- Today I'm fixing a recipe
0:03
that my daughter-in-law Brooke makes
0:07
A lot.
0:08
And
0:09
Especially at Christmas time,
0:10
I guess 'cause it's the color of Christmas,
0:14
but it's hot.
0:16
It's hot here in Savannah, sweats dripping
0:18
off my hair right now and so I want cool things to eat.
0:25
And this is definitely a cool thing.
0:28
It's Brooke's strawberry pretzel salad.
0:35
And the first thing we're gonna do is make our crust
0:41
using crushed pretzels, sugar
0:45
and a stick and a half of melted butter.
0:49
And that's going to get baked
0:50
off at 400 degrees for about seven minutes.
0:56
Our first step is to melt a stick
0:58
and a half of butter, not margarine, but butter.
1:04
Our butter is melted now to our melted butter.
1:08
I'm going to add three tablespoons of sugar
1:13
(clattering)
1:16
and now I'm gonna stir in my crushed pretzels.
1:22
So you get, we're going to have a sweet
1:25
and savory, sweet and salty.
1:29
I do love, love, love that.
1:31
(bowl clatters)
1:37
You give me a candy bar with some salt
1:39
in it and some sweet and I am a happy, happy girl.
1:45
All right. Now this is the crust for our salad.
1:53
And we're going to bake this
1:55
off about seven, seven minutes not long.
2:02
On like 400 degrees.
2:07
Okay.
2:09
- [Mikey] Wow. That's just an amazing smell.
2:13
- I could live off of that.
2:14
- [Paula] I know! Butter and pretzels.
2:16
- [Theresa] With sugar.
2:17
- [Paula] With sugar, yes.
2:19
(clears throat)
2:23
We're just going to use my little measuring cup to
2:27
try to get it mashed down pretty even as, even as I can.
2:37
All right, now. I'm going in with a utensil.
2:42
That's the best of all.
2:45
And that's these grubby little hands.
2:55
Okay.
2:56
Let me check my notes and yes, we're going to bake this
3:00
for seven minutes.
3:03
And you're gonna need to allow your crust
3:06
to cool before you start putting your layers on it.
3:10
And we have let this crust get nice and cool.
3:14
And you got the sweet and the salty here.
3:17
It's gonna be so good.
3:19
I've got fresh whipped cream.
3:21
Now I think Brooke uses a frozen,
3:26
green product,
3:28
but you know, anytime it calls for that product
3:31
I always use freshed whipped cream.
3:35
Freshed?
3:36
Freshed-ist whipped cream?
3:38
(laughs)
3:39
and I sweeten it and it, to me, is just good.
3:43
So for this next layer, I'm going to put
3:47
in eight ounces of cream cheese.
3:50
Come on, fall over
3:54
and
3:59
I'm going to mix them with sugar.
4:03
And I think that was like three-fourths of a cup of sugar.
4:09
Oh, we're gonna scoot this around.
4:13
(electrical whirring)
4:15
(bowl rattles)
4:18
I got that on low speed to start with
4:24
Now, Brooke uses strawberries to
4:27
make this particular salad, but you know, I don't
4:32
see why you couldn't do it with other fruits
4:35
like blueberry.
4:37
I know I used to make a blueberry pie that had
4:40
this same kind of crust and the cream cheese
4:45
and then fresh blueberries.
4:47
So, you know, whatever, whatever is in season.
4:53
I think the blueberries would be wonderful.
4:56
But since we're coming up on the Fourth of July,
5:02
I may dot this with some blueberries
5:04
'cause we gon' have our our red, our white,
5:10
and we ain't got no blue right now.
5:14
So we may find something,
5:17
to put a little blue in the picture.
5:21
Okay. This is nice and creamy.
5:25
Now we're gonna fold in our fresh whipped cream.
5:33
And we don't want to do this part
5:34
with a mixer because we don't want it to break
5:38
down or over-whip our whipping cream.
5:45
So, you know the drill for folding:
5:49
over, under, and back again.
