- Okay today, I'm gonna share another recipe
0:04
that's really wonderful in January,
0:08
those cold days when you feel like you're cold to the bone
0:11
and you just wanna put something nice and warm in your body.
0:17
So, this is a chicken chili stew.
0:21
So, what are we starting with Cassie?
0:23
- We're gonna start with a tablespoon of oil,
0:25
which there is some in there you might, in the pot.
0:30
- Yeah, that looks like about a table spoon,
0:32
but we'll do just another drop just in case.
0:35
- Okay, and we're gonna add chopped onion, large.
0:41
- Which is wonderful diced onion.
0:45
- And a chopped yellow bell pepper.
0:47
- Yes, love the flavor of the yellow and the red
0:53
and the orange bell pepper, so just sweeter.
0:56
- Okay. - Give me.
0:57
- We have three (indistinct) of chopped garlic.
0:59
- Okay.
1:00
- And a small seed removed jalapeno.
1:05
(laughs)
1:07
- Gonna be a hot mama today.
1:08
(laughing)
1:10
- Then we're gonna cook that for about four minutes.
1:12
- Okay, so, we'll let that get nice and hot.
1:27
And let me see my favorite spoon which is,
1:30
(laughs)
1:31
look at my favorite spoon that I've picked out.
1:33
(laughs)
1:36
- [Michael] (indistinct). - Michael, I was on a show
1:40
in New York.
1:41
I can't even remember the name of the show,
1:43
because it wasn't a show that went,
1:47
I think it only went like one or two seasons.
1:50
So, the shows when you visit these shows,
1:58
they'll give you a little gift.
2:00
And this particular show gave me four wooden spoon with
2:06
Michael Paul and Jamie Bobby on it.
2:09
And I just thought they were cutest things.
2:12
And I use them all the time.
2:14
I wish I could remember the name of the show,
2:17
but like I said, it wasn't near long enough
2:19
to go remember it.
2:22
All right, so we're gonna let that saute
2:24
for about four minutes.
2:28
- All right, now you want to add in
2:31
a tablespoon of chili powder. - Okay.
2:33
- And you wanna season that. - I'm sorry
2:35
about the clicking y'all
2:36
but I can't seem to make it stop.
2:38
And then, add what now?
2:40
- Salt, okay. - (Indistinct).
2:43
To my taste or your taste?
2:44
(laughing)
2:47
All right, I'm gonna put a teaspoon of salt,
2:53
not that quite much pepper,
2:55
because I don't know what that jalapeno is gonna do to that.
3:00
So is that clicking making you nervous, ain't it?
3:02
- [Michael] Yeah.
3:03
(laughs)
3:04
- While he shoots me, he's also playing with the stove.
3:07
(laughs)
3:09
All right, let me turn this one off and see if it helps,
3:21
if I move it up there.
3:22
How about there?
3:23
- [Michael] There you go. - Is that better?
3:27
Okay, so, we added our chili powder, salt, pepper.
3:32
- Now we wanna add four cups of Chicken Broth.
3:35
- Okay, so, this is just plain water.
3:38
- You're gonna add- - So, yes.
3:40
I'm gonna add some wet base to it
3:44
and I think, let me see, I wanna tell you exactly,
3:50
I think I'd want a teaspoonful, let's see.
3:56
One teaspoon equals one Bouillon cube to one cup of water.
4:07
So how many cups was that? - Four.
4:10
- Okay, so that's three because I scoop.
4:15
All right, and then one more, so there's four
4:19
and this won't dissolve in cold water,
4:22
but I'll make sure it all gets in the pot,
4:26
but once you've used this wet base y'all,
4:30
you won't ever to use another Bouillon cube, will you?.
4:35
(laughs)
4:36
Okay, so, rinse our stock.
4:54
Okay, our stock is looking good, Cassie,
4:57
so, I've got some beautiful cube sweet potatoes,
5:01
and we're gonna put those in.
5:04
- And then two cups of store-bought Salsa Verde.
5:07
- Salsa Verde and this is not hot, is it?
5:12
- It shouldn't be.
5:14
- I don't do a lot of store-bought products.
5:25
It's got a little heat to it.
5:26
- (indistinct). - Little heat.
5:28
- You wanna do the whole thing or?
5:29
- Michael (indistinct) is gonna love it.
5:31
(laughing)
5:32
What, am I supposed to use that much?
5:33
- Yep, your (indistinct). - Okay.
5:35
(laughing)
5:36
Yeah, it's got a little heat.
5:38
- Okay, so we cook that for about 10 to 12 minutes
5:41
or until- - Okay.
5:42
- The sweet potatoes tender.
5:43
- Okay, well now we'll take a few minutes
5:46
for the sweet potatoes- - Yes.
5:47
- to get tender.
5:48
So I will put the lid on that, honey
5:52
and you wanna set the timer
5:55
for 10 minutes? - Yep.
