- Hey, y'all.
0:01
It's fall y'all.
0:03
Can you believe...
0:05
Isn't this like the third day of fall, Eddie?
0:08
Something like that?
0:09
- [Eddie] Uh, no fall was last week.
0:13
- Oh last week, okay.
0:14
(Eddie laughs)
0:15
- Well, I knew it was fall ya'll.
0:16
- [Eddie] We are into fall.
0:19
- And to me,
0:21
(clears throat)
0:22
Excuse me, to me in my mind, when I think of fall,
0:25
first thing I think of is
0:27
that incredibly beautiful
0:31
apple orchard
0:33
I went in,
0:35
in New York state.
0:38
First time I'd ever been in an apple orchard
0:40
and it was just breathtaking to ride in there
0:44
and seeing these beautiful green trees covered,
0:49
just covered with red apples.
0:52
So,
0:53
I was so happy.
0:54
You know, I'm always asking what y'all are doing.
0:57
I was so happy when a precious lady
1:02
wrote to me.
1:04
She wrote me the sweetest letter
1:10
and she sent me a recipe for her
1:13
mom's glazed, fresh, apple cookies.
1:18
And it just had everything that I love.
1:22
And she even sent me a picture of her mother and father
1:26
and look how cute they were.
1:28
So cute.
1:34
Just adorable. I know, I know
1:37
that she misses her mother and daddy,
1:41
and I know I do too.
1:43
After all these years, I miss mine.
1:45
But, this letter came in to me
1:47
from Penny Warner, from Urbana, Missouri.
1:52
So she said that both of our parents passed away in 2019.
1:57
And,
1:59
she goes on to say,
2:01
I just love the informality of your show.
2:06
Since the pandemic, it feels like I'm your friend
2:08
in the kitchen,
2:09
and you are Penny. That's the way I hope that you feel.
2:14
And I drink my coffee while I wait,
2:15
watch you cook and bake.
2:17
I hope you continue this format even
2:20
after the world quits spinning backwards.
2:23
I love you and just enjoy watching you
2:26
and your staff, Michael, the boys
2:29
and their precious family, your extended family,
2:31
and the pups too. Wishing you love
2:34
and happiness, always. Thank you so much, Penny.
2:38
And I wish the same for you.
2:42
And I so appreciate you sharing your mom's recipe with me.
2:47
And this is the picture, probably one of the last pictures,
2:51
taken of 'em. Look at him,
2:53
and she, she's laughing.
2:55
And she's
2:56
(laughs)
2:58
like, I don't know, she said something to him.
3:02
But that was her when her mama was 17 years old.
3:07
And this was her dad. He was an engineer
3:10
at WWUP TV station in Cadillac, Michigan.
3:14
And that was around 1965.
3:17
That was the year I graduated from high school.
3:19
Whoa, what a year?
3:21
It was so fun.
3:23
All right. So here's her recipe
3:26
and you're right, Penny, your mother
3:28
had a beautiful handwriting.
3:30
She had had a stroke,
3:32
but she still, still had a beautiful handwriting.
3:38
Okay. So Kenny typed this up
3:41
and this is what we're going to have, ya'll.
3:43
The cookie ingredients are a half a cup of oleo.
3:48
Well, for that we're using butter flavored,
3:52
solid shortening.
3:55
And that's gonna go in our bowl.
3:59
Good, I'm going to use that as a spoon rest, right there.
4:03
One and a third cup of brown sugar
4:08
and in it goes.
4:13
She said cream the oleo, brown sugar,
4:15
and egg in a large mixing bowl.
4:22
My hands are really not quite big enough
4:24
to break it with one hand.
4:32
And while we're creaming that,
4:35
she said, in a large mixing bowl,
4:38
add all the dry ingredients together
4:42
and let's see,
4:45
add all dry ingredients.
4:47
And she said, then mixing only half
4:49
of the sifted, dry ingredients.
4:51
Chopped nuts, chopped apples,
4:53
and raisins to the cream mixture.
