- All right, I think this is the fifth
0:05
Thanksgiving recipe, most requested recipe
0:09
that I'm sharing with y'all,
0:10
and this is definitely one of my favorites.
0:14
And I think my Aunt Peggy shared this recipe with me,
0:17
I can't remember.
0:18
I've been making it for a 100 years,
0:21
and this is a sweet potato casserole.
0:24
- [Eddie] It's a little bit like dessert.
0:25
- It is a whole lot like dessert isn't it, Eddie?
0:30
Oh my goodness, it's so good.
0:32
It's as good as the Lady & Sons yams.
0:35
Now that's truly like a dessert.
0:37
- [Eddie] Yes.
0:38
- Cooked in that syrup.
0:40
That buttery syrup.
0:41
Oh, they're so good.
0:43
So, I've got three cups of sweet potatoes.
0:50
All you have to do is just rinse your sweet potato,
0:55
throw it in your microwave,
0:56
cook it on your potato button,
1:02
and then pull 'em out and peel 'em and mash 'em up.
1:05
It's that simple.
1:09
I have used canned sweet potatoes,
1:12
but I don't like it nearly as well
1:14
as I do that fresh sweet potato.
1:17
So, we've got one cup of brown sugar.
1:21
We've got one cup of white sugar.
1:27
We've got two eggs.
1:33
We've got, what is that, a 1/2 of stick of butter, Theresa?.
1:37
- [Theresa] Actually, it's a 1/3 of a cup.
1:39
- [Paula] A 1/3 of a cup?
1:42
Well, I'll tell you what,
1:43
if you wanted to do a whole stick,
1:45
that'd be just about perfect too.
1:46
(chuckling)
1:48
All right.
1:49
And I've got a 1/3 of a cup of heavy cream.
1:57
I've got one teaspoon.
2:02
Let's see, I don't know.
2:05
Get in there I've got, oops.
2:07
One teaspoon of cinnamon,
2:11
a 1/4 of a teaspoon of nutmeg.
2:21
And nutmeg mm,
2:25
is a very strong spice.
2:29
Oh no, what did I just do?
2:32
I just put one teaspoon of nutmeg in there, y'all.
2:35
About to tell you
2:38
how strong a spice it is,
2:40
so we do not want that much nutmeg.
2:46
I'm so used to,
2:50
I'm so used to
2:54
knowing what the container looks like.
2:57
(chuckling)
2:58
But I've got that backwards.
3:01
All right.
3:02
So, I have taken most of that nutmeg
3:04
that I dropped in there accidentally,
3:06
because what I was gone say is nutmeg
3:08
is a very strong spice.
3:12
So, that's why.
3:13
- [Eddie] And you don't want more than a pinch.
3:14
(chuckling)
3:15
- [Paula] No!
3:16
(laughing)
3:17
I had one teaspoon in it,
3:18
that would have been so strong with.
3:21
All right, this is the cinnamon,
3:24
and this is a 1/4 of a teaspoon I'm using.
3:28
So, I'm gone use four of those
3:30
to make it one teaspoon of cinnamon.
3:35
You know what?
3:36
I'm used to my nutmeg.
3:38
I buy it in those little half sizes,
3:42
and I'm not used to being in a container this big.
3:46
So, that's my excuse,
3:48
that's the only one that got,
3:51
besides just not being able to read.
3:54
All right, so we're just gone mash all this up.
3:58
And I really didn't like doing this
4:00
with my little hand mixer.
4:06
(rattling)
4:08
It just goes a lot, lot simpler.
4:11
(rattling)
4:12
Okay, so I'm gone turn that up.
4:15
Oops, am I slinging it on ya, Eddie?
4:18
Sorry about that.
4:20
(rattling)
4:34
- [Eddie] That smells so good.
4:35
- [Paula] Doesn't it smell delicious?
4:37
(rattling)
4:40
That cinnamon and that nutmeg,
4:41
and I'm gone put those eggs in it.
4:45
And I don't like tasting it once it's got raw eggs,
4:49
but I feel like I'm gonna need to taste it
4:52
since I did it bass ackwards
4:54
with the nutmeg and the cinnamon.
4:57
(clanging)
4:59
Mm, mm-mm.
5:08
I Taste the nutmeg.
5:09
- [Eddie] I was gonna say, I can smell the nutmeg, so.
5:11
- You know what?
5:12
Surprisingly, it's not too much.
5:14
(running water)
5:16
I mean, I think I really and truly dug most of it,
5:21
most of it out.
5:23
All right.
5:24
So, we're gonna season our pan,
5:28
we're gone spray our pan.
5:30
So it won't stick if I can find my spray,
5:34
what I did with it.
5:36
Here it is.
5:39
This casserole dish.
5:40
(spraying)
5:44
My casserole dishes are in storage, y'all.
5:48
So, I don't have a whole big selection.
5:54
So, I may have to cook this
5:56
in two different batches.
6:03
Oh my goodness, I love that smell of that cinnamon.
6:08
All right, let's see.
6:12
It's gone make it isn't it, Eddie?
6:14
- [Eddie] Yeah.
6:17
- [Paula] It's very deceiving.
