- Welcome to our kitchen.
0:02
Michael is sitting here making his famous tuna salad.
0:06
- World famous.
0:07
- World famous, and it is real good.
0:10
I know Kari Hiers loves it.
0:13
If she came in this kitchen,
0:14
she'd eat half that bowl.
0:17
But I'm fixin' up to share a recipe with y'all
0:21
that a fan out there shared with me,
0:25
and I start by melting a half a stick of butter.
0:29
So, while I'm melting this,
0:31
I just wanna remind y'all that,
0:33
when you come on the video,
0:35
I wanna remind y'all to subscribe,
0:40
because that way you'll get notices
0:43
that otherwise you wouldn't get if you don't hit subscribe.
0:46
And, of course, it costs nothing.
0:48
It costs not one penny.
0:51
So I'll remind y'all of that daily. (giggles)
0:58
I wanna wash my hands real quick-like before I get started,
1:06
'cause this might,
1:08
I might wind up with some hand action in this recipe.
1:14
So the recipe calls for a nine by nine square.
1:18
I don't have a nine by nine,
1:19
but I do have an eight by eight,
1:21
so I'm just gonna pour that butter in the bottom.
1:26
And you know, I just truly love hearing from y'all.
1:30
I love it.
1:32
And this is from Kathy Reigns Cherry.
1:38
Isn't that cute last name, Cherry?
1:40
Kathy Cherry, I love it.
1:42
She said "Good morning, Ms. Paula.
1:44
I'd like to share a biscuit recipe with you.
1:46
The biscuits are called 7-Up biscuits.
1:49
I first saw this recipe on Facebook a few years ago,
1:52
and I thought, well, it had to be a joke,"
1:55
but she said, finally, after a few months,
1:58
her curiosity got the best of her and she made 'em,
2:02
and she said they literally melt in your mouth.
2:07
And she goes on to say,
2:09
"Paula, I've been a huge fan of yours
2:11
since your show on Food Network,
2:13
and I found your quarantine cooking on YouTube
2:16
back in the fall of 2020,
2:20
and now I watch you without fail every morning.
2:25
You truly are my favorite southern cook."
2:27
That's sweet, sweet.
2:28
She said I remind her of her precious mother,
2:31
Clara May, who's no longer with 'em.
2:34
And she said her mama loved the show
2:38
and she watched it every day.
2:40
And her favorite recipe was Not Yo' Mama's Banana Puddin',
2:43
and Kathy said she never,
2:45
she said, every Sunday, her mother had banana puddin'
2:49
on the table for Sunday dessert,
2:53
and she said she never liked it.
2:55
But then she tried Not Yo' Mama's,
2:58
and Kathy said it's a regular on her,
3:02
only banana puddin'
3:03
that she will let come out of her kitchen.
3:07
So, Kathy, thank you so much.
3:11
She was born in Kentucky.
3:12
Oh, I wanna read y'all this part.
3:16
She was blessed to be born
3:17
in the beautiful Bluegrass State of Kentucky,
3:20
and as a child, "We tied June bugs on crochet threads,"
3:26
you know, 'cause it's a thicker thread,
3:29
"and flew them like kites." (giggles)
3:32
- [Michael] We used to do that.
3:33
- Oh, Michael said he used to do that.
3:35
"We ate fried baloney sandwiches
3:38
on white bread with mayonnaise.
3:39
We drank ice cold Pepsi from glass bottles
3:43
and we bought penny candy from Ruth Harris' store.
3:48
Yesterday's memories have become today's treasures."
3:52
And I know exactly what you're saying, Kathy, exactly.
3:57
- [Michael] I did all them things.
3:58
- You did all them things?
4:00
- [Michael] Mm-hmm.
4:01
- All right, so the recipe for 7-Up biscuits, y'all,
4:04
calls for two cups of that biscuit mix that everyone knows.
4:11
But over the years I developed my own,
4:15
which I think is incredible.
4:20
To me, it's the best biscuit mix
4:23
I've personally ever tasted,
4:26
but you won't find it in your grocery stores.
4:28
You'd have to go to a Paula Deen Store
4:31
or the website or...
4:33
- [Cameraperson] PaulaDeen.com?
4:35
- PaulaDeen.com,
4:38
if you would like to try some.
4:40
So I've got two cups of that,
4:43
and Kathy tells me to cut in the sour cream, into the mix.
4:51
You sealing that up, Michael?
4:53
Michael just got back from the doctor,
4:56
so the doctor is encouraging him
4:58
to lose a little weight, (giggles)
5:01
so he's gonna be living off tuna fish now for a few days.
