savannah, Fall feels very, very far away
6:39
in late August, man, it is cooking outside.
6:44
Okay, so you see our mixture looks really good.
6:47
(spatula tapping)
6:50
Looks really, really good.
6:54
So I think that...
6:56
How do I want to approach this, Ed?
6:58
I think...
6:59
Yeah, let me get an ice cream scoop.
7:03
(drawer clattering)
7:04
Perfect.
7:08
And we'll just use an ice cream scoop and go
7:10
straight into the muffin tin, here.
7:12
You don't want to fill it all the way up
7:13
because they're gonna rise.
7:16
You got baking powder in there, and all purpose flour,
7:20
and those two things are gonna rise,
7:21
so I would say maybe halfway.
7:27
Maybe half little scoops here.
7:30
You can do this, if you're nervous about baking,
7:33
if you're one of those people that you're nervous
7:34
about baking that you're gonna mess it up
7:36
or something like that, don't worry.
7:40
Don't worry.
7:43
Just have a good time, and enjoy it,
7:45
try things, and if you mess it up, who cares?
7:49
It'll still be good, even if they were
7:51
tall and overflowing, they'd still get eaten.
7:55
I'll tell you this, Claudia's, the ones that she made,
7:58
I walked in
8:01
after she had already put them into the muffin tins
8:03
and I was like, "Ooh."
8:05
I said, "Claud,"
8:07
I said, "Those are gonna rise."
8:08
(laughs)
8:09
She had them filled all the way up to the top.
8:13
And she was like, "No, I don't think so,"
8:15
and I said, "Well,"
8:16
I said, "What's in them?" And she told me
8:18
and I said, "Well yeah, they're gonna rise,"
8:21
and she said, "All right,"
8:21
and then we were watching them in the oven and
8:25
she turned on the light in the oven about
8:29
three quarters of the way through the cooking time
8:31
and she was like, "Uh-oh."
8:32
(laughs)
8:35
I said, "Uh-huh, they rose didn't they?"
8:37
and she said, "Yeah."
8:39
But they were so good, and so simple.
8:42
Some of the best muffins really are just the simplest, too.
8:46
Applesauce is good in some muffins.
8:50
I'm gonna need, I'll tell you what,
8:51
I'm gonna have a couple little leftovers here.
8:53
I might need to do one more trip.
8:55
Well, no, I can make it happen.
8:57
Have we got mini-trays?
8:58
- [Ed] Yeah, right up in here.
9:00
- I've got one or two,
9:01
I've got one here for sure
9:03
that looks like it could use a little extra.
9:06
These are not all exact.
9:10
Where are the little trays, up here?
9:14
Yeah, I see them.
9:16
(trays clattering)
9:19
Go to Paula Deen's house if you want some
9:22
fine cooking and baking equipment.
9:28
- [Ed] Don't forget to spray it.
9:29
- Oh, yeah, oh my gosh, yeah, you're right, Ed,
9:31
I almost forgot.
9:32
(laughs)
9:33
Thanks.
9:44
(spray hissing)
9:50
Perfect.
9:52
(cabinet closing)
9:57
(tin clattering)
9:59
And now that I've done this,
10:00
I may not have enough batter
10:02
to go all the way around,
10:03
but at least I'll use it all
10:04
even if I don't fill this tray all the way up.
10:07
I at least don't want to waste any of the batter.
10:11
(scooper scraping bowl)
10:12
I like little mini-muffins too.
10:15
You know why?
10:16
'Cause you can just eat 'em in one bite!
10:20
- [Ed] So what was the muffin that Claudia made?
10:23
- I'm trying to think of it.
10:25
They were so plain, there was almost nothing to 'em.
10:28
There was the...
10:32
Oh, my gosh. (scooper scraping bowl)
10:36
They were
10:38
cinnamon
10:39
and
10:41
(scooper scraping bowl)
10:43
she said they were chocolate.
10:44
Gosh, what was it?
10:46
It was two flavors that don't go together.
10:49
They were blueberry.
10:50
They were blueberry with a little cinnamon,
10:53
and it was either blueberry or chocolate
10:56
and she said, "How 'bout if I just do
10:57
"blueberry and chocolate?"
10:59
And I said, "Well, (scooper clattering)
11:02
"I like blueberry and I like chocolate,
11:03
"but I don't think I like chocolate and blueberry together,
11:07
"so let's just choose one."
11:10
And we went just blueberry,
11:13
but the mix that we put together was very, very basic,
11:18
almost nothing to it, that she put together.
