0:03
Guess what I'm celebrating today?
0:09
I am celebrating St. Patrick's Day,
0:11
because it's almost upon us.
0:14
And Savannah has the second largest celebration
0:18
of St. Patrick's Day in the United States,
0:20
second only behind New York.
0:23
So it's a real big deal to come to Savannah
0:27
for St. Patrick's Day.
0:29
You'll always find cabbage, you'll always find corn beef.
0:35
You'll always find green grits.
0:39
We'll dye our grits green.
0:41
Do they still dye the river green, Eddie?
0:43
- [Eddie] They don't do the river,
0:45
they do all the fountains.
0:46
- The fountains, okay.
0:48
So the dish that I am fixing to prepare
0:52
for y'all is called colcannon,
0:57
And it dates back to the 18th century in Ireland.
1:04
And quite often my children's,
1:06
one of my children's favorite sides for a meal
1:11
that I'm preparing was fried cabbage and mashed potatoes.
1:15
They go together so good.
1:18
And this originally, this recipe originally started out
1:24
being celebrated at Halloween.
1:27
And supposedly it gave one the ability to tell your fortune.
1:32
But eventually it just swung over
1:35
to the celebration of St. Patrick's Day.
1:39
And I've cooked a lot of cabbage.
1:43
I've cooked a lot of mashed potatoes.
1:46
So I think y'all will find this interesting
1:50
'Cause that's what we would do anyway, when we were eating,
1:53
we'd grab a spoon of mashed potatoes and then our cabbage,
1:56
and it's so good together.
2:11
into like the size of potato salad.
2:17
But we are gonna mash these.
2:18
So the Irish potatoes, the Idahos,
2:24
I think it's called for Idahos, no Russet.
2:28
Anyway, they don't hold up like
2:30
a gold table potato or red potato.
2:35
So these are gonna mash very, very nicely.
2:39
And I've got me a little olive oil.
2:42
And I've got me some shredded cabbage,
2:45
and I've got some fresh thyme.
2:49
Now if you research this recipe,
2:53
you will find that people would use different ingredients.
3:01
Like I would want onions in this
3:06
or something to kick up that flavor.
3:11
In fact, while that's doing, I'm gonna come over here.
3:16
Where did I put it, Eddie?
3:19
I'm gonna chop this up real quick like,
3:24
and this'll help increase the flavor.
3:31
Where are my cutting boards?
3:39
Here, I'll slide down and use this one.
3:43
I'm not too organized this morning, am I?
3:46
That's all right, I'll get the job done.
3:50
All right, so I'm gonna dice this up real good.
3:54
And I'm going throw it with my cabbage.
3:55
I turned the cabbage down,
3:59
so it wouldn't get ahead of me.
4:02
(knife lightly thumping)
4:09
You know, oh, this is so aromatic.
4:11
And you could also use spring onion,
4:19
what we call spring onions, green onions.
4:23
Alright, so I'm gonna throw that in there
4:25
and that's gonna kick up that flavor.
4:40
(knife lightly thumping)
4:50
I wasn't too well prepared, but that's all right.
4:54
When I'm not filming, that's the way I cook in my kitchen.
4:59
'Cause I'll think, oh no, this dish needs this
5:01
and this dish needs that.
5:05
So this recipe calls for cooking in olive oil.
5:15
And I think it could stand a little bit more onion.
5:17
But we gonna let this cook.
5:20
And you know, not very long, just until it's tender.
5:25
I'm gonna go ahead and add the thyme to it.
5:29
And that's gonna be another layer
5:31
of flavor going into this dish.
5:37
(spoon lightly thumping)
5:45
That's pretty cabbage.
5:46
Now when you buy your cabbage,
5:50
there's usually a beautiful dark green leaf around it.
5:55
And if you like to use those,
5:57
you need to cut those up separately
6:01
and into smaller pieces,
6:03
because they take so much longer to cook.
6:05
Those are really tough leaves.
6:07
But I love the color green that it gives my cabbage.
6:12
Alright, our cabbage has been cooking, oh gosh,
6:15
about five minutes, I guess.
6:18
So I'm gonna put the lid back on
6:21
and just finish cooking it until it's tender.
6:24
And then we're gonna marry our ingredients together.
6:29
Alright, so I'm mashing up our potatoes.
6:33
And you can see I'm not using
6:37
a hand mixer or anything.
6:39
I'm just mashing 'em the old timey way.
6:49
I'm hoping my aunt Peggy will eat this, I hope.
6:51
I'm having such a hard time finding things she'll eat.
6:55
Now the recipe does not call for butter except on top.
7:00
But you know, Paula Deen ain't never cooked a mashed potato
7:03
that didn't have butter.
7:05
So going to put just a little bit.
7:18
a lot of your recipes for colcannon
7:25
So we're gonna heat our chicken broth.
7:28
'Cause I may, I pulled out some cream and I may add that.
7:33
And I'm gonna have to be careful 'cause
7:35
I'm trying to heat my potatoes back up.
7:46
And when we put everything together,
7:48
I will check it for seasoning.
7:52
So our cabbage is nice and tender.
7:59
So we just going to heat this up.
8:08
but I'm going to add a little cream.
8:13
The tater devil made me do that.
8:23
Okay, so all we're gonna do now is just stir these together.
8:35
And maybe I'll tell y'all's fortune.
8:40
Did you know that, Theresa?
8:43
Before this calcannon became a dish
8:48
for known for St. Patrick's Day,
8:54
it was big at Halloween.
8:57
- Oh wow. - And it gave you abilities
9:03
Tell people's fortunes.
9:05
So I'll tell y'all a fortune.
9:09
- [Theresa] We're getting rich.
9:13
Well that would be nice, but no.
9:16
You're gonna turn into the happiest person
9:18
you've ever been around.
9:26
Poof. (everyone laughing)
9:30
Okay, now the reason you want
9:33
to heat up your broth is so that
9:40
your dish remains hot.
9:44
All right, I'm gonna.
9:53
That cabbage tastes so good in there.
9:58
Uh oh, we're getting low salt here.
10:08
And you wanna add your chicken broth slowly.
10:16
You don't wanna dump it all in there
10:19
because you just want this enough to make it creamy.
10:27
So we'll do a little bit at the time.
10:32
And it really depends on,
10:37
you know, it's kinda like grits.
10:38
Do you like spoon grits or fork grits.
10:41
Fork grits is thick enough that you can eat it with a fork,
10:44
a spoon grit, you need a spoon to eat it with.
10:48
So potatoes are kind of the same way.
10:51
You know, how do you,
10:54
how thick do you like your potatoes?
10:57
And I'm going to show you the way that they were served
11:04
back in the early days of Ireland.
11:13
Okay, I think that's good.
11:20
I could always add more
11:25
as it sits and may drink up.
11:30
Ooh, I kind of wish I had more cabbage.
11:35
That cabbage is so, so good in there.
11:39
So they would serve it just like that.
11:45
And they center it out
11:47
and put a knob of butter.
11:53
I wish I could do that Irish dance for y'all, but I can't.
11:58
But this is gonna make me want to dance.
12:02
I might have put a little too much butter, maybe.
12:19
It's delicious, y'all.
12:22
Such a comforting food.
12:26
And you serve this at St. Patrick's Day
12:28
along with corn beef.
12:50
So my dear, laddies,
12:53
I hope y'all have a wonderful St. Patrick's Day.
13:03
Hey, y'all, it's Paula Deen.
