it's if you've ever had a twice-baked potato,

well these mashed potatoes are almost gonna taste

We gonna eat it just like we would a regular mashed potato,

Now I'm starting with some Yukon Gold, you know,

the little baby potatoes.

And I'm gonna cover this with water,

bringing it like an inch.

It was turned off back there at the spigot.

So I'm gonna cover these potatoes

at least by an inch of water.

And I'm gonna put some salt in them.

and it'll probably take anywhere

from 10 to 15 minutes maybe.

is bacon, purple onion, yellow onion, shallots,

And we're gonna have some bacon fat rendered
