- Y'all it's summertime here in Savannah, Georgia.
0:03
And one of my favorite things
0:07
in the whole world about summer foods
0:10
is creamed corn y'all, fresh cream corn.
0:14
And you know what?
0:15
I didn't know, I didn't know I always felt
0:19
like our corn was the finest.
0:21
Well you know, I understand New Jersey
0:23
is really proud of their corn too.
0:25
And my precious brother Buba,
0:31
lived out in Missouri,
0:35
for a short time before he got sick.
0:39
And he said, "Paula, the corn that they grow out here
0:43
"is unbelievable."
0:46
So, I guess good corn is just good corn wherever you are.
0:50
But we have always been real proud of our,
0:54
our Silver Queen Corn.
0:57
It's just delicious.
0:59
Now, I'm not using Silver Queen today,
1:02
I'm using, it's actually a mix,
1:05
it's of your white and your yellow corn together.
1:10
And we're gonna do cream corn today,
1:13
not, not niblets, not the curls.
1:18
And if you wanna make your life so much easier,
1:22
you have to get you a cutter.
1:25
This is a corn cutter,
1:27
and you can actually adjust it,
1:30
for the depth that you want your corn to be.
1:35
If you're wanting niblet corn
1:39
I would stand this up.
1:44
I would stand this up in,
1:45
Well, let me just show you real quick like,
1:50
'cause I know a lot of people probably have corn
1:54
available to y'all, so I'll just show y'all
1:58
a quick and easy way,
2:00
if you want whole kernel corn,
2:03
you just stick that corn cob down in that hole.
2:08
And then you just cut,
2:12
cut your corn off just like that.
2:15
And then it'll go right down into your ban panning.
2:18
But, we don't want whole kernel today,
2:21
we want the actual cream.
2:24
So, you can see this blade, right here.
2:29
And then you can see the sharp blades that come up,
2:34
that's gonna milk your corn.
2:37
So, you wanna run your corn in this the way.
2:42
Okay, let me get my rhythm
2:45
(corn crunching)
2:52
This one's actually set where it's a pretty,
2:54
pretty deep cut into your corn.
3:01
Oh gosh when I lived in Albany, Georgia,
3:06
I used to go buy bushels and bushels of fresh corn
3:13
and cut it off the cob like this.
3:17
Oh my goodness what a job!
3:19
It is one next to main job.
3:22
So I take when you,
3:24
when you put your corn in the freezer,
3:27
you become very, very like a miser with it.
3:31
You know, 'cause it's a lot of work.
3:36
But it's certainly worth it.
3:38
So that's just to show y'all,
3:44
how this works.
3:47
And you can find this in stainless steel or the wood.
3:52
But either one of them work beautifully.
3:56
But I got, I got back all the goodies out of that.
4:01
If you think you left some, you just take your knife
4:05
and run it down the cob, just like this.
4:10
Now, there's several ways
4:11
that you can cook fresh corn.
4:16
The way that I have cooked it for the last 40 years,
4:22
is believe it or not, in the microwave.
4:27
It is so good, cooked in the microwave.
4:31
And, alright, now this is what Teresa had already done.
4:36
She had already prepped all this for us.
4:39
And she just saved me a piece so I could share with y'all.
4:45
The easiest and best way to cream your corn.
4:51
And again, this is yellow corn.
4:55
But you really, really, really wanna try to get your hands
4:59
on white Silver Queen.
5:02
And look at this.
5:03
It is so, so full of juice.
5:09
So I'll tell you where, how my mother used to cook it.
5:12
She would cream it and then she would first strickling
5:17
in her black skillet.
5:19
Take the strickling out
5:20
and just leave the fat that came off of it
5:23
and pour her corn into that hot cast iron skillet,
5:28
and just fry till it was done
5:30
and it don't take very long.
5:33
Another way you could do it is just bake it in the oven.
5:41
At The Lady and Sons and Paula Deen's family kitchens,
5:48
we, we bake it in the oven because it's just,
5:51
we have to bake it in great big thick pans.
5:55
And it's so much that, it's just easier to bake,
5:59
bake it in the oven.
6:01
And all we add is butter, that's all, all we do.
6:05
So I'm going to add this sticker butter
6:14
and I think the recipe calls for,
6:16
one sticker butter for four cups of cream corn.
6:23
So I'm just gonna put this in here,
6:27
and that was a little bit more than four cups.
6:32
And I'm just gonna lay that butter on top of it,
6:35
and then I'm gonna put that in the microwave.
