It's funny, when we built that house 11 or 12 years ago,

but our life at that time, that house suited us perfect.

So, we're all excited.

We are, we're fixing to undergo a major reconstruction

And I love cooking in this kitchen because it's so big.

And it's, I mean, we had everything just right in it.

I like to think that the husbands will learn how to carve

those big hams and those big turkeys,

but it doesn't always happen that way.

So, like I said,

I wanna share with y'all the proper way to carve a turkey.

And it's really not that hard.

The first thing we're gonna wanna do is disjoint.

Cause this might be messy job, y'all.

I cooked this turkey today

in our electric turkey fryer.

And I always stick with a 12 pound turkey for frying.

I've just found that if

you get it too much bigger than that, there's a good chance

you might have some medium rare pieces in it.

So, 12 pound bird is perfect.

I seasoned it with our house seasoning,

which has the garlic, the onion, the salt, the pepper,

all the good stuff.

And I, actually I wanted to inject it,

but I forgot to get the injector at the grocery store.

I love injecting 'em with just a pure garlic butter.

I know y'all are surprised about that.

But that's really what I like to inject 'em with.

But they've got all kind of flavors out there.

If you want Cajun turkey,

you can buy Cajun,

probably got Italian, I don't know.

But I have just found that the best way for me

to get the perfect bird is by frying it.

Cause it's hard to cook a turkey and the turkey breast not

be as dry as sawdust.

So, you usually have a pretty, pretty moist breast.

So, I'm gonna use my electric knife,

and if you don't have one that's okay.

When I'm frying a turkey,

I cook it three minutes per pound.

For a 12 pound turkey, that's 36 minutes.

And then I add an extra five minutes at the end.

this bird fried in that hot wonderful peanut oil.

All right, so here's our next step.

We're gonna take our knife,

let's find our breastbone first.
