- Y'all come on in
0:01
and join me 'cause I'm fixing to make probably,
0:08
it's one of the top three cakes that I make,
0:12
and everybody has made one, I'm sure,
0:14
one time in their life, and that's a carrot cake.
0:18
And this recipe was given to me by my grandmother, Hiers,
0:23
my daddy's mama,
0:25
and I just thought her recipe was the best of all.
0:30
So, and it's so simple.
0:32
I pulled out a mixer, but you know,
0:33
I really don't have to have one.
0:36
And in my cookbook I was just reading the instructions.
0:41
And this is just the way grandma gave it to me.
0:44
She said bake for 40 minutes.
0:47
I think that's too long.
0:48
I've never baked these for 40 minutes.
0:52
So I'm gonna start with two cups of sugar.
0:56
I'm gonna add two cups of all purpose flour.
1:04
I'm gonna add two teaspoons of baking soda,
1:09
one teaspoon of salt,
1:13
and two teaspoons of ground cinnamon.
1:18
Now all I want to do for that
1:20
is just kind of whisk it together,
1:25
it's almost like sifting, you know,
1:27
when you use this whisker,
1:30
Not a whisker up here, but this one.
1:34
Am I saying that right, Andy, whisker?
1:35
- Whisker. - It's a whisker,
1:36
isn't it? - It is, yeah.
1:39
(laughing together)
1:41
It just sounds funny 'cause I think about
1:42
them little black hairs that's coming out of my chin.
1:46
And y'all know what I'm talking about.
1:51
Where them ugly things come from, I don't know.
1:56
Alright, so now I'm gonna add my eggs.
2:02
And that's four eggs.
2:06
Let's see what else I want to add.
2:08
I wanna add one and a half cups of vegetable oil.
2:14
And this is what makes that carrot cake so good.
2:17
In fact, if you're baking a cake that calls for oil,
2:21
you know that sucker is gonna be good
2:24
and it's gonna be moist.
2:29
(whisker whirring)
2:32
Alright, I'm gonna add two teaspoons of vanilla.
2:36
That's maybe one and a half.
2:40
My vanilla is so good, y'all,
2:43
this is a pure extract.
2:48
Let's see ingredients, Madagascar Bourbon vanilla bean.
2:54
That's it.
2:57
Yummy.
3:01
Alright, so I'm gonna stir that in
3:08
and then I'm gonna stir in my carrots,
3:12
and that's three cups.
3:16
If you got nothing but whole carrots
3:19
and you got a food processor,
3:21
you can chop 'em up good in that.
3:25
If you've got babies in the house
3:27
and you've got baby carrot food.
3:31
I've made it with two jars of baby carrots,
3:36
and that's good too.
3:38
But I just like being able to see the carrots.
3:44
Alright, now,
3:45
so we got to decide at this point,
3:49
where do we want our nuts?
3:56
Do I wanna put nuts in the cake
3:59
and then make the cream cheese icing without nuts?
4:04
Or do both?
4:08
You know, it's like my vanilla extract,
4:10
you can't have too much nuts.
4:15
So, now grandma always use pecans,
4:18
but I have just gotten where adore the flavor of walnuts.
4:23
So that's what I'm stirring in.
4:26
Okay, so I'm gonna wait
4:28
and decide how I wanna do the nuts stuff later.
4:37
- [Eddie] But you're putting raisins and.
4:38
- Oh, I forgot my raisins. - I was like, hmm.
4:40
- That's the only, thank you, Eddie.
4:43
This is the only change I made in my grandmother's recipe
4:48
is I add raisins, and Theresa,
4:52
I just told her the last second,
4:54
so she didn't have any measured up.
4:56
And I just put it till I liked the looks of it.
5:00
- [Eddie] I think that makes the cake.
5:02
- Oh, I do too,
5:03
to bite into those soft raisins.
5:06
Oh my gracious.
5:09
It's like an oatmeal cookie.
5:12
An oatmeal cookie to me
5:13
is not an oatmeal cookie without raisins.
5:17
So I had a good bit y'all,
5:19
I probably add a half a cup of raisins or more.
5:28
But that's the only change I made in her cake.
5:46
And if you wanna plump 'em up,
5:48
you could always have your raisings sitting
5:51
in some warm or hot water, and that'll plum 'em up.
6:01
Whatever falls out, okay.
6:06
That's it.
6:09
That looks perfect.
6:12
Alright, now y'all know how I measure out my batter,
6:16
'cause I I really do like for my cakes
6:18
to all be the same size.
6:22
And I'm the same way about when I'm making cookies.
6:27
Your cookies do so much better if they're all the same size,
6:33
if you use like one scoop for all of 'em.
6:37
You know, maybe like a miniature butter scooper,
6:47
something like that.
6:49
It's just important though that they're all the same size
6:52
So that they'll cook in the same time and be the same size.
7:01
Alright, I'm gonna put this in a 350 degree preheated oven,
7:06
but I'm gonna start checking it after like 25 or 30 minutes.
7:12
I just don't think we need 40.
7:17
So to me is not a more appropriate cake
7:20
for Easter than a carrot cake, right?
7:24
Right, Theresa,
7:26
and everybody out there? - Absolutely.
7:27
- And you know, you could actually make
7:29
this in cupcakes and keep your icing smooth
7:34
with no nuts, and make a little carrot,
7:40
I mean a little picture of a bunny on top.
7:42
So there's lots of things you can do.
7:45
- [Theresa] This cakes turned out perfect.
7:47
- Yes, they are perfect.
7:48
Do you see now why I'm a fanatic
7:53
about measuring my batter out just right?
