- Hello, y'all.
0:02
I am fixing to make one of my favorite breads,
0:05
zucchini bread.
0:10
Now, I've got a zucchini bread recipe
0:14
in one of my first two cookbooks,
0:18
I think my first one,
0:21
and it is wonderful.
0:25
If you will make you an herbed cream cheese
0:28
to spread on it, it's just such a great treat.
0:34
I know I've done that before,
0:35
but I didn't write down what I was doing,
0:40
so I'd have to just play it by ear again,
0:42
but that is really, really good.
0:44
So, I'm gonna go ahead and read off the ingredients
0:49
of this recipe.
0:50
It's so easy to make.
0:53
I've got three cups of all-purpose flour,
0:56
a half a teaspoon of baking soda,
1:02
no, half a teaspoon of baking powder,
1:05
one teaspoon of salt,
1:07
a half a teaspoon of cinnamon.
1:11
And I might put a little bit more.
1:13
And a half a teaspoon of nutmeg
1:17
and one teaspoon of baking soda.
1:20
And I'm gonna put all of that in
1:22
with my flour and my sugar, and I'm gonna...
1:30
sift it.
1:32
So, here we go.
1:35
Gonna try to keep most of the flour
1:38
in the middle of the sifter.
1:40
(Paula chuckling)
1:45
Well, most of it went in the center.
1:48
(dish clinking against the counter)
1:48
All right.
1:51
Now I'm gonna add my spices, my nutmeg,
1:56
my cinnamon,
1:58
my salt,
2:00
my soda,
2:04
and my baking powder.
2:06
And you know what?
2:07
I think...
2:11
I think I'm gonna add just a little,
2:13
wee bit more cinnamon,
2:16
'cause I really, really, really love the taste
2:19
of that cinnamon.
2:23
- [Eddie] You know, it may be up here with the extracts.
2:25
- Oh, you know what?
2:26
I think it is, but I know
2:28
I've got some in every which way to Sunday.
2:33
But I think you're right.
2:34
I think the...
2:37
The cinnamon might be over here in the baking center.
2:40
Yeah. I got a bunch over here, lots of different ones.
2:45
So I'm gonna add just a little bit more cinnamon.
2:49
Maybe about a half a teaspoon.
2:54
'Cause I think it makes it so, so good.
2:58
Make sure I get all the flour out.
3:01
Now, I don't think I'm going to worry
3:03
about sifting my...
3:06
sifting my sugar in with it.
3:08
It's mainly the flour that you want.
3:19
You want your flour sifted.
3:26
(Paula gently hitting side of sifter)
3:28
I've gotten where lots of times, I just use a-
3:31
Oh, I wish y'all can see back here.
3:33
Look, look down here, Eddie.
3:36
Can you walk around down here and look over here?
3:38
- [Eddie] I don't want to.
3:39
(Eddie laughing)
3:40
- Huh?
3:40
- [Eddie] I don't want to.
3:41
(Eddie laughing)
3:42
- Yeah, it won't bite you.
3:47
(Paula laughing)
3:48
Look at my feet.
3:49
(Paula laughing)
3:59
That sea salt and kosher salt
4:03
will not go through the sifter.
4:08
You wind up, and all you can see is your salt.
4:11
All right.
4:12
So I'm gonna take a whisk,
4:13
and I'm just gonna...
4:17
just whisk those two ingredients together.
4:24
So, what makes this different
4:27
from my zucchini bread that I've always used
4:34
since the beginning
4:38
is this has chocolate chips in it.
4:41
And it's almost identical to my plain zucchini bread.
4:49
All right, now I'm gonna just...
4:53
beat my eggs a little bit.
4:56
(eggs beating in dish)
4:58
And other than that, we don't need the mixer, y'all,
5:02
because you know in some breads and muffins,
5:06
it's all just a stir.
5:12
So there they are.
5:15
Transfer this to my big bowl.
5:23
Let me clean up a second.
5:25
(bowls lightly clanging)
5:27
Get some things outta my way.
5:32
All right.