6:21
- [Eddie] Is it a deep dish?
6:23
- [Paula] Yes, it was deep.
6:27
Okay.
6:30
Now here comes,
6:33
look at that, it didn't come out.
6:36
I'll put it right back.
6:38
This is the good part.
6:42
All right, we've got flour.
6:45
How much flour was that?
6:47
- [Theresa] 1/3 cup.
6:49
- [Paula] 1/3 of a cup of flour,
6:50
a cup of chopped walnuts
6:53
or either pecans.
6:55
Well, y'all, I've got to confess,
6:57
I made another error on this dish.
6:59
It's getting late in the day and
7:05
maybe I'm not seeing things clearly.
7:07
(giggling)
7:08
My eyes might be getting tired.
7:10
But anyway, I added a cup of brown sugar
7:13
and a cup of white sugar to our potatoes,
7:17
and it tastes delicious.
7:19
But actually, the cup of brown sugar
7:23
was for our toping.
7:25
And I just stuck it all in the sweet potato,
7:27
so this is gone be really good and sweet.
7:30
So, I'm gone need
7:33
some brown sugar to go on top.
7:37
And I'm probably.
7:38
- [Eddie] A cup,
7:39
it was a cup of brown sugar.
7:39
- [Paula] Yeah, it's supposed to be a cup of brown sugar,
7:41
but I'm not gone use that much
7:44
since I already,
7:49
since I already put most of it in there.
7:52
So, I'm just gone mix that up real good.
7:57
And then I'm gonna pour my butter in there.
8:03
Now this is the one that's like dessert, Eddie.
8:07
This is better than a sweet potato pie.
8:14
Okay.
8:15
And in go our nuts.
8:18
Now the recipe calls for walnuts, but we're using pecans,
8:24
but either nut will be delicious.
8:31
So, if y'all are counting,
8:33
I screwed up twice on this recipe.
8:35
(chuckling)
8:36
Getting my cinnamon mixed up with my nutmeg,
8:40
and my brown sugar
8:43
confused with my white sugar.
8:46
So, look at this.
8:49
That's got all of that moistened,
8:52
that little bit of butter.
8:55
Oh my goodness.
8:57
This is actually like,
9:00
this is the combination of a pecan
9:04
or a sweet potato pie.
9:05
It's like both of 'em.
9:07
What, Pumpkin?
9:09
It's like both of 'em in one dish.
9:13
This is out this world.
9:19
- [Eddie] Yes, it already looks good.
9:20
- I know it already looks good,
9:22
it already smells good.
9:23
And mine's just gone be a little sweeter than the norm,
9:28
which means Michael Groover will love it.
9:34
Cause you can't get enough sweetness in him.
9:36
So, I'm gone put this in the oven,
9:38
and I'm gonna bake it for three and a 1/2 hours.
9:42
(Eddie laughing)
9:44
I'm kidding, y'all.
9:45
I thought since I was screwing up,
9:46
I'd go ahead and screw up that too.
9:48
(chuckling)
9:50
Finish it off with a bang.
9:52
- [Eddie] Put it on 500 degrees
9:53
for three and a 1/2 hours.
9:54
- 500 degrees for three and a 1/2 hours.
9:56
(laughing)
9:57
All right, let's see what the recipe actually says to do.
10:03
Doesn't say.
10:07
Preheat oven to 325 and bake for 25 to 30 minutes.
10:14
So, in the oven that goes.
10:16
This is, if you've never tried this, you must, must
10:22
put this on your menu list for Thanksgiving.
10:27
If not Thanksgiving, for Christmas,
10:31
but I promise you're gonna love it.
10:34
Even with me screwing it up.
10:36
If you're like me and screw it up,
10:38
it's still gone be delicious.
10:40
(chuckling)
10:41
All right, y'all,
10:42
our sweet potato casserole is ready,
10:44
and I'm telling ya this'll be the head of the table,
10:48
if you should decide to serve this.
10:58
Wow.
11:00
Wow!
11:04
Wow, this is gonna be so powerful hot.
11:06
- [Eddie] Yes, it's definitely the dish to
11:08
get your children to eat their vegetables.
11:10
(Eddie chuckling)
11:11
- Oh, man alive.
11:13
Man alive.
11:18
Hot nuts.
11:22
Mm.
11:32
Like I said, y'all,
11:33
this is a combination of sweet potato and pecan pie
11:38
on top of that sweet potato pie.
11:40
It's a good.
11:43
Mm.
11:45
Oh.
11:48
And it is so hot,
11:51
but so good.
11:55
So.
11:59
That's six recipes down, I think,
12:01
for the most requested Thanksgiving recipes.
12:07
So, we got a good minute to go, don't we, Theresa?
12:09
Don't we, Eddie?
12:10
- [ Eddie] You gotta tackle desserts next.
12:12
- Yay, Desserts!
12:15
Oh my gosh, how are we gonna narrow down desserts?
12:16
- [Eddie] Although I think your,
12:18
I think your vegetables creeped into dessert a little bit.
12:21
(laughing)
12:22
- This is like dessert, y'all.
12:25
Love and best dishes,
12:26
we getting there.
