- Hey y'all.
0:01
I hope that y'all caught the video of my conversation
0:06
with a man, Jim Hankins,
0:08
that made this beautiful house for me.
0:14
It's identical to the home that we live in,
0:17
the Dogwood house, our forever home.
0:20
And it is just incredible.
0:23
And look, he even sent us a little remote control.
0:29
That's how we turn off the lights.
0:34
All right, let's see.
0:36
Eddie, what am I doing wrong?
0:38
There, I have to hit it just right.
0:40
So you don't have to unplug anything or anything like that.
0:44
You just hit the little computer case and the lights are on.
0:52
The house is ready for Christmas,
0:55
even got wreaths on the door.
0:57
I'm just blown away.
0:59
So, Jim Hankins made this as a gift for me
1:03
and a tipsy trunk for Eddie, which is adorable.
1:08
It's got like 25 days on it.
1:11
Is it 30 or 31 or just 25?
1:15
It might represent Christmas. - [Eddie] You know, I think--
1:16
I think it's, no, I think it's the month.
1:19
- The whole month.
1:20
- [Eddie] Yeah.
1:21
- And there's a little surprise in each drawer for Eddie.
1:25
(Eddie laughing)
1:26
So just, you know, some people just are so incredible, Eddie
1:33
and taking the time,
1:36
from their life to do something like that,
1:40
for somebody is truly incredible.
1:44
So along with the dollhouse,
1:46
he sent us a recipe of Mama's Chicken Cheese Soup.
1:53
Now Jim told me that it was like a heart attack on a plate.
1:59
So, but he said his mama made it a lot.
2:04
Because it uses a whole,
2:09
large box of Velveeta cheese diced up.
2:14
So this is where we going to start.
2:19
Jim says he's no cook.
2:20
Sadly, he's no cook.
2:22
He and his dad weren't allowed in the kitchen.
2:30
Let's see, thinking about it now
2:32
she probably thought I looked emaciated after I moved out
2:36
of the house on my own and showed me how to make this soup
2:40
and her Sunday roasting potatoes, carrots, and gravy.
2:44
I'm still trying to work on how to make the gravy
2:46
like she did.
2:49
But this soup, he says, is delicious.
2:53
So we have boiled,
2:55
we've got homemade chicken stock right here.
2:58
Eddie put on the boil while I was getting ready.
3:03
Two breasts and four thighs, right Eddie?
3:06
- [Eddie] Well, that's what I boiled.
3:09
But yeah, I ended up using
3:14
3 thighs and 1 breast for the 3 cups of chicken.
3:18
- Oh, okay.
3:20
So it calls for
3:24
Five cups-- no five cups of chicken broth
3:27
and 2 to 3 cups of chopped cooked chicken.
3:30
And he even says canned chicken works nicely too.
3:34
So, you know, that would be a real shortcut for this.
3:40
But then you wouldn't have this wonderful
3:41
homemade chicken stock.
3:44
So you'd have to find an alternative for that.
3:48
But here's the recipe.
3:52
One box of large elbow noodles,
3:56
three stocks,
3:58
or half a cup to three quarters of a cup of celery,
4:02
chopped in small pieces,
4:03
and one small white onion chopped, and one stick of butter.
4:08
So, let me get my one stick of butter out.
4:12
- [Eddie] Right here.
4:12
- Where?
4:13
Oh, are you talking about that big, old, chunky,
4:16
yellow thing in front of my face, Eddie?
4:21
Listen.
4:22
You gonna get old too one day, too, y'all.
4:25
(laughing)
4:26
Not be able to see your butter.
4:30
All right. So I'm gonna put that in the pan.
4:32
All right.
4:33
He said small pieces.
4:35
So, I'm gonna work on getting this a little bit smaller.
4:42
Can you see what I'm doing Eddie?
4:43
- [Eddie] Yes.
4:44
- Or is my chicken in your way?
