- Hey y'all, Jamie Deen back in Mama's Kitchen
0:02
and today I'm gonna, did y'all see yesterday's video?
0:07
Pause, watch yesterday's video.
0:10
We worked on a barbecue sauce that we're gonna use today.
0:13
So step two is if you're gonna have a good barbecue,
0:15
if you're gonna have a pulled chicken or pulled pork
0:18
any kind of sandwich, gotta have slaw,
0:20
love slaw on turkey sandwiches.
0:22
Ham sandwiches, slaw is a delicious condiment
0:25
on any sandwich you can think of.
0:27
It's necessity if you're doing pulled chicken sandwiches
0:31
which is what I'm doing today.
0:32
Look how easy this is.
0:34
Everybody makes slaw, right?
0:36
It's super easy to do.
0:37
You can buy a bag of prepared at your grocery store.
0:42
For me, I'm always gonna get a fresh head of cabbage,
0:44
save the outside leaves 'cause you want that green.
0:47
But if you want a mix, that's perfectly acceptable.
0:50
It's all so easy y'all.
0:51
All you need is a little bit of mayonnaise.
0:55
I'm gonna do it this way and then I'll tell you
0:57
how to make a really good one.
1:01
Purple onions, apple cider vinegar,
1:05
a pinch of salt and pepper.
1:12
I'm gonna put a little bit of hot sauce in here too
1:15
and I have always done it and I don't know why
1:18
but I put it in every slaw that I make, some celery seeds.
1:23
This is why y'all have me around.
1:25
Take a second with your celery seeds,
1:29
look how small that is.
1:30
You're not gonna be able to chop it all the way up
1:33
but you can break it a little bit.
1:38
Release some of the flavor that's inside of these seeds.
1:41
Also gives you a texture and it's a really pretty piece.
1:48
What I like to do is take my wet, mix it up first,
1:53
make sure and incorporate all my flavors down
1:57
into this mayonnaise because I'm gonna get an even coat
2:01
of mayonnaise through my whole slaw.
2:02
So instead of seasoning a bag of pre-cut cabbage
2:08
and not really knowing where it's gonna land,
2:10
I season my dressing.
2:12
'cause I know that the dressing
2:14
is gonna coat every bit of this slaw.
2:18
I'm gonna start with about half a bag and see how this does.
2:22
I don't like mine too wet.
2:26
I tell you what, I've gotten pretty good
2:28
about guessing how much to put in where,
2:30
this is perfect for me.
2:31
It's a little bit wet, not too dry.
2:34
Now some of y'all are thinking,
2:36
I know Jamie Dean was born in South Georgia
2:38
and he's not gonna put sugar in his slaw.
2:41
I most certainly will.
2:44
When I'm at my house, when I'm at mama's house
2:46
I'm using this recipe so there's no sugar in this.
2:49
But if you want to, put your a little bit
2:51
of sugar in here and get it sweet.
2:52
I don't go too far 'cause we ain't eating slaw today.
2:54
When you come back, I'm gonna show you yesterday
2:56
plus today equals oh delicious.
3:00
Okay y'all, now that you've gone back and saw yesterday,
3:03
this is the barbecue sauce that we were doing.
3:06
It's our traditional red sauce here
3:08
and I'm gonna add it to some pulled chicken.
3:13
Now if you want to, the easiest thing
3:15
in the world is to roast some chicken at your house,
3:19
Put it in your oven, keep an eye on it, get it to 165,
3:22
let it cool down a little bit.
3:23
You can use your hands or a fork, couple of forks.
3:29
And you can shred it, which is what we're doing today.
3:33
Shredded chicken sandwich and depending on how wet
3:37
you like yours, so you can roast it
3:38
or you can go buy a rotisserie chicken
3:41
or you can just throw it in there,
3:43
just a whole chicken breast if you want.
3:47
you see it's got that barbecue consistency that people love.
3:51
And by people I mean me.
3:54
So we've got our chicken going on our little buns
3:58
that we have here with our barbecue sauce.
3:59
Look how pretty that is.
4:02
I like to make them tall and fat.
4:06
I've been selling a lot of barbecue sandwiches
4:08
down at the chicken box lately and people love them.
4:13
Now if y'all want do some pickles,
4:17
these are bread and butter pickles,
4:19
ain't even gonna open them.
4:22
Don't put a bread and butter pickle
4:24
on your barbecue, pickles.
4:28
The only condiment I want on this today though
4:30
is this slaw that we made.
4:35
Barbecue sandwiches are supposed to be sloppy.
4:37
Don't y'all know, the higher the better.
4:44
Now you don't need any other condiment
4:46
on these because we've got our mayonnaise,
4:49
we've got our barbecue sauce
4:52
so we have vegetables, we have color, texture.
5:02
I mean, who's hungry?
5:04
It's the end of summer y'all.
5:06
Now the only thing this is missing is two lips
5:11
Appreciate it, y'all hungry?
5:13
Make your pulled chicken barbecue coleslaw sandwiches today
5:16
and thank me tomorrow.
5:17
Jamie Deen, I see y'all around the kitchen.
5:19
Thanks y'all, that's good food.