5:07
But I tell you what, once Michael makes up his mind,
5:09
he can do anything in this world.
5:11
I've never seen such
5:14
a person with so much determination.
5:20
So today is like January the first for him,
5:24
New Year's resolutions.
5:29
All right.
5:34
You know, my biscuit mix,
5:37
I never make a biscuit at my house
5:40
that I don't make it with butter milk.
5:43
The butter milk just gives that mix the best twang.
5:47
You know, it's just a twang that you can't get
5:50
with regular sweet milk.
5:53
Okay.
5:55
Now, it calls for a half, whoa,
6:00
a half a cup of 7-Up.
6:08
And she doesn't say whether you use diet.
6:13
- [Michael] Mama used to make a 7-Up cake.
6:15
- I'll be doggone.
6:18
That is exactly a half a cup.
6:23
- [Michael] You've only been doing it 80 years.
6:25
- (laughs) I ain't been doing it no 80 years.
6:31
I may look like it. (laughs)
6:37
So this is gonna make a soft dough,
6:47
and this is the same process that I use
6:52
when I'm making regular biscuits.
6:56
All right, so we're gonna,
7:00
we're gonna take some of the extra biscuit mix.
7:09
Let me get this outta the way so you can see what I'm doing.
7:18
And my counter's super clean,
7:20
so I'm just gonna do it right here on the counter.
7:33
Just gonna empty that into
7:39
our extra biscuit mix.
7:45
Just gonna knead it a little bit.
7:47
Don't wanna overwork it,
7:55
'cause we want these to be nice and tender.
8:01
Now, I don't know if she says roll them out.
8:02
I usually just pat my biscuits out.
8:12
Pat dough, yeah.
8:14
Just pat it out.
8:15
That's the way I do it.
8:19
Into like a nine by nine,
8:21
or eight by eight, whatever you're using.
8:28
Okay, and I'm using,
8:33
what is that, like a two inch?
8:35
Looks like about a two inch to me.
8:44
And she said to lay 'em right on top
8:49
of the melted butter.
8:54
Ooh, I can't wait to taste these.
8:59
I'll taste it for you, okay, Mikey?
9:01
- [Michael] Yeah.
9:03
I'll take pictures of it.
9:04
- Okay. (laughs)
9:13
Beautiful biscuits,
9:16
and so stinking easy to make.
9:23
All right, now I'm gonna have to rework this dough
9:29
to get my last two.
9:38
Oh my gosh, it smells so good.
9:58
Put this in that butter.
9:59
- [Michael] Why'd they used to push that thumb
10:02
in the top of the biscuit?
10:05
- Well, my grandma, my Grandma Hiers did that.
10:09
I'm just moving that butter around.
10:13
And I don't know why she did it, Michael,
10:16
but you know, she always used to do this.
10:20
And I thought, well, maybe she did it
10:22
so it'd give 'em a place to put the butter.
10:28
But I was actually reading the other day,
10:30
can't remember where I was reading it,
10:32
but they say it's done
10:39
for making the biscuit rise,
10:42
so I don't know.
10:44
So Kathy said to cook these for,
10:47
I wish I could get one,
10:48
I could get one more, but I ain't got a place to put it.
10:53
Kathy said to cook these in a preheated oven.
10:57
I think she said 12 to 15 minutes.
11:00
Let me see what I did with the recipe.
11:03
Yep, 12 to 15 minutes in a preheated 450 degree oven,
11:09
so that's why they don't cook very long,
11:12
'cause 450 is a hot oven.
11:14
Ooh, look at those biscuits.
11:16
Nice and brown.
11:19
Yum, and still got butter in the bottom.
11:26
Well, Kathy, our biscuits look heavenly,
11:30
and I have my own line of honey, and it is so good.
11:35
I love it.
11:36
I have it in different flavors.
11:38
This is a Wild Berry,
11:42
and they're all so, so good.
11:45
But...
11:50
(Paula giggles)
11:53
Mm, it's delicious.
11:57
Mm.
12:00
Kathy, I so much appreciate you
12:01
sharing that recipe with us, all of us, that
12:13
watch this video.
12:15
And you know, the honey or preserves or jelly
12:21
is wonderful with a biscuit,
12:23
but I hope y'all will watch the next video,
12:28
because I'll tell you something else
12:30
that's wonderful on these biscuits,
12:33
and that's sawmill gravy. (giggles)
12:36
So that's the next recipe coming up tomorrow.