4:46
(chopping)
4:55
Get it, Gus.
4:57
I don't think you like celery though.
5:01
Piece of celery flew on the floor,
5:03
and Gus, his nose was immediately there
5:06
but I think he decided he does not like celery,
5:10
'cause it's still laying there.
5:12
Somebody was telling me the other day,
5:13
I can't remember who it was,
5:15
but their dog loved raw carrots.
5:20
I wish you'd eat some carrots.
5:22
It's so good for you.
5:23
So we got our onions,
5:28
and our celery going, and our stick of butter.
5:31
So Jim says to just cook this
5:34
until our onions are transparent.
5:38
Won't take long.
5:39
Five or six minutes.
5:41
We'll do good on that.
5:43
And then we're gonna add our chicken broth
5:47
to our vegetable pot and add our elbow macaroni to it.
5:54
And, I don't know if I've ever heard of another person
5:58
that said this, but he likes his elbow macaroni tender.
6:03
And I'm the same way.
6:04
To me that makes like macaroni and cheese so much better.
6:07
I don't do it al dente.
6:11
Even if I'm eating spaghetti, I want my noodles tender.
6:16
Our onions are nice and transparent.
6:19
Pretty much transparent, so I'm gonna add our chicken stock.
6:23
(stock splashing)
6:25
And there is nothing any better than homemade chicken stock.
6:30
There's just not.
6:33
You know those soups that you get in the Asian restaurants?
6:37
Eddie? - [Eddie] Yes.
6:38
- You know the salad and the soup?
6:39
I love that soup.
6:41
It's got the mushrooms and onions.
6:43
- [Eddie] Miso soup.
6:44
- Yeah, and I think it's just straight
6:46
homemade chicken stock.
6:47
It tastes like, so good.
6:50
- [Eddie] Mushrooms, and green onions.
6:52
- Yeah, the mushrooms.
6:54
So, he didn't tell me how much,
6:58
so just use your own discretion.
7:00
He said add garlic powder and salt and pepper.
7:05
So I'm gonna, I'm gonna go a little light
7:08
on the salt because Eddie seasoned the chicken so nicely.
7:14
So I'm not going to go overboard with that.
7:19
So we're gonna wait for this to come back
7:20
to a boil, and then we'll put the top on it
7:24
and let our macaroni noodles get tender.
7:28
Just like Jim likes them.
7:30
(pasta pouring)
7:33
Our chicken broth just starting boiling.
7:39
So I'm gonna stir that up real nice
7:43
and I'm gonna wait for it come back to a boil,
7:47
and then I'm gonna lower the fire
7:52
and let it cook until it's tender.
7:55
Eddie, walk around here and show 'em the back of his house.
7:58
How Jim--
8:01
look at this.
8:02
Isn't that crazy?
8:04
So if I want to decorate it for different occasions,
8:08
he made me this drawer that I could store things in
8:13
for the little house
8:13
without having to dig for 'em.
8:16
Somewhere, you know, 'cause I'd put them in that drawer,
8:18
and I'd never be able to find it again.
8:21
I've turned that down, and make sure
8:24
after you get your elbow macaroni in your stock
8:29
and it comes back to a boil, make sure you stir that pot,
8:32
because some reason that pasta wants to stick to the bottom
8:37
of your pot even though I'm using a non-stick pot.
8:41
So you'll make sure you want to do that
8:42
and just come back and stir it, you know,
8:45
every few minutes until it's the temperature that you like.
8:49
Our noodles are real tender now, y'all.
8:52
And I'm surprised that there's no more stock than there is.
8:59
I would think it would need to have a little bit extra salt
9:02
but I'm gonna do it just the way your mama did it, Jim.
9:06
And then,
9:09
towards the end if it still needs a little bit more stock
9:12
I'll add it then.
9:16
Look at that. (laughing)
9:19
Macaroni and cheese soup.