5:35
In goes my eggs.
5:42
And my oil.
5:53
(dishes lightly clanking on countertop)
6:01
I'm gonna go ahead and add my orange zest,
6:07
and it smells so, so wonderful.
6:14
And if I was using a mixer,
6:19
I would wait until the last to stir this in,
6:23
because it'll get all caught up in your beaters,
6:27
and you won't have any zest in whatever you're making.
6:30
So that's just a little tip.
6:40
That orange zest is gonna...
6:44
really make it nice.
6:56
I wonder.
7:00
I wonder, Eddie.
7:03
I've still got to add my vanilla flavoring.
7:06
I wonder if my orange extract would be good.
7:14
You know, in this, to kick up that...
7:17
- [Eddie] Yeah.
7:18
- [Paula] Orange.
7:20
All right, let's see, it calls for two teaspoons
7:27
of vanilla flavoring.
7:29
Look, I'm shaking.
7:33
I've noticed that sometimes this thumb,
7:36
it'll go like that- - [Eddie] It's twitchin'.
7:37
- [Paula] and I think, stop it!
7:38
(Paula laughing)
7:39
I can't stop it.
7:40
'Cause I'm not nervous.
7:41
I mean, look.
7:43
(Eddie chuckling)
7:44
I think that too comes with old age, you think?
7:48
All right.
7:48
So I'm just going mosey on over here
7:51
and take a sniff of this orange extract.
7:55
I don't want to mess this up, Eddie.
7:58
- [Eddie] Is it strong?
7:59
- Yeah. I mean, smell it.
8:00
It's, it's just incredibly wonderful.
8:04
- [Eddie] Yeah. You, you may not need it.
8:06
- Yeah.
8:07
I think maybe just the zest
8:08
might give it just the perfect.
8:12
All right, so I've added my vanilla flavoring.
8:15
I'll try that another day.
8:20
Okay.
8:24
Now, I'm gonna stir in that beautiful zucchini,
8:28
and zucchini has a lot of water in it.
8:33
So that's gonna...
8:37
produce a certain amount of liquid for us.
8:45
Mm, mm, mm.
8:53
All right, now here's for the really good stuff.
9:00
I'm using the mini chocolate chips,
9:03
and it calls for a cup,
9:04
but you know, I may not use a full cup,
9:07
because there may be people that really don't care
9:10
for the chocolate,
9:12
and I'm using one cup of minced pecans.
9:15
And I mean, these are minced.
9:18
- [Eddie] Those are semi-sweet chocolate or...?
9:22
- [Paula] Yes.
9:24
The chocolate chips are semi-sweet.
9:27
(dish lightly clinking on counter)
9:32
You're not even gonna know there's a nut in there.
9:34
Those are chopped so fine.
9:35
And they came that way, Eddie.
9:37
We didn't, we didn't do that.
9:40
When one, I just picked them up at the grocery store.
9:43
- [Eddie] You know, I think, I think I got those.
9:47
We were gonna try doing the little baklava cups again.
9:51
- [Paula] Oh, yeah.
9:52
(Paula laughing)
9:52
- [Eddie] And I figured that would make our job easier,
9:54
cutting 'em up.
9:55
- [Eddie] Yeah, and I think I saw 'em
9:56
and maybe put 'em in the freezer,
9:59
'cause I thought, mm...
10:03
it's a little too tiny for my cookies.
10:08
'Cause you know how I am about my nuts.
10:12
All right, what do you think?
10:14
Maybe a little bit more?
10:19
(dish lightly clinking on counter)
10:21
What you think?
10:22
Between the nuts and the tiny chocolate chips,
10:29
I can't tell which is which.
10:34
All right.
10:37
So Theresa has so very sweetly sprayed our pans.
10:41
- [Theresa] What do we bake this at?
10:43
I wanna make sure the oven is-
10:44
- [Paula] Probably 350.
10:46
I have not-
10:47
- [Theresa] That would be my vote too,
10:48
but you know.
10:49
- I have not-
10:50
- [Theresa] 350.