4:55
So she said that we need to see if the two cups of flour
5:00
and a teaspoon of soda
5:03
and a half teaspoon of salt, so.
5:08
I'm gonna put this in the sifter
5:13
and this is all purpose flour that we're using.
5:16
And we know that because the recipe calls for soda
5:22
and salt.
5:24
So if it was self rising, it wouldn't call for anything.
5:28
All right. So here we go,
5:31
with the salt,
5:36
the baking soda,
5:40
the cinnamon,
5:45
the nutmeg,
5:48
and that's fresh ground nutmeg.
5:50
Any time you have an opportunity,
5:52
I know it might be a little bit of a pain to,
5:56
to grate those little balls, those little nutmeg balls,
6:01
but by all means do it because it makes such a difference.
6:05
So we're gonna sift this.
6:11
I think I could have gotten a bigger bowl, couldn't I?
6:14
(laughs)
6:16
But why?
6:23
Okay, it's almost all done.
6:29
This is kind of reminding me of an apple cake
6:34
that I make my Aunt Beth Hires shared,
6:38
Share a recipe with me for a
6:42
- [Eddie] Your grand girls?
6:44
- Grand girls. Apple pie from Georgia.
6:48
(laughs)
6:49
So we have got all of our dry ingredients,
6:54
we have our raisins, we have our pecans
6:58
and we have milk.
7:01
So we're going to cream, these ingredients.
7:07
Okay.
7:09
Hitting the green button.
7:15
This when it flies like the wind, Eddie.
7:21
All right. We're told, ya'll,
7:23
to add half the flour mixture.
7:49
Okay, now we have a fourth of a cup
7:52
of just regular milk
7:57
that I'm gonna pour in.
8:04
Oh that's still so high.
8:23
Now we're gonna add the other half of our flour mixture.
8:31
It didn't break! Sure sounded like it, didn't it?
8:34
Alright,
8:37
and I think before I add the other things,
8:40
I'm gonna just mix in
8:44
that last part of the flour.
8:49
So this is really,
8:53
an easy recipe
8:57
to make, Penny.
9:00
And I so appreciate you sharing it with us,
9:01
because right now, you know,
9:04
we're all thinking about Halloween
9:06
and we're thinking about apples
9:08
and gourds
9:09
and pumpkins.
9:16
Okay,
9:18
now I think I'm just gonna stir in
9:23
the nuts, raisins.
9:26
And I just adore raisins in my carrot cake,
9:29
my cook, my oatmeal cookies.
9:33
I just love the sweetness.
9:35
And this only calls for
9:42
one cup of chopped apples.
9:44
I'm kinda surprised.
9:45
I almost thought it would call for more than that.
9:48
Ooh, it smells so good.
9:52
I've started trying to trying, trying,
9:54
trying to eat an apple a day.
9:59
Sometimes I can succeed
10:01
and sometimes I can't
10:05
- [Theresa] This way you're gonna get to [Inaudible]
10:08
- [Paula] Yes, that's exactly right.
10:13
Okay.
10:18
Looks delicious.
10:22
Ms. Mildred didn't, that's her mother,
10:26
that's Penny's mother, she didn't skimp
10:28
on the nuts or the raisins.
10:31
So that's good.
10:33
Now we're gonna drop this by the teaspoon full.
10:37
And I have prepared my pan with
10:40
actually some parchment paper
10:45
and a silpat.
10:48
I just really don't like it when my cookie sticks, so,
10:53
so I'm just gonna make sure
10:57
they don't stick.
11:01
And Penny says, drop about a teaspoon
11:03
on a greased baking sheet, so we're safe there.
11:08
Now I'm going to,
11:15
spray my little scooper duper
11:22
and then we'll drop it by mounded teaspoons full.
11:29
I forgot to tell y'all that on Penny's, mother's
11:34
apple cookies, a glaze goes on 'em while they're hot,
11:38
straight out of the oven. So I've got a cup
11:41
and a half a confectioners sugar
11:44
and calls for two cups of light cream,
11:47
which I'm assuming would be half and half.
