- Okay, y'all.
0:01
You know one of the best parts of a meal,
0:03
especially a Thanksgiving meal, is bread.
0:08
I have to have a good bread
0:11
because before the day's over,
0:13
I'm going to make me a turkey sandwich
0:16
with extra mayonnaise on it.
0:18
It is so good.
0:20
In fact, I gobbled down my Thanksgiving meal
0:22
so I can get to me a sandwich later on. (laughs)
0:26
That's how much I like them.
0:27
So I'm going to share with y'all an easy yeast roll recipe.
0:34
Now, this is in my first cook-
0:38
no, this is in my second cookbook, "The Lady & Sons too".
0:42
But if you have "Kitchen Classics",
0:45
it will also be in that book.
0:48
So "Kitchen Classics" or "The Lady & Sons too!"
0:53
All right, now I'm just gonna open my yeast,
0:57
and I'm gonna let that dissolve in 2/3 of a cup.
1:00
(clears throat) Excuse me.
1:02
In 2/3 of a cup.
1:05
No, 3/4 of a cup, sorry.
1:07
Now what is it?
1:08
(Eddie chuckles)
1:09
Let me make sure I get this right.
1:11
- [Theresa] Three quarters of a cup?
1:12
- Three quarters of a cup.
1:18
And that's exactly what I have.
1:21
All right.
1:22
So I'm just going to dissolve that,
1:26
and I've already measured out my biscuit mix y'all.
1:34
Come on, start dissolving baby.
1:37
I've got two and a half cups of-
1:41
I'm using "My biscuit" mix
1:43
because I think it's just incredible.
1:46
But if you don't have this just substitute it
1:50
with another biscuit mix, real simple, real simple to do.
1:56
But you can also go to the store, right?
2:00
The Paula Deen store, The Lady and Sons store,
2:03
and you can find it in all of our gift shops,
2:07
but it is truly,
2:08
it makes the best biscuit,
2:11
and don't use anything but buttermilk,
2:14
and that buttermilk gives it that little bite
2:17
to that biscuit that we all love so much.
2:20
All right, so back to yeast rolls.
2:22
So I've got a little bit of sugar,
2:25
let's see how much I have.
2:27
I have one teaspoon of sugar.
2:31
- [Theresa] Is it tablespoon?
2:32
No, I think it says a teaspoon,
2:34
but don't judge by my eyes y'all.
2:37
Yeah, it's one teaspoon of sugar.
2:42
All right. I've got a half a teaspoon,
2:45
so let me get the-
2:51
Okay. So we got our salt, we got our sugar,
2:54
and now we're just going to stir this up.
2:56
And the reason I love this recipe, y'all,
3:00
is because,
3:03
you can do like just one step
3:08
and you are ready to roll your dough up,
3:13
and then we're gonna put it in a warm place
3:16
and we're gonna let it rise.
3:18
So let's see if our yeast is dissolved.
3:22
I think it's dissolved pretty good.
3:28
And when you pour your yeast water,
3:32
and you want to just mix, mix, mix,
3:36
as fast as you can.
3:40
So here we go.
3:43
Stir, stir, stir,
3:48
stir, stir, stir.
3:56
(chuckles)
3:58
Do y'all love yeast bread?
3:59
You know, it's just-
4:01
it brings me back to school.
4:03
Did y'all's school cafeterias serve you yeast bread
4:07
up North Eddy?
4:08
- [Eddy] No. I don't-
4:09
- Oh honey, you'd have known it.
4:10
- [Theresa] We didn't have it either.
4:12
- No.
4:13
We had homemade yeast rolls
4:16
from the first through the 12th grade,
4:19
and you're talking about ever more something good.
4:23
- [Theresa] Really?
4:24
- Yes.
4:28
Okay. So I got this mixed up pretty good don't I?
4:32
All right now, I have decided
4:35
for my yeast rolls,
4:38
I'm going to cook them in a muffin tin.
4:44
So, you want to lightly spray your muffin tin.
4:52
(spraying)
4:58
There we go.
5:00
And you can make these into any shape that you want.
5:06
I'm going to sit that right there
5:07
because we've got to pull this out
5:09
on a cutting board and we've got to knead it,
5:15
like 15 to 20 times.
5:20
(indistinct) I mean.
5:22
We don't have to wait an hour or two hours,
5:26
we can get it all done just this quick.
5:32
And who doesn't want good, quick, easy yeast rolls?
5:37
I do what I do.
5:50
Okay. You think we've done it 15 to 20 times?
5:56
- [Theresa] I would say yes.