5:55
Takes a few minutes,
5:57
but this is really the best technique.
6:03
Okay. Oh my gosh.
6:05
That looks so good.
6:07
I'm starving.
6:11
Mm.
6:28
All right. We're bout there ya'll.
6:36
Now I think it's safe to
6:37
give a little stir.
6:42
Make sure it's all mixed up.
6:43
(bowls clatter)
6:44
Oops.
6:50
All right, now we're going to spread this layer evenly
6:55
over our first layer.
7:11
Getting every last drop, as I'm known to do.
7:28
I can't wait to get back into my kitchen ya'll
7:35
where I've got lots and lots of room.
7:37
This kitchen has been wonderful.
7:40
I'm so thankful that Bobby was gracious enough to let Mikey
7:45
and I come live in their guest house
7:49
But, um,
7:52
I am looking forward to getting a little bigger
7:56
kitchen back.
8:03
You know, this is called a salad y'all
8:08
but I think it just as easily can be a dessert
8:13
especially during the summertime.
8:21
Okay. That's it.
8:22
Okay, now we're going to move on to our next layer.
8:28
- [Theresa] I'm gonna put that in the refrigerator
8:30
because it needs to chill.
8:33
- Okay. I think so too.
8:35
So, we have two packages of strawberry jello.
8:42
So is this bowl Theresa?
8:45
- Yes. Ma'am I literally just turned it off.
8:48
- Okay. So we are going to
8:53
dissolve our jello,
8:56
and allow it to cool, just slightly, ya'll.
8:59
- [Theresa] Does that mean Paula?
9:00
- What?
9:01
- [Theresa] When it says just slightly?
9:02
- (laughs) Just slightly.
9:04
- [Theresa] I mean, does that mean, 5 minutes, 20 minutes?
9:07
- It doesn't mean cold.
9:08
It doesn't mean cold.
9:15
It just means give it a few minutes.
9:16
Maybe 15 minutes.
9:18
- [Theresa] Okay.
9:19
- [Paula] You know, to just cool off a little bit.
9:23
(dog barking)
9:24
What is it?
9:29
- [Theresa] Nobody's here to visit you.
9:37
- Okay. Now this one, this particular strawberry salad where
9:46
you send pineapple, we gon' put some
9:48
pineapple in it, as well.
9:52
You don't have to, but we are.
9:56
We're going to use one eight ounce can of crushed pineapple.
10:01
And we're going to add it to the cooled gelatin
10:08
along with our strawberries.
10:12
So that's it, 15 minutes, and I think that will do it.
10:16
We just don't want to put our beautiful strawberries
10:20
into scalding hot boiling water because it will break 'em
10:25
down and we don't want our strawberries broke down.
10:31
So there we go.
10:33
Now, if you want to, you could always sit this
10:36
in the refrigerator and encourage it to cool
10:40
a little bit quicker,
10:42
- [Theresa] Which is what we're gonna do.
10:44
- which is what we gon' do, okay?
10:47
Okay, y'all, I put that gelatin
10:50
in the refrigerator to help it cool alone,
10:52
and we gave it like 15 minutes.
10:58
So that's slightly, slightly cooled.
11:05
Now to that - I'm going to do it this way, I think.
11:10
Let's do it this way.
11:17
(grunts)
11:19
- I don't want any strength left in my hands.
11:22
- [Theresa] You want me to come open it?
11:23
- [Paula] Well, if you can.
11:30
It's amazing how
11:34
how much strength as you get older
11:37
that you lose in your hands
11:41
Aunt Peggy was with us on vacation last week
11:45
and she is the same way, said it's frustrating that
11:52
you lose that strength.
11:53
- [Theresa] What are those things that you can do to
11:56
- Yeah. Yeah.
11:57
Those rubber things.
11:58
- [Theresa] Yeah, whatever they are.
11:59
I just need to do the hand exercises
12:01
and get my strength back.
12:03
All right.
