And this recipe is no different.

Brooke loves egg-drop soup.

And it's really easy to do at the house.

The hard part is beforehand

'cause you're gonna need

some chicken stock.

You're gonna need fresh chicken stock.

So last night, Teresa boiled down the chicken,

and you're gonna add celery and onions,

and your chicken

and plenty of salt and pepper,

and you cook that down

then you pour it through a strainer,

and what you have left

is fresh chicken stock.

If you're in a pinch,

you can buy a box.

I have bought many boxes of stock,

but you're gonna have to talk through it up.

So if you've got the time,

what I like to do is

if I'm ever boiling a chicken,

if I'm making chicken and dumplings,

or if I'm making chicken salad

and I'm using boiled chicken,

I'll take my chicken stock left over

from boiling the chicken,

completely cool it

and I'll pour it into ziploc bags

and then I'll freeze them.

And anytime I need stock,

I can always pull them out of my freezer.

So you've also noticed during this series

That is one court of Theresa's homemade chicken stock.

I need one inch of fresh garlic,

thinly sliced actually-

And I also took time

to teach Theresa how to chop. - [Woman] Yes.

- Which was a fun few minutes for us.

I've got a teaspoon

of reduced sodium soy sauce.

I've got a little tiny bit

of white ground pepper.

It's a little tiny bit

because of white ground pepper packs

the punch of a lot of black pepper,

so we've only got one eighth of a teaspoon

of ground white pepper.

And I've got some cornstarch

and I'm gonna use a little bit later

to thicken up the soup.

And we've got the eggs.

Can't have an egg-drop soup

unless you drop an egg in it.

Then I've got some green onions

that we're gonna garnish with.

The first thing we're gonna do though,

is bring our chicken stock up to a bowl

and simmer it for 10 minutes

with the ginger,

the soy sauce

and the pepper, so let's get all this in the pot.

This is easy enough.

Egg-drop soup is basically just chicken stock

with a little bit of seasoning in it,

and then at the end,

that's where you get to have fun,

we're gonna swirl the soup around

and drop our eggs into it.

So we're gonna wait about 10 minutes

and let it just come up to a bowl.

One inch of ginger,

one tablespoon of low sodium soy sauce,

and we've got a court of Theresa's homemade chicken stock.

Theresa made the stock for us,

we've got it over here with our ginger,

which I have pulled out with a slotted spoon.

You wanna remove that one inch

of sliced ginger from there.

We've got our soy sauce in there

and next we're gonna make our slurry.

It's a little bit of cornstarch

and a little bit of liquid.

And this y'all,

if you ever have a soup or stew

this is what you're gonna do.

And it's hard to explain until you do it.

You add a little bit of liquid,

you whip it up

and you'll see cornstarch tightens up really quickly.

So if it's too chalky,

And if you do it too much,

it's like water.

You don't want that.

which is the slurry which is kinda like.

So once you start whipping this up,

you see how it's kinda clumpy.

And the point of this is to get

So I'm gonna whip this in.

And once I get this worked in then you see I've still got

some cornstarch in my bowl here.

So I'm gonna take the rest

of the reserve that we had.

And I'm not making a slurry here,

I'm just cleaning up my bowl,

I wanna make sure I can get all this cornstarch out of here.

'Cause egg-drop soup,

all it is, is an instant soup,

it still needs a little bit of body,

'cause there's nothing else in here except for broth,

and we'll top the top with a little bit of green onions.

So this will tighten up in just a few minutes.

So I'm gonna let this go, I've got the heat on three.

So I'm gonna rinse this out

and we're gonna take two eggs.

Now this has been going

that's what incorporates the egg all the way through.

- And now this is gonna continue to tighten up

- It takes the egg about one minute in there to cook.

so I'm gonna repurpose this bowl again.
