- I have got such a treat for y'all today.
0:03
And I hope that you're gonna appreciate it
0:05
as much as I appreciated it
0:08
when my grandmother Paul shared her recipe
0:12
for red velvet cake with me.
0:14
I've got all my stuff here
0:16
but before we get started y'all,
0:17
I want to just remind you to be sure
0:19
and subscribe to my youtube channel
0:22
and just click that little notification bell
0:24
and that way I will be able to let you know
0:29
that there's an announcement, a video or something.
0:33
So that's easy.
0:35
Okay. This cake recipe calls for two eggs.
0:37
So I've got them in my bowl and I've beaten them.
0:40
And now I'm going add the sugar and beat that.
0:44
And remember what I said a few days ago, I think, you know
0:49
the link to this recipe is in the description.
0:51
So if I don't tell you exact, you can still get 'em.
0:57
Okay.
0:58
I've gotten our sugar and our eggs mixed up real well.
1:00
Now I'm gonna add cocoa.
1:03
And the cocoa is really what sets it apart
1:07
from a vanilla cake or a chocolate cake.
1:10
That's what makes it a red velvet.
1:13
So the recipe calls
1:15
for a two ounce bottle of red food coloring.
1:20
I only have a one ounce bottle.
1:22
So I'm gonna squeeze from everything I've got in my cabinet
1:26
that's red.
1:28
Now. I like this food color right here.
1:30
It's real strong.
1:35
Just that little bit may be enough.
1:41
All right, now I'm going add my two sticks
1:43
of softened butter.
1:47
It's funny how that little bit of cocoa,
1:51
you'll be able to taste it in the end results.
1:54
(blender whirring)
1:56
Whoa, slow down, Paula.
1:59
Okay. In between your beatings, now,
2:02
you need to scrape the sides of your bowl
2:05
because you wanna make sure everything's incorporated
2:08
properly. Okay.
2:10
We're on to the next step of Grandma Paul's red velvet cake
2:16
and I've got all the ingredients mixed up.
2:19
And now I am gonna take my flour
2:22
that I sifted and added salt to.
2:25
And I have my one cup of buttermilk.
2:27
So, I'm gonna alternate these two ingredients.
2:30
Always, always, start with flour and end with flour.
2:35
It just makes for a smoother cake.
2:37
I'm not a scientist.
2:38
I just know that to be a fact.
2:48
Y'all, this is a project
2:49
we've been working on now for a good while.
2:52
I am so proud to announce that we now have
2:57
this pure vanilla extract in our stores.
3:01
And I just love it in the brown bottle.
3:05
You know, being in a brown bottle that helps protect it
3:08
from the sun and any kinda light.
3:13
And that will keep it nice and strong.
3:18
So this is in our stores.
3:20
Where else can they find it?
3:22
- [Woman] PaulaDeenshop.com
3:24
- PaulaDeenshop.com.
3:26
And like I said, it's in any of our, Okay.
3:35
That's our vanilla.
3:36
And the last step
3:38
is I'm gonna add some baking soda to my vinegar.
3:48
And when that quits foaming, I'm gonna throw it in.
3:51
(blender whirring)
4:04
Like I said, I'm not a scientist,
4:07
but I think the vinegar has something to do
4:10
with the buttermilk.
4:13
Okay, come on, get mixed up in there.
4:20
Make sure it all gets in there.
4:23
So if my grandma told me to jump in a fire,
4:26
I'd probably jump in a fire, ya'll.
4:28
(laughing)
4:30
(blender whirring)
4:31
My grandmother said to bake these cake layers
4:34
in a 350 degree oven in an eight inch cake pan.
4:40
So that's what I'm using.
4:42
And you can see that I took a piece of wax paper.
4:45
I laid the wax paper underneath the pan
4:49
and with my scissors, I marked the size of the circle
4:54
because once you have put this much energy
4:56
in making a cake,
4:57
the last thing you want it to do is stick.
5:03
So I'm also going to spray it
5:05
with a non-stick that also has flour.
5:09
And I'm gonna be using to make sure my layers are proper,
5:13
I'm going use a measuring cup and go 1, 2, 3, 1, 2, 3.
5:19
And then in no time they'll be in the oven.
5:22
I cannot tell a lie. I lick the bowl.
5:28
That red, that red is a dead giveaway, what you're up to.
5:32
Okay. So I got them measured out the best I could.
5:36
And so I wanna ask y'all, you know,
5:38
my grandmother's icing is different
5:42
from most red velvet cakes.
5:44
So I would love to know about y'all, you know,
5:48
what has been the norm in your family
5:52
and just what you do with yours.
5:55
So let me know, you know, I always love hearing from y'all.
5:59
I just love it.
6:01
So all y'all have to do is just answer me in the comments.
6:05
So the cake pans go in the 350 degree preheated oven
6:11
for 20 to 25 minutes.
6:15
Okay. I baked our cakes for 20 minutes and they are perfect.
6:22
If you're unsure whether your cake is done or not,
6:26
you can actually feel in the center.
6:28
And when it starts pulling away from the pan,
6:31
you know it's done and see how easy those came out
6:35
because I took the time to use the wax paper.
6:38
Ooh, I'll chew that off.
6:40
(laughing)
6:41
So you can see, I sprayed more wax paper
6:45
because when I'm ready to put 'em together and frost them,
6:49
I don't want 'em sticking to the wax paper.
6:52
So that's it.
6:53
All right.
6:54
So, this is where I wanna hear from y'all.
6:56
Because this was my grandmother Paul's
6:59
recipe for the frosting.
7:02
And she's the only one that I know of
7:04
that has done it this way.
7:06
But just remember, if you wanna send me your recipe,
7:11
send it to Pauladean.com.