10:52
(dishes clanging)
10:53
- I have not checked myself, so.
10:55
- [Theresa] 350 for 50 minutes.
10:57
- Yep. For 50.
10:59
Not 15 but 50.
11:03
All right, so to make sure I...
11:06
get my loafs even,
11:10
I'm gonna use my one-cup measurer.
11:16
See how stiff that is?
11:20
Okie dokey.
11:28
And a tad for you.
11:31
(Paula chuckling)
11:36
And a tad for you.
11:38
(Paula chuckling)
11:42
- [Theresa] I've never seen somebody that can scrape a bowl
11:44
like you can, Paula Deen.
11:46
- And, listen.
11:48
I don't know. It's somethin' in my genes.
11:53
You oughta see my chicken bones
11:54
when I get through with those.
11:56
Or my fish bones
11:58
on my pork chop bones.
12:00
(Paula chuckling)
12:02
And my God love my brother, he was the same way.
12:05
You couldn't even recognize a chicken bone
12:07
if he got through eating chicken.
12:10
Okay, 50 minutes, 350.
12:14
Y'all, this zucchini bread is cooled to nothin'.
12:16
I can pick it up.
12:19
- [Theresa] Ooh.
12:20
- [Paula] Oh, my gosh.
12:22
I wish y'all were here.
12:25
I wish you was sitting right there
12:27
and right there and right there
12:28
and right there in my stools, in front of this stove.
12:34
- [Theresa] Look how even they are!
12:36
- Yes!
12:39
(pans clanging)
12:41
Mm, mm, mm.
12:45
Wow.
12:47
Wow!
12:50
No wonder I'm fat as a little piglet.
12:53
(Paula chuckling)
12:56
Okay.
12:57
Who would like a try?
12:59
Who would like a try?
13:01
Would you like a try?
13:02
- [Theresa] I can't with the chocolate,
13:03
but Eddie, you should try it.
13:04
- [Paula] Oh.
13:06
- [Eddie] But this. There's hardly any chocolate in there.
13:09
- [Paula] No, it's not much.
13:12
- [Eddie] Olivia would probably-
13:13
- [Paula] Mm-hm. Oh, yeah.
13:17
There you go, Eddie.
13:19
Would you like some cream cheese on it?
13:29
- [Eddie] It's good.
13:30
- [Theresa] So good.
13:32
- [Eddie] You can taste the orange.
13:34
- Mm-hm. You can really taste the orange.
13:36
But you know what?
13:39
I got to be honest.
13:41
- [Theresa] You still like your other one?
13:42
- I like it without the chocolate chips,
13:45
but that's the grown-up in me.
13:47
- [Theresa] This is a good way
13:48
to get children to eat it.
13:49
- Yes, the kid in me would want the chocolate.
13:54
- [Eddie] Chocolate's not strong-tasting.
13:56
- Uh-uh, uh-uh, uh-uh.
13:57
- [Theresa] I think the mini chips helped too.
13:59
'Cause it's just- - Uh-huh.
14:00
- [Theresa] We used the mini ones instead of the big ones.
14:02
- I think so too.
14:04
- [Theresa] So it's not overkill.
14:05
- And this.
14:10
I just put a little speck of honey pecans on it.
14:15
And it's real good.
14:16
You know, I told you,
14:18
when I make my zucchini bread,
14:21
I make up an Italian cream cheese.
14:24
But remember, mine doesn't have the chocolate chips in it.
14:28
I don't think it'd work for this one.
14:30
- [Theresa] I'm almost positive,
14:31
and I know Eddie kind of confirmed it earlier,
14:33
we've made the other zucchini bread,
14:35
so if they search it on the YouTube channel-
14:38
- [Paula] Mm-hm.
14:38
- [Theresa] They should be able to find that one as well.
14:40
And it'll have the recipe.
14:43
- Delicious.
14:45
- [Theresa] Another hit.
14:50
- Loving best dishes from a little fat girl
14:54
in Savannah, Georgia.
14:56
(Paula laughing)