7:56
So in my bowl, y'all,
7:58
I got one stick of softened butter
8:02
and I've got two eight ounce packages
8:08
of cream cheese that has softened.
8:10
So I've still been debating,
8:11
I told y'all I was going debate about how I did my icing.
8:18
So I think, a couple of teaspoons of vanilla.
8:25
So I think I'm just gonna keep this without nuts
8:33
and then sprinkle nuts on top,
8:36
that way people, if they didn't want nuts,
8:39
too bad, 'cause there's nuts inside the cake too.
8:45
But if they didn't want extra nuts
8:46
they could kinda just scrap them off.
8:50
So grandma's recipe actually just called
8:54
for one eight ounce package of cream cheese.
8:57
But you know, I can't stand to be short on my icing,
9:01
I'd rather have too much than not enough.
9:03
And then your layers are so skimpy
9:06
with your icing, drives me crazy. (laughs)
9:11
In fact, Olivia told me yesterday,
9:15
we were playing and she said,
9:17
gammy, you so crazy. (laughs)
9:21
- Well she's got your number. - Yes.
9:26
I mean, I can get down with 'em
9:27
and act like I'm three and a half too also.
9:32
- [Theresa] That's what gammy's are supposed to do.
9:36
- That what they're supposed to do.
9:39
Get down and dirty and silly.
9:41
Alright, so it calls for
9:44
a one pound package of cream cheese,
9:48
and this was a two pound bag
9:50
and it looked like half of it had been used.
9:53
So I may have to grab a little bit powdered sugar.
10:02
Come on.
10:05
(whisker whirring)
10:11
Yeah, Olivia couldn't have given me a better compliment
10:15
than laughing and saying, gammy,
10:16
you so crazy. (laughs)
10:21
Okay, I'm going,
10:24
why do they make these cords like they do is beyond me.
10:29
Alright, I'm gonna get a little bit more powdered sugar
10:32
'cause a one pound bag Of powdered sugar equals
10:41
about three and a half cups of powdered sugar.
10:47
So I don't know if we had quite three and a half cups,
10:52
but it can easily stand some more
10:55
because I got the two eight,
10:59
well I got one pound of cream cheese in there,
11:01
and that's what I got.
11:04
Now if I can just see the, why don't we put these on?
11:12
Oh my gosh, it always makes such a difference
11:14
when you can see.
11:18
Look at that. (laughs)
11:25
Alright, that is most assuredly
11:27
now three and a half cups, maybe four.
11:34
(whisker whirring)
11:37
I think that's like perfect.
11:46
Perfect.
11:48
Hmm, so good.
11:55
So very, very good.
11:59
Alright, let's see,
12:01
what do I need?
12:10
I like to do my icing,
12:13
for some reason I just can't use
12:14
one of those offset spatulas, messes me up.
12:19
And I just do just like my mama did,
12:24
she would use a spoon and a knife, and I do the same thing.
12:32
Now, if I were gonna put nuts around the side of this cake,
12:35
y'all, I would make sure I had some wax paper
12:43
so I could put the nuts on the side,
12:45
and then just slide the pieces of wax paper out.
12:48
So it would keep my cake plate clean.
12:53
But since I'm not gonna do it that way.
12:58
It's just an extra step I don't have to do.
13:04
Yeah.
13:10
Poor Michael's trying to diet,
13:13
so I've got him strawberry salad and carrots,
13:22
and then the carrot cake.
13:25
It's terrible, isn't it?
13:33
I think, like I said,
13:35
I don't like to skip on the inbetweens.
13:43
Alright, so layer number two.
13:51
Okay, so I'm just gonna slip
13:57
just regular toothpicks in,
14:01
and you got to push 'em down enough
14:03
so that they will go into the next layer.
14:09
Alright, I'm gonna have to move now
14:11
to a taller toothpick.
14:18
A regular toothpick won't go through all the layers.
14:23
- So that's like a skewer. - Yes, this is a skewer.
14:31
Okay.
14:35
Hmm, too tall.
14:43
Gonna make sure you don't get any wood shavings.
14:47
Perfect.
14:55
Okay.
14:59
Okey dokey.
15:04
Now I put my frosting on top of my cake
15:09
and then I go around and bring it down.
15:16
I think she's done.
15:24
Alright, and I always like to make sure
15:25
that my plate is clean.
15:38
And I have to say,
15:41
it's spreads on your cake so much smoother
15:45
if you don't have the nuts in your icing.
15:56
Oops, the nut fell in the side.
15:59
Don't want a nut in the side.
16:03
- [Theresa] Hmm, there might be a nut on the side too.
16:06
- Hmm, I'll get him.
16:10
My pleasure. - I'd hate
16:11
for you to miss that.
16:12
Yes, oh, this is so pretty.
16:17
See how Eastery that looks?
16:20
Alright, do you think we should cut it now
16:22
or do you think we should wait?
16:26
- [Theresa] Since when have you ever waited?
16:32
Come on, come on.
16:37
Wow.
16:40
Wow.
16:42
Wow.
16:43
Now, normally I don't cut my cakes in wedges.
16:47
I feel like you can get more by cutting
16:50
it down the center and then slicing it
16:57
each piece Like that,
17:05
and I can get a lot more pieces out of it.
17:08
- Like how good that looks. - Hmm.
17:15
Wow.
17:18
Grandma you a angel.
17:24
Hmm, thank you for having my daddy for me.
17:32
'Cause I loved him, my mother,
17:33
and my brother, so very much.
17:39
And without you grandmother Hiers,
17:40
it wouldn't have happened.
17:41
So thank you.
17:43
Loving best dishes and happy Easter.