11:21
And it was a recipe from a friend,
11:23
from whom, I don't know who she got it,
11:26
but you can bet that with my wife Claudia,
11:30
it was very, very light, there was almost nothing to it.
11:34
In fact, she was making them for our babies.
11:38
Yeah. (bowl clattering)
11:42
So, that's not even, it's not even close to even.
11:48
I'm gonna have to kind of steal here a little bit.
11:56
These little ones are gonna be the best ones,
11:57
I'll bet, watch.
12:01
Let's see, got one that's over-full?
12:04
No, they all look great.
12:07
Beautiful, okay.
12:08
So my oven is pre-heated to 350.
12:11
(oven creaking) In they go
12:12
(tin clanging) for about 20 minutes.
12:16
(tins clanging)
12:21
Okay, welcome back, everybody.
12:22
It's been about 20 minutes
12:23
so let's check on our pumpkin corn muffins.
12:27
(oven creaking)
12:28
Oh, yeah.
12:30
The little ones look great.
12:33
Those look really good.
12:35
Maybe inconsistent, a tad inconsistent in size,
12:38
but that's all right.
12:40
And then, oh, yeah, look at that.
12:44
Oh boy, are these good.
12:45
Oh, this oven's so hot!
12:47
(laughs)
12:49
(oven creaking)
12:50
Imagine that, a hot oven.
12:51
(both laughing)
12:53
They look great.
12:56
Here's the way to check
12:59
your corn muffins whenever you make them.
13:01
I'm sure the small ones are ready.
13:03
So just drop a toothpick in there
13:06
and pull it out, and if it comes out cl--
13:08
Uh-oh.
13:09
Maybe a crumb or two on there, but not many.
13:11
I'm gonna say that they're ready.
13:15
That toothpick is sliding right out, yeah,
13:18
so they're ready.
13:19
I'm gonna let 'em cool on the racks here for,
13:22
I don't know, a few minutes,
13:23
and then we'll come back and we'll pop 'em out.
13:26
Hopefully, they'll pop out.
13:28
Okay, so my pumpkin and cornmeal muffins
13:30
smell so, so good.
13:32
They came out of the oven just a couple of minutes ago.
13:34
Let's see if they pop right out
13:36
like I hope that they do.
13:40
I feel sure that they will.
13:43
(muffins tumbling)
13:44
Oh, my gosh.
13:45
(both laughing)
13:47
(tin clattering) They came right out.
13:49
Maybe I aimed that in the wrong direction.
13:54
Yeah, there they go, beautiful.
13:57
And then my little minis.
13:59
I know the minis are gonna cooperate.
14:03
(muffins tumbling) Oh yeah.
14:06
They just came--
14:08
One little sticky, all right.
14:10
(tin clattering) - [Ed] Real nice color.
14:11
- [Bobby] They look absolutely perfect.
14:14
That is a nice color.
14:16
With the pumpkin.
14:19
Oh, my gosh.
14:20
So I will let these just sit out here and cool
14:25
for about five minutes.
14:26
Why would you let 'em cool
14:27
when they would be so delicious warm?
14:29
You're right, that's a great question.
14:30
They would be so delicious right now,
14:33
so why don't we see if they're delicious right now?
14:37
(hums affirmatively)
14:39
They certainly are.
14:39
- [Ed] And now Paula Deen definitely would approve it.
14:42
(laughs)
14:45
- Those are so good.
14:48
So good, not overwhelming in any direction,
14:51
just a perfect light flavor.
14:53
Oh, my gosh.
14:55
So, so good.
14:56
Please make these muffins.
14:58
(hums affirmatively)
15:00
Light and delicious, and look at this.
15:04
For presentation.
15:07
Look at that great basket of muffins.
15:10
I did this in real time,
15:12
this took me about
15:15
20 minutes in the oven,
15:18
and then another five minutes on the cooling racks
15:21
there for these muffins.
15:23
They are beautiful and ready to either
15:27
have some company over
15:30
or deliver to a friend or a new neighbor.
15:32
These are beautiful pumpkin corn muffins.
15:36
They're from my book,
15:38
Bobby Deen, "From Mama's Table to Mine,"
15:42
they're a beautiful muffin, and I forgot to tell y'all,
15:46
let's see, I've got the numbers here.
15:53
These are only eight grams of fat
15:56
and 161 calories per serving,
15:59
so not only are they easy and delicious,
16:02
you can feel good about 'em, too.
16:04
So y'all come back and we'll
16:07
keep making recipes.
16:09
Thanks for tuning in.