11:50
- [Theresa] You mean two tablespoons?
11:51
- [Paula] Two tablespoons, why did I say teaspoons?
11:54
- [Theresa] I think you said two cups.
11:55
(laughs)
11:59
- [Theresa] But, I may have heard wrong.
12:00
- Listen, there ain't no telling.
12:03
There ain't no telling, Theresa.
12:05
So I'm using two and a half tablespoons of heavy cream
12:10
And it calls for a fourth of a teaspoon
12:15
of vanilla flavoring.
12:23
That looks like a fourth of a teaspoon right there.
12:28
And a tablespoon.
12:30
(objects crash over)
12:32
Whoa, softened butter.
12:36
And look at that. That's just like a perfect tablespoon.
12:42
Okay.
12:48
And,
12:50
the powdered sugar has been,
12:56
has been sifted, so it won't be lumpy.
13:11
You know what, I think we're gonna need
13:12
a little bit more cream.
13:15
Although, when this hits a hot cookie,
13:20
it's gonna spread.
13:27
Right now, it's hard. All right, just a little.
13:32
This may be a little thick
13:34
because we're using heavy cream instead of the light cream.
13:37
So that could be the reason
13:39
for the extra thickness ya'll.
13:46
Like I said, as soon as it hits that hot cookie,
13:51
it's probably gonna spread
13:53
- [Eddie] Yeah that's good, that's the way I like it.
13:54
- [Paula] like the flu.
13:56
- [Eddie] Cinnamon rolls, with that kind of icing on it.
13:59
- [Paula] Yes, I'm afraid that
14:01
for our pallettes, we're not gonna have enough
14:04
of the custard.
14:06
You know, then I'm gonna have to come back
14:07
and cream some out of this.
14:10
Cause that's what makes it so good.
14:16
Oooo! Eddie,
14:20
ow, ow, ow.
14:21
Ow!
14:25
How do those look to ya?
14:28
- [Eddie] They smell wonderful.
14:29
- [Paula] They look pretty daggone good.
14:35
Pretty daggone good. All right now,
14:38
I just told Eddie that I was gonna
14:41
have to try to resist putting too much icing
14:44
on each one of 'em.
14:47
- [Theresa] Icing can always be made. More can be made.
14:49
- [Paula] Oh and listen, don't you think I am above
14:52
making some more icing, honey.
14:55
All right, I'm just gonna put a little bit
14:57
and see what that does to it.
14:58
See if it does what I think it's gonna do.
15:06
Mmm, I would like a little bit of cookie with my cream.
15:10
(laughs)
15:16
It's not melting as fast as I thought it would.
15:21
All right. Which one you want, Theresa, girl?
15:23
- [Theresa] This one.
15:25
- I know you wanted that one.
15:27
- [Theresa] So glad you asked first, before you take.
15:30
- [Paula] Well I'm gonna take this one.
15:32
(Paula laughs)
15:33
- [Theresa] Oh, well you cheated!
15:35
- [Paula] You spoke too soon.
15:37
(Theresa and Paula laugh)
15:39
- [Theresa] Eddie almost did it.
15:41
- Uh huh. Eddie's watching. I'm gonna take that off,
15:45
I was just being funny.
15:48
- [Theresa] Oh, you should leave it.
15:50
- [Paula] I was just being funny.
15:52
- [Theresa] These are...
15:58
So good.
16:02
- Tastes like apple cake, ya'll.
16:03
- Oh my, that's exactly what it tastes like,
16:05
a small, moist, oh my gosh.
16:10
Gotta go. Be sitting here
16:13
(Paula laughs)
16:14
- [Paula] Time to go.
16:15
- Theresa said it's time to go, so bye ya'll.
16:18
(Paula laughs)
16:21
- [Paula] Mmm
16:23
- [Theresa] Oh my gosh.