5:58
- I would say yes too.
6:01
You know, there are some rolls
6:02
that you would kind of do like this
6:05
and make two layers and put the butter in there.
6:07
(Eddy chuckles)
6:08
We'll have to do that one day y'all.
6:10
- [Theresa] That's croissant, isn't it?
6:11
Like a croissant type?
6:12
- Yeah croissant- Pastry.
6:13
- Has so much butter in it.
6:15
- [Theresa] Yum.
6:18
- Okay.
6:20
So I didn't count,
6:21
but I think I did that 15 to 20 times.
6:24
So this is supposed to make how many?
6:27
15 rolls.
6:29
- [Theresa] Those are kind of big muffins, so-
6:31
- Yeah.
6:35
So I'm gonna drop that in.
6:39
So we'll see.
6:40
I may actually get more than-
6:51
more than 15.
6:54
Just depends on how big you do them.
7:01
Pretty, pretty, pretty.
7:04
This is some pretty dough.
7:09
All right now. I think he's a little bit of a fatty one.
7:12
(chuckles)
7:15
So we're going to cover these.
7:17
When we get done, we're going to cover them with a damp rag,
7:23
and we're gonna let them rise-
7:24
Oh, I did. I got him way too big.
7:27
That's going to be my roll, (laughs)
7:30
but I'm gonna cut him down.
7:35
Okay.
7:37
Then we're going to cover it with a damp rag,
7:40
and we're going to let them sit and rise for one hour.
7:45
And like I say, they're in a warm place.
7:47
I'm probably going to stick mine on the stove
7:51
cause I have things in the oven
7:52
so it's producing heat for me.
7:58
Now it's a little big too.
8:04
I couldn't remember how many it made y'all.
8:07
So, really depends on your pinchure,
8:13
you know how much you're pinching off.
8:19
These are going to be delicious.
8:27
And then we're going to butter these y'all.
8:29
Oops! Get back up here roll.
8:31
We're going to butter these
8:33
as soon as we take them out of the oven.
8:47
Beautiful, beautiful, beautiful.
8:51
All right. So when I wrote this recipe, (laughs)
8:57
I must make not bigger rolls (chuckles)
9:00
because we going to get more than 15.
9:06
We've only got three, six, nine, twelve.
9:09
No, it's going to work out about right.
9:12
We're going to need another muffin tin.
9:14
I wonder, you know, most of my stuff is in storage. (laughs)
9:19
So I don't know if we bought an eight,
9:23
an eight count muffin tin or not.
9:26
- [Theresa] I don't think we did.
9:28
- I don't think we did either, Theresa.
9:31
- [Theresa] Because I think Eddy and I packed it all up
9:33
and we know what we brought.
9:34
- No, do you know what though,
9:36
I will just make these on a little pan,
9:39
the rest of them and stick it in there.
9:42
- [Theresa] Perfect.
9:43
- Whoa.
9:44
- [Eddy] And make just one big one-
9:46
- Oh just one big one. Okay.
9:49
(Eddy laughs)
9:49
You want one big one? Okay.
9:52
- [Theresa] It'll be like what you get from mom.
9:54
What is Ryan's, remember like a Ryan's?
9:56
- Oh my gosh. Yes.
9:57
But look what I'm going to do with this one.
9:59
- [Theresa] Oh.
9:59
(Deen laughs)
10:01
- [Theresa] We'll see.
10:02
- I'm going to cheat a little.
10:07
- [Theresa] Now we're all going to be fighting
10:08
over that one roll.
10:09
- This one hot roll. (laughs)
10:15
After that I'm gonna just fold him over like that.
10:19
- [Theresa] Now, do you need a wet rag?
10:22
- No. Oh yes.
10:23
I do have to have a damp rag.
10:28
So look-
10:29
- [Eddy] Some right there in-
10:30
- Yes, right down here
10:32
or in there or somewhere.
10:34
Okay. So that puppy's gonna rise,
10:39
rise and shine.
10:42
And I'm just gonna put him-
10:45
I think on a little paper plate.
10:49
He didn't want to leave me.
10:52
- [Theresa] I wouldn't either
10:52
if I put all that butter on there.
10:54
(Deen laughs)
10:55
I mean, come on, it's smart.
11:00
- Bon Appetit y'all. (chuckles)
11:06
All right. Now I'm going to need a little damp rag
11:08
for our fat boy.
11:11
- [Theresa] You think fat boy can have a tissue
11:13
or does he need his own rug?
11:15
- I don't know. (chuckles)
11:17
Let's just try tissue.