9:21
- [Eddie] Yeah.
9:26
- [Paula] Mmm mm mm.
9:30
So we gonna let this melt,
9:34
and then we'll add our chicken to it,
9:36
and it'll be supper time or lunchtime or whatever time.
9:41
Time to eat.
9:43
I'm gonna reach out to Jim and ask him
9:46
if his mother's soup was actually this thick.
9:51
Because when I think of soup, you know,
9:53
I think of something with more juice in it.
10:03
So, I got some extra broth, so--
10:07
in goes our chicken
10:11
and I think you said 3 to 5 cups of chicken, right Eddie?
10:14
- [Eddie] I think 2.
10:15
2 to 3 - 2 to 3.
10:18
So ours is gonna be nice and chickeny.
10:25
But to me this consistency is more like, you know,
10:28
just macaroni and cheese.
10:32
So at this point Eddie, I think,
10:37
I think I'm gonna get some of our extra stock.
10:43
That was probably a cup, wouldn't you think?
10:46
- [Eddie] Yeah
10:48
- [Paula] Because this macaroni noodles
10:51
is going to continue to swell
10:56
as it sits.
10:57
It'll get puffier and bigger.
11:03
But it does look good.
11:05
- [Eddie] It's creamy, yeah.
11:06
- [Paula] Yeah, it's so creamy.
11:07
- [Eddie] It's bone-sticking soup.
11:09
- [Paula] Yes, it's going stick to
11:11
more than just your bones.
11:13
(laughing)
11:15
Oh, don't dream your butt.
11:18
There's a good chance it may go there.
11:22
Mine will go straight here, to my spare tire.
11:28
(chopping)
11:34
(knife scraping)
11:41
The only thing I'm doing different, Jim, is,
11:47
you know we need our vegetables.
11:50
So, I've added some parsley to the pot.
11:59
Looks delicious.
12:05
Oh, and I did add more stock.
12:07
I started out with maybe an extra cup,
12:12
and I might be somewhere around close to three cups
12:15
by the time I finished.
12:18
So, I've still got a little extra.
12:22
Look at all that good seasoning down in there, Eddie.
12:26
Down in the bottom of that pot.
12:32
I'm gonna reach in there and try to get some of that
12:35
thyme, and pepper.
12:39
Oh look at me trying-- (laughing)
12:46
Yeah that helps give it some character
12:48
You know?
12:52
Can't wait. I've got my bowl sitting here ready to taste.
12:57
Can I get two spoons, Eddie?
13:00
- [Eddie] Yes.
13:01
- You wanna taste along with me?
13:02
- [Eddie] Yes.
13:03
- Jim said in his letter to me
13:07
that, you know, he mentioned it was heart attack in a pot,
13:12
but he said "Lord, help me, if it's my time to go,
13:16
I do hope I leave here with a bowl of mama's cheese soup".
13:21
(laughing)
13:23
So, let's dig in Eddie.
13:30
- [Eddie] Great. - [Paula] Dang, it is good.
13:39
It is delicious.
13:41
It's almost as good as the house that you sent me, Jim.
13:48
Surprisingly, you know, I did put a lot more liquid
13:52
in it than the recipe called for.
13:54
So, I don't know.
13:55
I want to ask you, is it supposed to be a thinner
13:57
or a real, real thick soup?
14:01
Added a little parsley.
14:03
But, here's my tip.
14:08
Be careful with the salt,
14:10
because the cheese, I think, has a lot of salt in it.
14:14
And a pot of chicken,
14:16
you know, it was seasoned like, perfect.
14:19
But then when I was mixing it together
14:21
it said salt and pepper.
14:22
So I put a little bit more salt.
14:24
So wait and salt it at the very end.
14:33
Look at my vegetables.
14:37
Y'all see my vegetables?
14:47
Yum. Yum.
14:50
(clapping)
14:53
Thank you, Jim,
14:56
for everything.