6:38
And it really don't take long to cook it.
6:41
And really depending on your corn now y'all,
6:45
you can, you can get your hands on some corn
6:47
that's not, don't have bunch of juice.
6:53
So it may be that you need to add a little cream to it
6:57
when it's through cooking.
6:59
But this seems to have plenty of juice.
7:02
So, I'm gonna stick this in the microwave,
7:05
and I gonna keep my good eye on it.
7:09
Watch it close, bring it out, stir it
7:11
and then put it back in.
7:16
(cutlery clattering)
7:21
(microwave door slamming)
7:22
And Am gonna set back for,
7:28
let's see what the vegetable,
7:32
that's the fresh vegetable button.
7:36
So I'll keep an eye on my, tamo fla.
7:44
Get a tomatoes ready to race in the columbaria.
7:49
It's ready y'all.
7:52
It's ready.
7:57
This, excuse me Gersey.
7:59
I would die if I poured hot corn on you.
8:04
Okay.
8:06
I think it might be one of the easiest vegetables
8:10
of all to prepare y'all.
8:13
No, let me say, it's the easiest vegetable to cook,
8:16
not prepare (laughs)
8:19
- [Teresa] It's not what you get in the groove, but its not.
8:22
- It's always hell y'all.
8:24
So hard.
8:26
It is so hard, but it's so worth the effort.
8:30
It was so worth Teresa's effort (laughing loudly)
8:35
That I'm gonna enjoy this
8:37
and I didn't have to do the hard work.
8:39
- [Teresa] That's okay, that's okay.
8:40
You do all the other hard work.
8:42
- So look, look at that cream cone (humming)
8:49
This in some sliced tomatoes
8:53
and sliced Ferndale onions,
8:56
And I would say a like a whole cake.
8:59
Maybe an okra, whole cake.
9:02
That's all you need.
9:04
- That's all.
9:04
- It's supper.
9:06
- Seven days a week.
9:09
- And when people come to our restaurants
9:11
they do love our cream corn.
9:13
- Well that's one of the reasons why we did this,
9:16
this week is because we've been getting a lot of requests.
9:18
- Requests.
9:19
- I had no idea that my produce team,
9:23
would not have Silver Queen Corn for me this week.
9:25
- So, I apologize that it's, its not silver Queen.
9:30
- Everything is so iffy.
9:31
- I know now.
9:32
- Now, the grocery store
9:33
it's finding the craziest things.
9:36
Your produce data is the best place to go.
9:38
Your local produce stem, - Yeah.
9:40
- If you have one in the area
9:41
to get like your best corns.
9:47
- Well this is fabulous y'all.
9:51
I can eat that all, well.
9:54
So thank you Teresa.
9:56
I knew we were doing cream corn today,
9:58
but I thought I was gonna have be the one don't do that.
10:01
- I wouldn't do that to you.
10:03
- Can I have cream corn?
10:05
- Yes baby, you can have some cream corn.
10:08
Let me get you a little bowl.
10:12
I want you to have some,
10:14
and I want you to tell me, how do you like it.
10:20
Look at the size bowl I'm giving you (laughs)
10:26
- It's hot, so be careful.
10:28
- Yes it is hot.
10:31
- That's cream?
10:32
- Yes, that's enough for you to taste.
10:34
Then you need a spoon baby
10:35
'cause I've eaten out of this one.
10:39
- [Teresa] It's a teaspoon but it will work.
10:40
- Yeah, here.
10:42
That's perfect for you.
10:44
- [Teresa] Make sure you blow it.
10:46
(baby blowing the food)
10:47
- Boy, dip it in this spoon and then blow it.
11:00
- It's hot.
11:05
- It is (speaking in foreign language)
11:14
- Is it good?
11:15
- You see that thumb go up (laughs)
11:18
- It's hot.
11:19
- It's is so hot, but so good.
11:23
- Can we wait for it to cool off.
11:25
- No, you have to eat it hot, just like me.
11:27
All of it right now (laughs)
11:32
She can wait for it cool off (laughs)
11:36
Granny wouldn't do that to you.
11:42
- Cream corn.
11:43
- You want some cream corn?
11:44
- [Joy's mother] No, but thank you.
11:46
(Paula laughing loudly)
11:49
- That was Joy and Henry's mother.
11:52
For some reason she doesn't like the camera.
11:57
She's the prettiest, so sweet I do not know one.
12:04
Best dishes y'all.