11:19
- [Theresa] You see,
11:20
this will be our experiment.
11:21
- [Deen] Yes.
11:22
- [Theresa] I'll double, how about that?
11:24
(Deen laughs)
11:24
- Okay y'all, it's actually been about an hour and a half.
11:30
Look at this big boy that I made
11:33
for Eddy and me and Theresa.
11:36
I'm gonna just bake that off in there.
11:38
So these have been rising about an hour and a half
11:41
and they look beautiful.
11:43
Oh, this Pan's not hot.
11:46
So in the oven this goes.
11:50
We're going to bake these in a 400 degree oven,
11:52
for about 12 to 15 minutes,
11:55
so I'm going to set it for 12 minutes,
12:03
and then I'm going to check them
12:05
and if they're done we're gonna take them out (indistinct)
12:09
and taste.
12:11
So,
12:14
12 minutes is a magical number
12:17
for Bobby's oven.
12:20
Look at the jumble, Eddy.
12:26
- [Eddy] If you could just pipe that smell
12:29
- Yes.
12:30
- [Eddy] Through the airwaves. (laughs)
12:33
Yes, yes, yes.
12:35
- [Eddy] I think it could solve all kinds of problems.
12:38
(Eddy chuckles)
12:38
- Oh my goodness. Yes.
12:41
Look at those beautiful little small yeast rolls.
12:47
Now I tell y'all to brush it with butter,
12:52
but as it turns out,
12:53
I don't have a brush here and neither does Bobby.
12:57
So I'm just going to spoon it
13:01
on top of every one of those muffins
13:08
or yeast rolls.
13:11
It's just in the shape of a muffin,
13:12
I thought that they might just rise much, much better
13:19
if I could put them in a confined spot,
13:28
which is what the muffin pans do.
13:38
Oh Eddy,
13:38
are you swallowing hard yet?
13:40
(Eddy chuckles)
13:41
(Deen laughs)
13:43
I'm swallowing hard.
13:50
Okay.
13:52
So should we cut the big boy?
13:56
Let's do that. Let's cut big boy
13:57
and you and I have it.
14:02
How does that sound?
14:11
All right. There's your half.
14:13
Ouch!
14:14
Don't don't. Ouch! (laughs)
14:16
- [Eddy] Don't touch the pan-
14:17
- Don't touch the pan. (laughing)
14:20
Okay.
14:22
And remember how I stuck butter.
14:26
Look at the steam coming up. (laughs)
14:32
- [Eddy] Yeah, that one made a split biscuit.
14:34
- This would have made such a good split biscuit.
14:39
It's so hot, Eddy. I can't.
14:40
(both chuckling)
14:43
If I'm going to be at the evening,
14:46
share a sample with everybody.
14:48
- [Eddy] Well, let's just sit here and smell it for a while.
14:50
- [Deen] Okay.
14:51
(both laughing)
14:52
It's nothing, nothing like yeast rolls baking in the oven.
14:59
They smell so delicious.
15:19
My biscuit mix makes a great starter,
15:26
for whatever kind of bread you want to make,
15:28
whether you want to make, if you've got more time,
15:30
and you want to make yeast rolls, do it.
15:34
Now, I'm going to see
15:38
what I've got in the way of jellies and jams.
15:52
Okay, look what I found, Eddy.
15:53
I found blackberry preserves.
16:01
(laughs)
16:03
Eddy got the top off after I loosened it for him,
16:09
right Eddy?
16:09
- [Eddy] You did.
16:10
- Cause he just took it off with no problem.
16:14
All right. So this is blackberry preserves,
16:19
and oh-
16:23
oh my goodness we love blackberry preserves down here.
16:27
And they'll just grow wild,
16:31
you can stop in a field
16:32
and most likely find some blackberries growing.
16:38
You just have to be careful
16:40
because snakes hang around blackberry bushes,
16:46
not because they want a blackberry,
16:49
but because they want the little birds
16:52
that feed off the blackberries.
16:56
So, if you're around blackberry bushes
16:59
be very careful.
17:04
(chuckles)
17:05
Eddy, can I go ahead and-
17:11
they're starting to cool down.
17:15
So I'm going to put you
17:16
a little blackberry preserves on your biscuit,
17:20
your yeast roll,
17:23
so we can eat it at the same time.
17:30
- [Eddy] It's almost like a jelly donut.(chuckles)
17:32
- It's almost like what?
17:34
- [Eddy] Having a hot jelly donut.
17:39
- I just needed a little bit more butter.
