And today I wanna do with you a corn chowder.

- Okay, that sounds delicious.

- I really like soups and things of that nature

and this is a good one and the ingredients are all simple-

I'm ready to work.

- There are things that you can find in your

local grocery store with no problem.

So, let's get started - Okay.

- On the stove top here, I've got a little oil heating.

All right, in a big,

- When he says a little oil, y'all,

he's talking about a teaspoon full.

- Two tablespoons of oil.

And to that, I'm going to add an onion.

Just a diced white onion.

- Okay, bell pepper. - A green bell pepper.

- A red bell pepper. - A red bell pepper.

- And what else do you want?

- And I think we're gonna just start with that

for right now, mama. - Okay.

- And we'll cook those for just a minute

until they're kinda soft. - And you've got some

niblet potatoes.

- I do but these were whole potatoes

and I just cut 'em into kind of a rustic.

and they cook pretty quick. - I love them.

You know how, to me, they're so good?

Eddie was doing something one day in the kitchen,

oh, I think it was at Shop HQ,

and you, I don't know.

- [Eddie] I put 'em in the air fryer.

- You put 'em in the air fryer.

And they were wonderful.

When you bit into 'em, and course we didn't peal 'em

or cut 'em or anything, just,

but when you ate 'em, they popped in your mouth.

I said, this is the best potato ever eaten.

- You know what I like, is a salt and vinegar potato.

- I do too, I know this, I hadn't met a potato I don't like.

- I like 'em all - Me too.

- To myself. - Sweet potato, white potato.

Purple potato. - I like 'em all.

So we're just gonna cook these veggies

for just a few minutes, you know, until they get kinda

fragrant and a little bit, maybe translucent.

Not too long. - Yeah.

- I got it rocking and rolling.

- All right, I like the rock and roll.

- It was on low but I got it high,

I got it on high now. - So, say we are.

- There's a couple of parts to it.

- We're making a corn.

- It's a corn chowder.

It's a south, southwest corn chowder.

And the southwest comes in with the

the green and the red bell pepper and the scallion.

It does look delicious and

it's a really simple recipe, which are my favorite kind.

- All right, it says, seasonal, fresh corn

makes this soup thick and satisfying

but it's good to know that I can make it all year 'round

using frozen corn as well.

And that's what you're doing today.

- That's right. (oil sizzling)

- If you got some cooked chicken in the fridge,

go ahead and throw that in too at the end

to make a complete dinner.

Because I was just standing up here thinking,

that some chicken would be wonderful.

- It would be great, it's a vegetarian dish,

but if you wanted to add some

some chicken to it, it would be great.

- So, it stays in a large pot or Dutch oven,

heat them all over medium heat,

add the onions, the bell pepper, coarsely chop

the white and light green parts of the scallions.

- Yep, and add that too. - And add that to the pot.

- So, let's do that. - Okay.

- And add in the scallions and if you wanna

reserve a little bit for topping, you can,

as sort of a garnish.

- Or we can just have a couple extra leftover

that we can chop at the end, right?

- Yup. That's right.

- So, cook until the vegetables has softened,

about five minutes. - Yeah.

And we're not far from that right now.

- And then add the potatoes and half for the corn.

- Right, it's two cups of corn.

And we're gonna add one straight to the pot

and the second cup of corn, we're gonna put in the blender

with some milk. - Yes,

and that'll thicken this right up.

- That's exactly right.

- So, add the potatoes, half of the corn,

two cups of water and the salt,

black pepper, and cayenne.

And you're gonna bring this to a boil, cover the pot

and reduce the heat to low

and simmer until the potatoes are tender.

And that will take 10 to 15 minutes.

So, this is

very simple, there's a good chance that somebody has

all of these ingredients.

- Maybe not the niblet potatoes but.

So meanwhile, in a blender,

combine the remaining corn and milk

and blend it until smooth and then you stir that

corn-milk puree into the soup and cook until heated

through about five minutes.

And then to it, I'm gonna add a couple cups of water

and then we'll put it into the potatoes

And we're gonna put our potatoes in and our potatoes are,

I just cut 'em into, you know, just uniform chunks,

And then we'll turn it up and bring this

to a little bit of a boil.
