- Hey everybody, it's Bobby here
0:02
and I've got a great fall cake recipe for you today
0:06
that I think you're really gonna like.
0:08
I'll let you guess what the flavor base might be.
0:13
Pumpkin's everywhere this time of year.
0:15
I love it, my kids like it, our family likes it.
0:17
So we're gonna make a delicious pumpkin cake
0:21
and my Aunt Peggy, who you can't see,
0:22
is standing right over there,
0:24
to watch me and guide me, critique me
0:26
and help me if I make any mistakes.
0:28
So, Aunt Peggy, if you see me do something wrong,
0:30
you just speak up, okay?
0:32
- [Peggy] I'll be right there before you know it.
0:34
I love my Aunt Peggy.
0:36
And the people that follow my mom and our family,
0:38
all of you know about our beautiful Aunt Peggy from Albany
0:42
who taught my mom and my whole family so much about cooking.
0:45
If it weren't for my Aunt Peggy,
0:46
I probably wouldn't be standing
0:48
right here before you right now.
0:51
So let's get started.
0:53
And again, we're gonna make a recipe
0:54
that just doesn't break the bank
0:57
and whenever we're making cake recipes,
1:00
I don't mind going with a box of cake mix.
1:02
This is yellow cake mix.
1:04
This is what we're gonna start with.
1:07
The bag adds a little extra flavor
1:09
if you want to leave that in there.
1:12
Get rid of that, y'all.
1:14
All right, so cake mix, some melted butter.
1:23
Just a little bit of butter.
1:29
so we'll add one and we'll come back
1:32
for the other three in just a few minutes.
1:35
Ooo, get back in there, egg whites.
1:40
We're gonna go ahead and beat this.
1:43
So, while I'm mixing this, why don't we go ahead
1:45
and take a break and we'll come right back
1:47
and press our mixture into our pre-greased
1:50
13 by nine inch casserole dish.
1:53
All right, so Aunt Peggy already had to correct me.
1:56
I said that I was making a cake,
1:57
I'm not making a cake, these are pumpkin squares
2:00
and I'm making the crust that goes into the dish first.
2:05
So to our butter, egg and cake mix,
2:09
I'm gonna add some chopped pecans
2:12
and I'm just gonna fold them in
2:15
so as not to beat them all to pieces with the mixer.
2:23
and get them sort of incorporated in our crust
2:26
and then we'll press it into our 13 by nine inch dish.
2:36
Got our crust into the pan
2:38
and I'm using my clean washed hands to press it in.
2:43
So while I'm doing the boring work,
2:45
why don't we take another break and we'll come right back
2:48
and make the deliciousness that goes on top.
2:52
So our base looks really good.
2:53
That's the cake mix, melted butter and chopped pecans
2:57
and the pecans are nice and thoroughly mixed throughout
3:01
and it's pressed into the bottom of the pan
3:02
that we have pre-greased.
3:05
Okay, so now I'm gonna beat my cream cheese.
3:07
Got eight ounces of cream cheese here.
3:09
And around here, if you forget, Theresa can attest,
3:13
she's a smart cookie,
3:14
if you forget to let your cream cheese sit
3:17
out on the countertop for a little while,
3:18
just set it out in that Georgia sun for a few minutes,
3:21
even in the fall, it is a nice balmy 80 degrees here today,
3:27
which is quite beautiful,
3:29
and that cream cheese is softened before you know it.
3:33
So our cream cheese and three eggs
3:39
and nobody wants to listen to this mixer run for too long.
3:42
So while I mix this, we'll take another break.
3:47
Great, so there's my cream cheese
3:49
and my three eggs mixed together
3:51
and now to that, I'm gonna add our pumpkin
3:55
and our pumpkin spice
4:01
until that's nice and creamy
4:04
and then we'll add our confectioners sugar.
4:07
So there's gonna be a lot of mixing going on,
4:09
so I'm gonna spare you all that.
4:11
Aunt Peggy, so far, so good?
4:13
Does it look like I'm doing it right?
4:15
It looks all too good, almost.
4:17
- [Bobby] That's good enough for me.
4:21
Great, that powdered sugar has given my pumpkin
4:24
and pumpkin spice mixture just a perfect texture.
4:28
So now we're gonna pour that over our crust.
4:48
Yeah, that's perfect.
4:51
It's spreading on its own.
4:53
Not too thick, not too thick.
4:54
Not too thick or not too thin.
4:59
Aunt Peggy, do you like pumpkin and pumpkin spice?
5:03
I even like the color of the pumpkin.
5:08
I think this is my favorite time of year.
5:18
- [Bobby] Make sure I get every bit of it
5:20
or mama will appear out of nowhere
5:22
and start whipping my legs. (laughs)
5:28
- [Peggy] Oh, tell me about that.
5:31
- She's faster than she looks. (laughs)
5:40
Yeah, you don't want to waste, we try not to waste.
5:44
Try not to throw anything away if we can help it.
5:53
It's not gonna take much
5:55
'cause the texture is really just kind of
5:57
spread out on its own,
6:00
but make sure that it's even, that looks really nice.
6:05
This is a great recipe for fall.
6:07
Your kids'll love it.
6:09
Your guests'll love it.
6:13
All right, so end of the oven at 350
6:17
and I think it's probably gonna be about 25 to 30 minutes.
6:21
So let's go to the oven and then we'll come right back.
6:28
Gosh, it smells great.
6:29
The only thing that's missing
6:30
is just a little bit of cinnamon.
6:31
So we'll sprinkle a little cinnamon on top.
6:35
This flavor pumpkin and pumpkin spice,
6:37
it just bags for cinnamon.
6:39
So, we'll give it what it wants
6:43
and I'm gonna let it cool a little bit,
6:44
so we're not gonna see me taste it, unfortunately,
6:47
because it needs to definitely cool.
6:49
It's not, come on cinnamon,
6:52
this is a dangerous game
6:53
when you're playing with a cinnamon like this,
6:55
it could just pour out all over the place
7:01
Come on, come on, come on. Don't be a bear.
7:04
Just a little bit of cinnamon.
7:05
Gosh, it smell so good.
7:06
And the cinnamon hitting that hot fresh cake mix
7:12
Coming outta the oven.
7:14
Okay, so that is the creamy pumpkin bars.
7:18
The bottom has got a beautiful crust with pecans in it
7:22
and the top is wonderful pumpkin
7:24
and pumpkin spice with a little sun and sprinkle on it.
7:26
I think you've gotta love it.
7:27
It's perfect for fall.
7:29
Enjoy, and I'll see you next time.
