- Hey, y'all, fall is almost here.
0:03
The fair is here, Halloween's coming,
0:06
all the fall festivities that we look forward to.
0:09
So the recipe that I'm gonna share with y'all today
0:12
is a pecan-coated caramel apple.
0:16
And it's really fairly easy to make.
0:19
In fact, it is easy to make.
0:21
But it's gonna involve a thermometer, a candy thermometer.
0:26
So I put in two sticks of butter.
0:28
Now I'm adding the brown sugar
0:31
because this is gonna be caramel apples.
0:34
I'm adding sweetened condensed milk.
0:40
And we're gonna cook this
0:44
using our candy thermometer.
0:47
And I wanna make sure I get every drop out.
0:51
You know, there's just pieces of my grandmama
0:54
that will never leave me,
0:57
and that's waste not, want not.
0:58
- Mm-hmm. (Paula laughs)
1:01
- All right, let me see. I got that little high.
1:03
- [Participant] I was raised hearing that too, Paula.
1:05
- Absolutely. Absolutely.
1:07
All right, now I'm gonna add my syrup.
1:11
- [Participant] Is that Karo?
1:14
- I think it's a dark Karo. Right, Theresa?
1:16
- Mm-hmm. - Yes, ma'am.
1:20
Yes, we want to use the dark rather than the light,
1:24
you know, to keep our colors.
1:29
So I'm just gonna stir this up real good.
1:34
And we're gonna let all those things melt together.
1:41
I bet this would be good on a cake.
1:43
- Mm-hmm. Mm-hmm. - You know, a caramel cake?
1:45
- [Participant] Mm-hmm. Yes.
1:48
- So it's gonna take a few minutes for this to melt
1:52
and get to the temperature that we want it.
1:56
So I'm gonna take a quick break
2:00
and visit with my friends a second
2:02
while we're getting that to the right temperature.
2:06
Okay, so we're gonna cook this,
2:08
stirring it constantly, y'all,
2:11
until it gets to 236 degrees.
2:16
Somebody else wanna check it
2:18
and make sure my eyes are correct?
2:22
Can you see it, Eddie?
2:26
- Yep. That's right. - 236, right?
2:28
- [Eddie] Yep. It's almost 246.
2:34
All right, now I'm gonna add my vanilla.
2:37
See, this really is simple.
2:40
And I like to add my vanilla last
2:48
because I don't want it to, all the flavor to cook out.
2:54
And look how that's boiling when I added that vanilla.
3:00
Okay, so I'm gonna leave the thermometer in there
3:04
and watch it, and we're gonna let it drop back to 200,
3:07
and then we're gonna start dipping our apples. (chuckles)
3:12
Okie doke, y'all. It is to 200 degrees.
3:24
we hope that that thermometer was right
3:29
and we got the temperatures right.
3:31
So our apples have been washed and cleaned.
3:36
You know, my favorite stick, I think,
3:38
is like the Popsicle stick.
3:40
You know, the little wooden thing? You can buy them.
3:44
They may even have 'em at the grocery store, y'all.
3:47
I know you can buy 'em at craft shops. But here we go.
3:54
Here we go. We're just gonna roll that around.
4:03
I don't want any of the apple showing.
4:10
Uh-oh, this stick is not good.
4:13
All right, y'all, I had to change the sticks.
4:17
I had to change it to a wooden stick
4:24
it really just kind of disintegrated.
4:31
Looks pretty good, doesn't it?
4:33
Just wanna let that drip off.
4:37
And now we're gonna roll it in the pecans. Yum.
4:49
I actually think that it could have cooked
4:52
a little bit longer, the caramel.
5:04
I'm gonna just help it along a little bit.
5:11
I'm adding some sticky nuts.
5:17
Is that staying on over there, girls?
5:19
I can't see. - Mm-hmm. Mm-hmm.
5:22
- And we're just gonna let those cool. (laughs)
5:27
I got nutty hands. Nutty fingers.
5:33
All right, so you can see
5:36
how the paper straw, how flimsy it got.
5:40
There was just no way it could hold the weight of the apple.
5:46
And I highly recommend
5:50
using small, small apples to do this with.
5:55
The heavier the apple, the harder it's gonna be.
6:00
It definitely doesn't look like a professional apple,
6:03
but I can promise you it's better,
6:07
you know, than those pretty ones.
6:13
Girls, do y'all wanna lick my fingers?
6:15
- Mm-hmm. (participants laughs)
6:19
- I don't mind. (laughs)
6:23
So after they totally cool, I'm gonna,
6:27
I'm gonna slice them,
6:30
and we'll have caramel apples.
6:34
See, my thing did come off, y'all.
6:42
That's kind of messy. Kind of messy, y'all.
6:47
But anyway, you'll have fun and your children will love it.
6:51
And speaking of love, I send you love and best dishes.
6:57
And so do these girls. Love and best dishes.
7:01
- [Participant] Yes, ma'am.