7:14
Questions@pauladean.com
7:17
and to remind y'all again,
7:20
the link to this recipe is gonna be in the description.
7:24
You wanna make sure that your butter and cream cheese
7:27
is at room temperature.
7:29
And I put my marshmallows in the microwave
7:33
for about...
7:34
(laughing)
7:34
I should have greased my fingers first.
7:38
For about 20, 22 seconds.
7:45
Those marshmallows are a sticky business.
7:47
(laughing)
7:54
Yeah, that works a lot better.
7:59
Right, so in the mixer that goes.
8:05
I don't know why Grandma didn't just use marshmallow cream.
8:11
I think that might have been easy-er.
8:14
Or maybe they didn't have marshmallow cream
8:18
when she started making this.
8:24
The next thing to go in,
8:25
now that I've got the marshmallows, the butter,
8:28
and the cream cheese smoothed out,
8:31
I'm going to add one box of confectioner sugar.
8:40
I'm gonna kind of add it slowly.
8:42
(blender whirring)
8:43
Kenzie, would you get my vanilla flavoring please?
8:48
I forgot to.
8:50
I think I put it up.
8:56
Good. Thank you.
8:58
You wanna put me about a teaspoon in there?
9:02
That would be great.
9:03
You don't have to measure.
9:04
You're just do you.
9:08
Perfect. Perfect.
9:10
Perfect. I thought you said you couldn't cook.
9:16
That marshmallow,
9:17
that melted marshmallow, Grandmama, made this extra thick.
9:22
Now I'm just gonna stir in my coconut and my pecans.
9:27
Cause I don't want the mixer to beat those up too badly.
9:31
Now I'm going to add just a little dollop of the icing
9:37
to my pan.
9:39
So my cake layers won't slide around.
9:43
And some people will actually slice
9:46
the little top off of cakes, but not me.
9:50
I'm fine with it having a rounded top.
9:52
I don't wanna lose any of my cake.
9:55
So down goes the first layer
9:59
and I wanna make sure it's centered in my pan
10:02
really, really well
10:07
(laughing)
10:08
- I'm gonna be sticking to everything, ya'll.
10:10
(laughing)
10:13
- Okay, y'all, I put our third and final cake layer up here.
10:18
And to me, this is the easiest way to, to frost the cake,
10:24
when you're doing a whole cake.
10:26
I like to put it around the edge of my top layer
10:31
and then bring it down.
10:34
Because when you have an icing like this,
10:38
that's full of different ingredients,
10:44
it can be hard to frost.
10:48
Oh My Grandmama, after all these years,
10:53
I still miss you.
10:55
But I'm so glad that you filled my mind
10:58
with wonderful, wonderful memories
11:01
that I can keep going back to anytime I want to
11:04
and keep that part of my life alive.
11:09
And I hope y'all are the same way
11:11
about your mothers and grandmothers, grandfathers.
11:16
So if you wanna chat about anything
11:18
if you've got a question or a recipe,
11:21
all you have to do is send it to questions@pauladeen.com.
11:27
The triplets are on their way over.
11:30
So I'm not gonna cut the cake right this minute.
11:32
I'm gonna watch little Olivia lose her mind
11:36
because she walks in my door saying, I want cake.
11:40
I want cake, Ginny.
11:42
(laughing)
11:44
- Want cake.
11:45
- I know you want cake!
11:46
You always want cake when you walk in Ginny's house.
11:50
You always want cake.
11:54
- All I want is cake.
11:55
- You wanted that cake?
11:57
- I wanted that cake. I wanted this one.
12:02
- What do you want, Olivia?
12:05
- I want this.
12:06
- You want this? When you came in,
12:09
you said "Ginny I want cake."
12:12
- I want a cake.
12:13
- Okay. That's what you're gonna get.
12:17
But Ginny has to handle the knife.
12:20
- Yes.
12:21
- Yes. You're not ready to handle a knife yet.
12:24
Do you know what kind of cake this is?
12:26
Or do you even care?
12:28
- Yes.
12:29
- You do care?
12:32
What Milly?
12:33
Oh, she knows where I keep the soda crackers.
12:38
- Soda crackers.
12:40
- Look, that cakes red. It's red baby.
12:47
- That's delicious.
12:55
- No idea what she said.
12:57
- More cake.
12:58
- More cake ?!
12:59
(laughing)
13:01
- We look around here.
13:02
She still got this much and already asking for mo.
13:05
More cake.
13:06
- It's delicious.
13:07
Yeah. You'll think this is a carrot cake.
13:10
When you see from the outside.
13:12
It's like a carrot cake, yeah.
13:16
- [Paula] Now is Claudia's grandmother
13:20
and she is from Venezuela.
13:23
And this is Claudia's double cousin.
13:28
- [Female] Double cousin, very important.
13:29
- [Paula] Elisa.
13:31
- [Female] Elise, the double cousin.
13:32
- [Paula] I wanna call her Elsa
13:34
because that's what I hear every time
13:37
from the kids.
13:40
It's Elsa, Elsa, Elsa.
13:42
So I'm gonna have to call you Elsa.
13:43
- [Elise] I'm dying to try this.
13:45
- Okay. And can I tell you something else?
13:47
Oops. Excuse me.
13:53
Elise.
13:56
(laughing)
13:59
She is a conductor.
14:04
I'd never met a conductor, ya'll.
14:06
She, the family,
14:08
She would never tell me that
14:09
but they say she's famous in Venezuela.
14:12
She is the only female conductor in her country.
14:16
So she's famous and everybody knows her.
14:18
And now I'm so glad I know her.
14:21
- No, I'm glad to be here.
14:25
It's such a great honor.
14:26
- Oh honey.
14:27
It's an honor to have you.
14:30
- Thank you very much.
14:32
- You're welcome.
