(bang sounds)
0:02
- Well y'all, you know, it's all about Valentine's
0:05
here at our house this week,
0:07
and I'm fixing to share with y'all
0:09
the easiest, hot fudge chocolate sauce in the world.
0:15
I've been... I think I made this for the first time
0:18
when Jamie was like six and Bobby was four.
0:23
It was just always our favorite sauce
0:25
to eat on top of ice cream.
0:27
And of course, after you make it and you've eaten it
0:29
that first time, while it was hot,
0:31
you put it in the refrigerator.
0:33
And when you use it the next time,
0:36
you can just put it in a little glass bowl
0:38
and reheat it in the microwave
0:41
and it creams right back up, so smooth.
0:46
So, I'm starting with...
0:49
What did I do with my pot?
0:53
- [Lady] It's right there.
0:54
- All right, I'm gonna put one stick of butter into my pot
1:01
(metal clanking)
1:05
and get that to melting
1:09
And then I'm gonna add one cup of sugar.
1:12
And then I'm gonna add evaporated milk.
1:16
And then when I get through cooking it
1:21
just for a few minutes, I'm gonna add my vanilla
1:24
because if you put it in while it's boiling,
1:28
the vanilla has a tendency to cook out of it.
1:31
And I really want that vanilla flavoring.
1:34
Okay y'all I'm back.
1:37
This kitchen is very, very small.
1:40
So we had to put our refrigerator in the garage
1:43
and then we got stainless steel shelves out there
1:47
to hold our... it's like our pantry.
1:49
So I knew I had those chocolate chips
1:52
somewhere in that pantry.
1:54
Now I'm melting the stick of butter.
1:57
(paper rattling sounds)
1:58
And I'm gonna add one cup of sugar.
2:09
So this sitting fat in and on y'all.
2:13
(giggles)
2:15
Okay.
2:19
So in that goes.
2:23
And then I'm gonna add...
2:25
(paper rattling sounds)
2:27
You know it depends on how chocolatey you want it.
2:32
I'm using a real milk chocolate because...
2:37
No this is the semi-sweet.
2:39
I thought I had the...
2:42
I thought I had the milk chocolate,
2:44
so I'm going to go back and look one more time y'all.
2:47
(muffled giggles) Hold on.
2:50
All right y'all, so I got me a cup of sugar,
2:52
stick of a butter and it really...
2:55
And Theresa found my milk chocolate.
3:00
I am not a semi-sweet or dark chocolate...
3:05
I'm just not a fan.
3:08
But feel free to use whatever chocolate is your favorite.
3:12
You could actually make it with white chocolate,
3:14
but I just... I'm a big fan of milk chocolate.
3:18
(paper rattling sounds)
3:19
So that's what I'm using.
3:22
(paper rattling sounds)
3:22
And you know, this you just...
3:26
Just kinda put what you want. (paper rattling sounds)
3:29
I'm gonna put... that's probably a half, yeah,
3:34
it's probably a half a cup.
3:36
I'm gonna start with that and you can come over here Eddie
3:39
and show everybody how fast this melts.
3:44
So, I'm just gonna put enough chocolate chips
3:49
in this to make it the color I want.
3:52
So I may wind up in the end...
3:56
It may be like a cup of chocolate chips
4:00
but the milk chocolate now, it's a lighter chocolate.
4:04
If we were using semi-sweet or what's the other one?
4:09
There's a semi-sweet and...
4:12
I can't remember, cause I always use milk.
4:16
So that's the color I want mine.
4:20
So I'm saying that was a cup
4:21
and I'm going to turn this up just a wee little bit,
4:25
because I want that sugar to melt.
4:29
So I'm melted one stick of butter, put in one cup of sugar
4:35
and a cup of milk chocolate morsels.
4:39
(ticking sounds)
4:41
But I tell you if I put in...
4:44
Listen to what I did with it now.
4:47
(giggles) (ticking sounds)
4:48
If I had used... Oh, it's bittersweet.
4:50
- [Lady] Right?
4:51
- There's a bittersweet chocolate, there's...
4:53
- [Lady] Semi-sweet which is what these are.
4:55
- Yes, semi sweet which I can take a semi sweet
4:57
but I really prefer...
4:59
So I'm going to put just a little bit of this in here.
5:02
Just so you can see the color,
5:10
how much darker the semi-sweet is.
5:13
(ticking sounds) (bang sound)
5:15
Come on, get hot.
5:17
(light giggles) (ticking songs)
5:19
Get hot, morsels.
5:20
(ticking songs)
5:23
See, because other chocolate is like
5:26
the color of milk chocolate.
5:31
So if you like a Hershey bar,
5:35
that kind of chocolate you go on and get a straw.
5:40
(laughs)
5:41
But this sauce...
5:43
Okay y'all.
5:44
So our chocolate now our chocolate and our butter,
5:49
everything's melted and it's coming to a little boil
5:55
which is what we want.
5:56
We want to cook for just a minute.
6:00
And this is where your own your own
6:04
because I don't think I've ever measured.
6:09
I don't think I've ever measured my evaporated milk.
6:13
So I'm gonna just say, let's start with that much.
6:19
And what is that?
6:20
- [Lady] A fourth of a cup.
6:21
I think it's a third, isn't it?
6:24
So see how that bubbles up.
6:26
- [Lady] It's a fourth.
6:27
- Okay, it's a fourth of a cup.
6:34
And see, when you put in that cream
6:37
It makes it bubble.
6:39
Look at that.
6:40
(metal clanking sounds)
6:42
So it's immediately so creamy.