12:04
So we've got our strawberries, and to that
12:07
I'm going to add our pineapple and I'm not draining it.
12:13
Look at the beautiful colors on it.
12:15
It's so pretty.
12:18
All right.
12:24
Now I'm just going to pour our gelatin
12:29
Our slightly cooled gelatin.
12:33
And we're going to stir these together.
12:36
(sloshing)
12:38
My momma used to make strawberry jello
12:41
and put sliced bananas in it.
12:44
Oh, I loved it.
12:47
- [Theresa] We had every kind of jello known to man.
12:48
- [Paula] Did you?
12:49
- That was a staple. It seems like.
12:50
(Paula laughs)
12:51
How about you, Eddie, did your mom do jello?
12:52
- [Eddie] Oh yeah.
12:53
- [Paula] It's a geriatric.
12:56
My children call it an geriatric side dish.
13:02
- Do they really?
13:03
- That's what my boys say because the old ladies
13:07
they met, they like it.
13:10
(Theresa laughs)
13:11
All right.
13:12
So I'm just gonna, I'm using a ladle.
13:15
So I'll have a little bit more control over where this goes.
13:24
And my mother also used to make, and it's
13:27
in my first cookbook, I believe it is,
13:32
a lemon-lime, gelatin salad.
13:36
That was so good, it had
13:37
a little bit of horseradish in it, and mayonnaise.
13:41
And it was just delicious.
13:46
- So just like any jello, now
13:48
this is gonna to have to sit, ya'll.
13:52
and we're going to have to wait a little bit
13:53
before I can dig into it.
13:57
We may have to wait more than a little bit.
14:03
You might have to wait till tomorrow.
14:04
I don't know.
14:06
But int' that beautiful?
14:08
Just beautiful.
14:10
And Theresa.
14:11
I know you want the honors of puttin' it where you want it.
14:13
- [Theresa] Of course I do.
14:15
- Let me make sure that it's spread
14:16
- [Theresa] I just have a spot at this point.
14:18
- I figured you did
14:22
So strawberry,
14:25
(clanking)
14:27
gea- ge- geriatric,
14:29
(laughs)
14:30
strawberry gelatin salad,
14:34
well, I like it so
14:38
those boys can keep teasing me cause I'm- I just like it.
14:43
Well, our beautiful strawberry salad is firmed up nicely.
14:49
(crunching)
14:50
(clattering)
14:52
Oh my gosh.
14:52
That pretzel crust.
14:55
When you bake it off, it get so nice and firm in there.
15:00
Mmm.
15:04
Mmm, Mmm.
15:06
This really could maybe stand a little bit longer,
15:14
in the refrigerator, but
15:21
All right, now let's see how bad I'm gonna mess
15:23
this first piece up.
15:29
(clattering)
15:33
Once you get that first piece out, it does cut,
15:39
nice for y'all.
15:42
I promise,
15:49
like I said, this is not quite firm enough,
15:54
but,
15:58
I do want to show y'all what this looks like
16:07
now,
16:11
I want to show y'all what it tastes like.
16:15
It's so good.
16:17
(clears throat)
16:18
See that pretzel crust?
16:25
I don't know if you can hear that.
16:28
It's so crunchy and sweet and salty.
16:35
Mm.
16:42
It's so delicious.
16:44
It's hard to believe that,
16:46
I'm eatin' a salad.
16:49
- I just had a salad for lunch.
16:52
(laughs)
16:54
Did I forget to say it didn't have
16:57
about a cup a sugar in it?
16:59
(laughs)
17:05
Hmm. Hmm.
17:09
So delicious ya'll.
17:12
- If you never fixed it before,
17:16
you must, you must try it.
17:20
And remember, you're going to change up your fruit
17:26
with blueberries or raspberries
17:28
or whatever your favorite berry is.
17:31
It'd be delicious with blueberries.
17:37
Mm.
17:39
I took too big a bite ya'll, I'm sorry.
17:42
Love and best wishes!
