0:00
- Coming up next, I'm gonna share with y'all
0:05
for whatever you're gonna have for Easter.
0:07
Don't people have a lot of lamb at Easter?
0:11
- [Speaker Two] We do ham.
0:13
Well, that's usually what I do is pork,
0:15
but I think a lot of people have lamb.
0:18
But whatever you choose to do,
0:21
this dish will go with any of those proteins.
0:23
And we're gonna start with our zucchini
0:26
that we've cut up into small pieces.
0:30
And I've got a little butter here
0:34
and I'm heating our pan.
0:36
We're gonna just cook our zucchini
0:42
for about six or seven minutes.
0:49
I love like Asian zucchini,
0:54
you know, in your Japanese restaurants.
0:57
Oh my goodness, that zucchini is so delicious.
1:03
Michael and I, even Michael loves it.
1:06
So I'm gonna put this on about medium heat,
1:14
and you'll want to use a pot
1:17
that's got a nice tight fitting lid.
1:23
So, ooh, it'd already gotten hot.
1:24
So like I said, five to seven minutes,
1:29
and then we're going to pull it off the heat.
1:32
And I'm gonna go ahead and mix up everything
1:35
because this is like a zucchini custard.
1:41
So I'm gonna start with my three eggs.
1:46
I think I want a fork for this one.
1:56
We're gonna have to let that cool a little bit
1:58
because we don't want to use scrambled eggs.
2:07
And I've got my cream.
2:19
The heavier the cream, the more it sticks to your cup.
2:31
Now I'm gonna add my onion
2:38
and a couple of tablespoons of a real fine breadcrumb
2:48
and a teaspoon of Worcestershire
2:58
and a dash of Paula Deen hot sauce.
3:04
So just a dash or more.
3:11
We've got Parmesan cheese,
3:16
we've got salt, and we've got pepper.
3:24
So after our zucchini has gotten soft,
3:31
we're gonna mix that all together
3:32
and we're going to top it with like a fourth of a cup more
3:39
And I've already sprayed my casserole dish.
3:42
You'll need about a quart and a half of a dish
3:51
And I'm just gonna give them a stir every few minutes
3:53
so it'll be ready in five to seven minutes
3:57
to mix it all together and put it in the oven.
4:00
This zucchini is so delicious, y'all.
4:06
I can't quit tasting it.
4:11
I could eat it just like that.
4:14
Now, I just tasted this
4:17
and it was very, very bland because of the lack of salt.
4:21
There's salt in here and not a whole bunch of salt.
4:26
But anyway, I added just a little salt to this
4:30
and kind of stirred it up.
4:33
And I'm going to temper this.
4:39
And when I say temper, slowly heat this up
4:45
because of our eggs that we have in it.
4:52
Rather than just dumping it on top of that hot zucchini,
4:56
we gonna slowly get it warm.
5:16
Okay, and it is getting nice and warm.
5:23
Okay, so I think we're safe now.
5:25
We're just gonna dump it all in here.
5:30
and I've got my casserole dish
5:34
all greased up waiting for us.
5:38
And remember, this is like a zucchini custard bake.
5:57
This would be so good with rice.
5:59
Some rice and zucchini.
6:10
Now, I didn't drain my zucchini
6:12
because that was a thick custard that we had,
6:15
so now I'm gonna top it with a fourth of a cup
6:20
of grated Parmesan cheese.
6:25
And we're gonna cook this for about 35
6:27
or 40 minutes in a 350 degree oven.
6:33
And like I said, this is delicious anytime of year,
6:36
but I like it because it's so versatile
6:40
and it will go with any protein that you choose.
6:48
Our zucchini custard bake is ready and it looks delicious.
6:55
- I should have turned it around
6:56
because the oven got hotter on one side.
6:59
I think I'll stick it back.
7:03
- On this side, yes, but I mean, it's done.
7:10
Yep, I'm gonna do that.
7:13
I didn't recognize our oven cooking like that.
7:18
I mean, I usually like if we doing cakes or cookies,
7:27
So we'll just give that a couple more minutes
7:28
for that other side to get brown, like the other side.
7:34
All right, let's check on our zucchini custard bake
7:44
Oh yeah, yeah, that's brown on all the sides.
7:49
It could stand to be a little bit darker, right over there,
8:00
So I'm going to just leave that sitting right here, Eddie,
8:03
because I don't want to scold my mouth,
8:05
so I'm gonna let it sit here and cool for a while, okay?
8:15
I'm gonna try not to mess this up
8:19
because I may serve this to company tonight for dinner.
8:26
You can't tell I dipped in it.
8:38
You know, it tastes like cornbread dressing
8:44
Now y'all got to taste this.
8:45
Now, I know y'all didn't give this up fully.
8:47
- [Speaker Two] We did not.
8:54
Yep, it's like cornbread, but I think may be better.
9:06
And I'm so glad that I tossed just a little bit of salt
9:11
on that zucchini after I had cooked it.
9:26
You going to find yourself making this over
9:29
and over and over again.
9:40
I could eat a big plate full, but I'm not, I'm not.
9:46
I'm gonna be strong like Theresa and Eddie.
9:54
- [Speaker Two] That's only on sweets.
10:03
- [Speaker Two] When he's makes a decision--
10:04
- Oh listen, don't even try.
10:10
So speaking of trying, do try this one.
10:14
And don't forget when you come into my show
10:21
and that'll bring you to
10:23
everything that I've got to offer on my show.
10:30
