So anyhow, I'm filling in for her while she's on the mend,

and we're doing some recipes that are favorites of yours,

because you've been telling us what your favorites are,

and with me being here, we're gonna

lighten 'em up a little bit

because I wrote a great book that was based

on taking my mom's recipes, traditional recipes,

and then lightening them up in very simple ways.

So we're gonna do some of your favorites,

and today it's gonna be pimento cheese.

And you know, pimento cheese is, sorry,

it's already got my mouth wet.

Pimento cheese is, is so good,

and it's just sort of a, it's a staple.

Pimento cheese, egg salad, chicken salad, tuna salad,

all these things are, well they bring back wonderful

memories because they were a part of my youth,

and they also were a part of the star

of our beautiful business called the Bag Lady

that led us up to where we are today,

with the Lady and Sons restaurant in Savannah, Georgia.

And it all started right out of our little kitchen

on 60th Street here in Savannah.

And one of the things that my mom used to make for us

to go out and deliver was a, we called trio sandwiches.

Okay, so imagine a clear plastic container

that you could see through with three different kinds

of sandwiches cut in half, all stacked upwards,

so when you looked into the container you saw, for example,

maybe a pimento cheese, maybe an egg salad,

maybe a chicken salad, altogether.

And they were just beautiful.

And my mom used to hand-make all these salads herself

right there in our little kitchen.

And so when people, you know it's funny,

with the Bag Lady, when we first started it,

a lot of you know that our business was born of,

you know, very simple means and necessity.

So we sort of looked a little bit like this

when we would show up at the businesses,

my brother and me, looked a little bit like this

only younger and fatter,

and we would show up and, and, you know,

we'd have this food and people would be like, "What are you?

You know, "What is this?"

No uniforms, no, you know, kind of looking a little bit

ragtag, but after they tasted the food,

oh boy did that business take off.

People really, really liked it.

Anyhow, we went on to open our restaurant,

and I went from being the pot scrubber, dishwasher,

to the dessert maker and then I made all the salads.

So at one point it was my job to make the pimento cheese,

egg salad, et cetera, et cetera.

Well, with a lot of the things that my mom makes,

I really love them, the traditional recipes,

but I'd like to eat 'em more often,

so I had to figure out a way to sort of dial 'em back

and make them a little bit more,

to make 'em a little lighter.

You know, something that you could eat more often.

So, today I'm gonna show you a pimento cheese recipe

that is a real home run, comes out of my cook book

called, "From Mama's Table to Mine,"

And I'll even break down the exact difference

in fat and calories between a traditional pimento cheese

recipe and my own, okay?

So let's get started.

You can see here, that it's not a bunch of ingredients,

and often it's not.

I mean, we talk about it a lot, good food

doesn't have to be complicated,

and it doesn't have to be fancy.

We're gonna start off with two ounces of cream cheese, okay,

and a traditional pimento cheese recipe

would probably have a lot more than two ounces.

It also wouldn't be using what I am,

which is a low fat cream cheese.

This is neufchatel, and it's only two ounces,

and to that I'm also gonna add some light mayonnaise.

This is a third of a cup of light mayonnaise,

and now these recipes, everybody,

are gonna be really precise.

So you can, you can bank on it that when you make this,

it's gonna turn out exactly like what you see me

making here today, okay?

So there's our light mayonnaise.

That's two ways that we've lightened this up already.

Well, three ways, we're using less cream cheese

than what an original recipe would call for,

and the cream cheese that we are using is light.

We're using a little less mayonnaise,

and we're also using light mayonnaise.

So, you know, to go along with the,

"There are no rules," thing that I always say,

there aren't any.

So, if you see me making this and you think,

"Well, I maybe would do that a little bit differently."

That's great, you should, you should be thinking that way.

Get creative, make it however you want to,

but try mine first and see what you think, okay?

I'm gonna use an electric hand mixer,

and I'm gonna beat together my cream cheese

and my mayonnaise, this is how we're gonna start.

And I don't want to sling it all over creation,

so I'm gonna keep it on low here.

And my cream cheese was already a little soft.

If you wanna do yourself a favor in advance,

and set the cream cheese out on the counter,

and let it soften up a little bit so it's not so hard

when you go to beat it together with your mayonnaise,

it'll make things a lot easier.

And so that's, you know, look at that lickety split.

What's that about 20 seconds maybe?

And I've already got those two beat together, perfectly.

Now, to that I'm gonna add my shredded cheddar.

It's gonna be two cups of shredded cheddar,

and this is a lower fat shredded cheddar.

That's another way that we're cutting back on the fat

and calories in this recipe.

So a little shredded cheddar.

Now let's go ahead and still, you could,

you could fold this in, and I'm gonna get to that,

but you could also use your hand mixer too,

and just mix it all together.

Cream cheese really is what makes it,

If you're surprised to see cream cheese in this recipe,

that is just a must for a pimento cheese.

Make sure that you use some cream cheese,

You know, you want your cream cheese to be blended in

I'm gonna cut it short right now, but you could,

you could do this a little bit longer and, you know,

make sure that your cream cheese is really beat in

Now to this, I'm gonna add some pimentos, all right,

and just a dash of Worcestershire sauce.

It's not even at dash, it's less than a dash.

just a very small shade of onion powder, just a little,
