- Somebody told me
0:02
that we're all got to be getting ready for a big game.
0:05
Do y'all know what I'm talking about?
0:08
You know, COVID has not only affected our daily life,
0:12
but it's affected our sports too, hasn't it?
0:16
It's so strange to watch a sport going on
0:19
and paper people sitting in the audience.
0:22
Isn't that crazy, Eddie?
0:23
- [Eddie] Yes.
0:24
(Paula laughing)
0:25
- Whoa!
0:26
Oh, I put this on high and I am burning my butter.
0:30
- Brown butter. - Whoa!
0:32
- You think that it's too burned, Eddie?
0:37
It's brown butter.
0:39
(butter sizzling)
0:40
Wow, kapow.
0:43
All right.
0:44
So
0:45
for the big game
0:48
we got to have something to munch on, don't we?
0:52
Well, one of our favorite things at our house
0:57
is an onion dip.
0:59
And this is just so much better than a store-bought one.
1:05
So I just almost burned four tablespoons of butter.
1:09
(Paula chuckling)
1:11
- [Eddie] It actually smells good though.
1:12
- Yeah, well, you know like brown butter
1:15
that's how they
1:17
make brown butter and that brown butter
1:20
is mighty fine on a steak.
1:23
(onions sizzling)
1:24
All right, so I'll cut that down a little bit
1:27
and we just wanna cook these until they're caramelized.
1:32
And, of course, my recipe says about 10 minutes
1:35
but I don't know.
1:36
When you caramelize onions it usually takes a little while
1:40
to do that but these are diced versus,
1:44
you know, sliced onion.
1:46
All right, so I'm gonna...
1:48
(onions sizzling)
1:50
I am going to...
1:52
(onions sizzling)
1:55
Add my pepper.
1:57
(onions sizzling)
2:00
And we'll add some pepper to it y'all
2:01
and then I'm gonna let it just start to caramelize.
2:07
And I don't know about y'all but I
2:10
like using
2:13
coarse ground black pepper.
2:16
To me it has so much more flavor
2:19
and, I guess I'm getting too old
2:22
and too lazy to use a pepper grinder.
2:26
So if you can find it coarse I sure do like being able
2:29
to buy it that way and use it.
2:32
So about 10 minutes on this
2:35
over medium heat and then we'll come and address it again.
2:39
But I truly think it's gonna take a little bit longer
2:43
then that but we shall see.
2:46
We'll give it 10.
2:48
Okay, so while our onions are caramelizing y'all
2:53
we can go ahead and beat up the goody,
2:57
the goody part of this dip.
3:00
Which is our cream cheese, our sour cream and
3:07
a little cayenne pepper.
3:09
Oh, look, Mike just came in with Lulu!
3:12
She's been to the body shop!
3:15
Oh!
3:16
Lulu you look so pretty and so clean.
3:20
You're such a pretty girl.
3:22
Yes, you are, doesn't she look pretty, Eddie?
3:26
doesn't she look pretty?
3:28
- She's beautiful. - Oh, she's such
3:28
a pretty girl!
3:30
- [Eddie] All fluffed up.
3:31
- All right, but now I got to wash my hands
3:33
even though you're clean Lulu.
3:36
Even though you're clean.
3:38
(water splattering)
3:40
I can't touch my food after touching you, can I?
3:43
- [Eddie] Mike said that Gus is so fluffed up
3:47
after being blow dried.
3:49
He looks like a polar bear.
3:51
(Paula laughing)
3:53
- When
3:55
Gus first came to be with our family
3:58
he looked just like a bear,
4:00
a teddy bear and he would get up in my lap
4:03
and he would just cuddle with me.
4:06
Oh, and that was in 2013,
4:10
towards the end of 2013,
4:13
that dog like saved me.
4:16
He was
4:18
such wonderful therapy for me.
4:20
(wrapper rustling)
4:22
And I love that dog.
4:26
You know, I think
4:30
somebody got it right when they said dog
4:32
is a man's best friend.
4:35
'Cause they don't criticize you, they're faithful,
4:38
they don't talk back at you.
4:40
They just love you.