5:57
Here it is.
5:58
I hope this is dinging, right?
6:00
It didn't, all right.
6:02
So that set for 10 minutes
6:04
and I'm gonna go put another ornament
6:07
on the Christmas tree.
6:08
(laughing)
6:10
- Okay, now we wanna add in-
6:13
- we'll finish up the...
6:14
- Mm-hmm (affirmative), the chicken chili stew.
6:16
- Yes and (indistinct).
6:17
- And all we did- - The steam is so hot.
6:18
- Was a rotisserie chicken.
6:20
We just hold off- - Yes.
6:21
- About 12 ounces
6:22
and this is a can- - Yes.
6:24
- Of Pinto beans.
6:25
- That had been washed-
6:27
- And rinsed. - And rinsed, then drained.
6:30
So I'm gonna go ahead and put those in there.
6:33
And that was a can of Pinto (indistinct), okay.
6:37
And our chicken.
6:41
- And Cilantro. - Okay.
6:42
- This little thing.
6:46
- So in goes the Cilantro and this is looking very good.
6:53
I just tasted one of the sweet potatoes
6:55
to make sure it was done,
6:57
ooh and it's good.
7:00
I love the Pinto beans. - Mm-hmm (affirmative).
7:03
- All right, so we just want to give that a second
7:05
to get hot.
7:08
And we got us a (indistinct) little bowl
7:12
and Eddie had to run out.
7:14
He had an errand to run, so Mike is our camera man now
7:19
and I know Mike wants a big bowl of this.
7:22
- [Michael] Yes Ma'am.
7:23
(laughing)
7:25
- Listen, that child won't eat nothing.
7:26
(laughs)
7:28
But burgers and he's funny about his burgers.
7:32
What else do you eat?
7:34
- [Michael] Chicken nuggets.
7:35
- Chicken (indistinct). (laughs)
7:37
Chicken tenders or chicken legs?
7:40
- [Michael] I prefer the tenders.
7:41
(laughing)
7:44
- I told him one day, I said son,
7:45
I sure do hope you take vitamins.
7:47
(laughs)
7:49
All righty, so, well, that's calming up
7:54
the temperature of our chicken and all of that.
7:58
I'm going to slice us some avocado.
8:05
This is gonna be our varnish.
8:08
(laughs)
8:11
I do no (indistinct).
8:13
(laughing)
8:15
This is gonna be a garnish.
8:18
Listen, y'all, won't get old too, if you're lucky.
8:21
(laughing)
8:23
And I wanna make sure I put,
8:25
squirt a little lemon juice on it,
8:29
because it will turn brown before your very eyes.
8:32
So, you ready Cassie?
8:33
- Yep.
8:40
- Look at all the beautiful colors.
8:44
The yellows and the orange looks so good.
8:51
Do you like yours chunky or do you like it more soup?
8:57
- I like it with a little bit of broth in it like this.
8:59
- I do too, so is that enough?
9:00
- Yep, that's perfect.
9:02
- And your avocado and then a little (indistinct),
9:07
but sour cream.
9:10
Oh, sorry, I got a little avocado
9:11
- That's okay. - In the sour cream.
9:12
It's all gonna get mixed up. (laughs)
9:16
- All right, Mikey, you ready?
9:18
(laughing)
9:23
I'm just gonna fix me up a little small bowl,
9:27
because I can be a sissy
9:29
when it comes to eat. (laughs)
9:32
So I'm trying to clean that spoon now.
9:41
And I do love the avocado and some of those strips.
9:48
What are those crispy strips called,
9:54
that they serve sometimes with Mexican-
9:59
- oh, the tortilla?
10:00
- Well, it is cut in strips.
10:02
Little tiny strips, yes,
10:03
but I'm sure that's what it is.
10:05
- Mm-hmm (affirmative).
10:08
- Those would be good on top.
10:09
- Mm-hmm (affirmative), all right.
10:13
- Here we go, bon appetit.
10:20
(laughs)
10:23
- Not too spicy for me.
10:24
- No, it's not too spicy
10:26
for me either. - it ends up,
10:27
really going together well.
10:28
- Mm-hmm (affirmative), I just love the sour cream
10:42
and the avocado, don't you?
10:44
- That really does well.
10:52
- That is delicious.
10:58
And on a cold January day.
11:01
- Perfect.
11:03
- Do you know what,
11:04
I might be tempted to cook up (indistinct)
11:08
and corn bread (indistinct).
11:13
So, y'all need to try it like I said
11:14
it's in none of the cookbooks,
11:16
none of the magazines as far as Cassie and I can tell y'all.
11:22
But it is on the website, right?
11:24
- Mm-hmm (affirmative).
11:25
- Paula Deen website, so Happy New Year to all of y'all,
11:31
Cindy and Mervin best dishes y'all.
11:33
(laughs)
