- Hey, I'm Jamie Deen,
0:01
back in the kitchen out here at mama's house
0:03
and it's the end of summer.
0:05
I've been waiting for it to cool down just a little bit.
0:08
It's about 400 degrees here today.
0:10
I'm ready to get into the barbecue stuff.
0:12
Been so busy this summer.
0:14
We've got The Chicken Box open, the restaurant is so busy.
0:16
My mom's a million miles an hour.
0:18
My brother, our family.
0:20
Today, I'm gonna take a minute.
0:21
We're gonna do one of my favorite things to do,
0:24
is create a barbecue sauce here at the house.
0:26
We're using a recipe that I've used for years and years.
0:29
This is the traditional Southern.
0:32
and the first thing I wanna do
0:33
is put a little bit of oil in here
0:35
and I'm gonna sweat some onions down.
0:37
And while this is clearing,
0:38
and let's talk about barbecue sauces now.
0:41
So, you know you've got some
0:43
that people do super-duper dark, like really dark,
0:46
put a lot of brown sugar in it, make it really sweet.
0:49
Some, it's got a lot of black pepper in it, really spicy.
0:52
Some people cook down jalapenos and things
0:55
in their barbecue sauce.
0:57
But for me, it's always been a couple of different ways.
0:59
We either go the sweet,
1:01
which is ketchup with a little bit of brown sugar in it,
1:03
or the Carolina, which is a mustard.
1:06
It has a little bit more vinegar.
1:08
There's a place for both of 'em.
1:10
But for what I'm gonna do today,
1:11
we're using our red sauce
1:14
we've got all the things that go into a good barbecue sauce.
1:18
Ketchup, we've got vinegar, brown sugar, some mustard.
1:21
We've got some flavors in there.
1:23
This adds a little bit extra to it
1:25
because I take a minute and cook down these onions,
1:29
and I really want these to get translucent
1:31
and cook through (Lulu barking)
1:32
to release the onion flavor.
1:34
Hey Lulu, I'm coming, baby.
1:36
The onion flavor into this (Lulu barking)
1:38
is the basis of our recipe here,
1:40
so I'm not gonna rush this.
1:42
I know it's early in the video
1:44
but I'm gonna take one quick break and wait,
1:46
tomorrow show what I put this barbecue sauce on.
1:49
You're gonna wanna stick around for that.
1:51
We're gonna finish this barbecue sauce in one minute.
1:53
Okay y'all, here we are.
1:54
We got our onions perfect. (spatula thunking)
1:56
I'm gonna put, (measuring cup scraping)
1:58
I'm gonna drop our ketchup in on top of this.
2:00
You know, Therese will make sure
2:01
that all the measurements
2:03
get put on here for you. (spatula thunking)
2:05
The weather is really starting to get nice outside
2:08
into football season soon. (liquid splashing)
2:10
And this is the time for you to work on your barbecue sauce
2:14
'cause I know that y'all
2:15
are gonna be roasting chickens (spatula thunking)
2:16
that you're gonna be putting ribs on the grill.
2:19
A pulled pork sandwich at a football game on a Saturday
2:22
is one of the better things (bowl thunking)
2:23
that the Lord has blessed us with.
2:28
mustard. (spatula thunking)
2:30
This is gonna take about 25 minutes to cook down.
2:33
You want this to thicken up
2:34
just a little bit. (bowl thunking)
2:36
And I'm gonna put one tablespoon of Worcestershire sauce.
2:41
I love Worcestershire sauce.
2:45
Now, we're gonna use one of our whisk
2:47
and get all of this together.
2:50
this is just basically, looks like a mud puddle.
2:56
I'm gonna turn my heat up a little bit.
2:57
We're gonna cook this.
2:58
Be sure, don't scorch it.
3:00
You don't have to do it, like, it's not that delicate
3:03
but you want to come in
3:05
every few minutes or so. (whisk tapping)
3:10
we're gonna finish this barbecue sauce.
3:12
Now, if we come right here next door,
3:16
this is the sauce that we put together this morning
3:21
As you can see, this has really thickened up.
3:23
This has got a good flavor for us.
3:26
It's ready for a piece of white bread
3:28
or tune in tomorrow and see what I do with it.
3:32
Appreciate y'all checking in with me
3:33
in the kitchen today, y'all.
3:35
This is a good barbecue sauce.
3:36
I'm Jamie Deen. See you around the kitchen.
3:42