4:41
(Paula giggling)
4:42
It's all they do, is just love you.
4:45
All right.
4:47
So we've got our cream cheese.
4:51
Our sour cream.
4:52
(spatula tapping)
4:55
And paprika.
4:59
We're gonna make sure that's not cayenne pepper.
5:01
(Paula laughing)
5:04
That would be terrible.
5:05
All right, and then I'm using one tablespoon
5:10
of a powdered onion
5:13
soup mix.
5:14
You know, the kind of dried packets
5:17
that we get to make onion dip with.
5:20
So in that goes.
5:24
And it does call for a little cayenne
5:26
but it's gonna be very little.
5:30
There, Michael can add his own cayenne.
5:34
If it's not hot enough for him.
5:37
(mixer buzzing)
5:39
All right, so we wanna beat that till it's smooth y'all.
5:45
But you got your...
5:47
(mixer buzzing)
5:53
Your onion.
5:57
Your dried onion in there
5:58
but it's not gonna be completely smooth but
6:05
you want the cream cheese as smooth as you can.
6:10
Smooth as you can get it.
6:15
Oh, gosh, I might just used to that thing.
6:17
Whoa!
6:19
(Paula chuckling)
6:20
It's like if you've never driven a car before
6:23
and then getting in a Ferrari and hitting the gas pedal.
6:29
That would be dangerous for me.
6:33
Okay, Theresa, how are things going?
6:36
- [Theresa] They going good.
6:38
- [Paula] All right, has the onions been cooking 10 minutes?
6:41
- [Theresa] No mam.
6:41
- I don't think so either.
6:44
But they're kinda caramelizing.
6:46
I'm glad we used the bigger saute pan,
6:51
Eddie.
6:53
(onions sizzling)
6:57
Okay.
7:00
(spoon thumping)
7:04
So just a few more minutes.
7:08
Personally, I don't think you can saute these too long
7:14
'cause generally,
7:21
like when I'm doing French onion soup,
7:23
I know I'll saute 'em at least 30 minutes.
7:26
- [Theresa] Really?
7:27
- But the diced don't take as long as like the sliced
7:31
but I'm still gonna give it just a couple more minutes
7:35
but we got everything ready.
7:37
All we're going to do is open our bag of chips and dip in
7:42
but we are going to let that cool.
7:45
Okay y'all let's finish up our onion dip.
7:51
I just prefer homemade onion dip
7:55
over store-bought.
7:56
So much better and remember I caramelized these onions
8:04
and then I let 'em cool.
8:07
Let 'em cool down some
8:10
and we're just gonna fold those into our cream cheese
8:14
and our sour cream, what was it, mayonnaise, sour cream?
8:19
It's been a few minutes, I've already lost track while
8:21
I was letting it cool. - Cream cheese and sour cream.
8:22
- [Paula] Yes!
8:23
Look at that. - I love a good
8:24
French onion dip.
8:25
- [Paula] Yes!
8:26
(dip squishing)
8:31
- [Theresa] Tried and true.
8:32
- Doesn't that look so much better than
8:35
the store-bought y'all?
8:39
All right, I got two little chicks.
8:43
(spoon banging)
8:44
Standing up here, I think they're ready to taste y'all.
8:47
So there you go.
8:48
(Paula chuckling)
8:49
Y'all dig in!
8:51
- [Theresa] You're not tasting?
8:52
- [Paula] Oh, yeah, I'm gonna taste.
8:56
(chips crunching)
9:01
- [Theresa] Yum, and the more that sits.
9:03
- [Paula] Oh, gosh.
9:06
Yes, once those flavors marry, honey.
9:12
(chips crunching)
9:12
- [Eddie] And this, yeah, definitely make ahead of time
9:15
for the game. - Yeah,
9:16
this is a good ahead of time.
9:17
- Yeah, you can make this the day before.
9:19
So much better than store-bought.
9:22
So make sure you get this recipe and
9:26
log it into your
9:30
recipe box. - Ones to remember.
9:31
- Or whatever, however you do your recipes.
9:34
But this is wonderful.
9:37
(chips crunching)
9:38
Love and best dishes.