6:46
Okay, so a stick of butter, a cup of sugar,
6:51
a fourth of a cup of evaporated milk, and a dash.
6:57
(laughs)
6:59
So the thing is when you're...
7:03
Surely you can't eat all this at one sitting.
7:06
I mean I could, but I don't.
7:09
So when you reheat it you'll wanna maybe
7:12
just put a little dash of evaporated milk in it
7:16
and it just creams right back up.
7:22
So we're just gonna let that come to boil and you can see,
7:30
just that little fourth of a cup of evaporated milk,
7:34
how loose it made it.
7:38
So you don't want to overdo it,
7:40
but you want that to just cook for a minute or so
7:43
and make sure all your sugar has evaporated
7:47
and it's not grainy.
7:49
(bubbling sounds)
7:58
It's still just a wee bit grainy.
8:02
So I'm going to add... this really, really creams it up.
8:09
- [Lady] So you're probably at a third of a cup now.
8:11
- I'm probably at a third of a cup, yeah.
8:14
Listen to Teresa, she... (laughs)
8:16
- [Lady] I am because I'm one of those precise people.
8:18
- You are getting there.
8:19
And I know people like to know, I mean,
8:21
I know that's a big thing to people,
8:22
it's to really know the measurements.
8:25
So...
8:26
- Yes.
8:28
- I'm keeping you in check
8:30
- That's right, I need somebody to do that Teresa.
8:32
(laughs)
8:33
A lot of people have tried.
8:37
- [Lady] I've been trying for 18 years.
8:39
(laughs)
8:40
- Have we been together 18 years.
8:43
Well, you deserve a medal.
8:46
- [Lady] It's been a easy job.
8:47
- You deserve a Ruby on your booby.
8:49
(laughs)
8:50
(bubbling sounds)
8:54
All right, now I'm going to check for another spoon.
8:57
(metal clattering sounds)
8:59
- [Lady] Here's a spoon for you.
9:01
- It's all right, I got...
9:02
Oh look, no that's not a spoon, that's a fork,
9:06
thank you, thank you.
9:10
All right.
9:12
(ticking sounds)
9:18
- [Lady] Yum.
9:20
It is not grainy.
9:23
So it's really better y'all, if you let it cool some,
9:31
which you know I don't have at the time.
9:34
(water splashing sounds)
9:36
I wanna still have...
9:38
Oh my Gosh.
9:41
I love maraschino cherries.
9:45
And I like them with some on them.
9:51
See this needs to cool, so the chocolate
9:53
will stick to your cherry.
9:56
(water splashing sounds)
10:06
Good.
10:07
It would be better enough if it was cooler.
10:10
(water splashing sounds)
10:17
But that's it.
10:19
And if you want a caramel sauce you would make it
10:24
basically the same way, only you use dark brown sugar.
10:30
Versus or light brown sugar, one of the brown sugars.
10:35
And y'all know my beautiful, beautiful ice scoop
10:39
that a friend sent me.
10:41
I love this ice scoop so much
10:46
All right.
10:47
See how it just rolls through there.
10:49
- [Lady] Mm-Hmm
10:50
- You put that under.
10:56
- [Lady] Yum.
10:56
(light chuckle)
10:58
Oh, I wish this was cool.
11:02
(clanking sounds)
11:04
That's okay.
11:05
Ice cream is just as good melted.
11:11
- So we need spoons.
11:14
- [Lady] Well, we just gave you a spoon.
11:16
- I know, but we need three, for tasting.
11:20
And the dishes are clean here in the dishwasher.
11:22
Aren't they Eddie?
11:23
- [Cameraman] Yes.
11:25
- Okay so...
11:26
(clattering sounds)
11:31
Gosh the dishwasher's still hot.
11:36
All right.
11:38
Y'all gig in.
11:40
- [Lady] Okay, poor Eddy in the camera.
11:42
- Yeah poor,
11:44
- [Lady] He does get a lot of food though.
11:45
- He does - [Lady] We feed him after.
11:49
(ticking sounds)
11:54
This reminds me of... - We're double dipping.
11:56
What?
11:59
- [Lady] You know, the chocolate sauce that you do with
12:00
and you can scoop your ice cream cone in.
12:03
- Mm-hmm.
12:04
- You could do that with this and it would harden.
12:05
Cause see how it's hardening on...
12:06
- I don't know.
12:07
- [Lady] Look at that though.
12:09
- Yeah.
12:11
- [Lady] I don't think you can do it
12:12
after the first one but I think...
12:13
- Yeah.
12:14
- [Lady] Wow, that's good.
12:17
- All right.
12:17
Not everybody got a cherry, so...
12:21
Somebody's cherry.
12:24
- [Lady] Oh boy. That's great.
12:26
- Delicious.
12:28
I love things that are quick and easy and simple to do.
12:36
Like Theresa said y'all, she had been so surprised
12:40
(water splashing sounds)
12:43
- [Lady] At how easy it is to cook.
12:45
- Yes, yes.
12:47
And you know I tell everybody if you can read, you can cook.
12:51
So,
12:51
- [Lady] And I'm not... I'm an old dog.
12:53
This isn't like... I'm not like one of those young
12:55
whippersnappers trying to learn how to cook.
12:58
- Old dogs can learn new tricks though Teresa.
13:00
- They can, that's what I'm saying.
13:02
- So tomorrow, I'm gonna make y'all a chocolate fudge pie
13:10
to put ice cream on top of it
13:13
and top it with the chocolate syrup.
13:16
Happy Valentine's Day.
