Can you believe it's already almost Memorial Day?
0:08
We are soon going to be like a half a year into '26.
0:12
It just moves so quickly.
0:17
So most people cook out on Memorial Day
0:22
and get together with friends.
0:26
I know that years ago,
0:29
that used to be one of my favorite holidays
0:31
because the children went to school.
0:35
They had to go to school, so their daddy and I
0:38
would just plan a fun day with friends by the pool.
0:43
So children probably get off now, don't they?
0:48
- [Eddie] In the south, yes.
0:54
All right, so I'm gonna share with y'all
0:57
a very quick way to do like some southern baked beans,
1:02
you know, if all you got is pork and beans.
1:04
Of course now you can get 'em already baked,
1:09
you know, at the grocery store.
1:11
But just in case you don't have anything but pork and beans,
1:17
I'm gonna show you a quick way to jazz 'em up.
1:25
And of course, bacon makes baked beans the best.
1:35
I'm gonna brown this up some, and got my onions,
1:39
I've got my ketchup, I've got my syrup,
1:41
and I've got my mustard, and that's all we're gonna need
1:44
to add to these pork and beans.
1:48
All right, so we gonna let this,
1:50
I'm not gonna let it get real, real crisp
1:53
because I wanna leave a little bit of fat in it
2:00
to season these beans.
2:02
All righty, now I told you
2:04
I wasn't cooking this 'til it was crisp
2:08
'cause I want some of that fat in those beans.
2:14
So now I'm gonna add my onions and cook those for a minute
2:21
in that nice, yummy bacon grease.
2:31
now this recipe says to mix this in
2:39
with your baked beans, but I like my bacon on top.
2:43
I like to cut it into bite-sized pieces
2:46
so that everybody can have a bite of bacon,
2:53
and we just gonna saute these for a couple of minutes
3:01
and then we're gonna throw everything together.
3:07
Now I'm gonna take my bacon
3:17
Cut it into bite-sized pieces,
3:21
and then I'm gonna lay mine on top.
3:32
And I don't want my onions...
3:35
I don't want my onions overcooked either
3:39
'cause I like for them to have an opportunity
3:44
to cook in those pork and beans.
3:49
You know, this is a great little recipe.
3:53
Originally, I think baked beans were made outta dried beans,
3:58
dried pork and beans, and those take so long to cook
4:08
So this is a lot easier and quicker for us
4:13
instead of going that real long route.
4:15
All right, now my onions have cooked enough.
4:17
I'm gonna add my pork and beans.
4:23
Beans, beans, musical fruit.
4:27
The more you eat, the more you toot. (chuckles)
4:33
I couldn't resist it.
4:37
I couldn't resist it, y'all.
4:39
All right, so we're gonna add our ketchup
4:53
And if you like them sweeter than these,
4:56
you can always add some brown sugar to it.
5:02
But you taste them and see if that's sweet enough for you,
5:10
and if it is, just put 'em in your pan, put 'em in the oven,
5:20
and we'll cook these probably 45 minutes.
5:25
You know, it just depends on how juicy you want yours.
5:33
Okay, I'm gonna give it a taste
5:37
and see if it needs some brown sugar.
5:46
No, that's good, and I love the mustard.
5:50
What a mustard does to it.
5:53
All right, so I'm gonna spray my casserole dish
6:00
just in case they wanna stick.
6:15
All right, I'm gonna get every bit of that outta my pan
6:26
'cause that's where the good is.
6:37
That's where the good is.
6:46
All right, so this is how I like to do my bacon.
6:51
If you wanna mix it in, you certainly can.
6:54
I just kinda like mine on top
6:57
where I've got a little bit more control over it.
7:05
Oh, it's cooled off now.
7:16
You know, everybody loves baked beans
7:20
down here in the south.
7:22
Do they eat baked beans up north, Eddie, a lot?
7:27
- [Eddie] Boston baked beans, yeah.
7:28
- Oh yeah, that's right.
7:30
What do the Boston baked beans taste like?
7:33
- [Eddie] It's a darker.
7:36
Yeah, I think they do more-
7:37
- Molasses. - And brown sugar.
7:42
- [Eddie] I know, it's been surface,
7:45
but they're, you know,
7:46
traditionally they're cooked forever in the oven
7:49
and it covers clay pot.
7:51
- That's right, that's right.
7:53
I remember reading that now.
7:58
Doesn't that look good?
8:02
It's really a lot better than having to do hours on it,
8:09
but I know I can see the pot right now, Eddie,
8:24
'Til they're the way you like them, maybe 45 minutes.
8:31
These look so good, and they were so easy.
8:35
And you see why I like to put the bacon on top
8:40
because I want everybody
8:42
to be able to get a bite of that bacon with those beans,
8:46
and I think even my mama used to do it,
8:51
you know, put whole long strips.
8:54
Well, then somebody come along and take the whole strip,
8:59
and then I didn't get any bacon,
9:01
so I like pushing it out to folks
9:07
so everybody can have some.
9:19
So hot, and that mustard to me gives it the best twang.
9:29
And like I said, if they're not sweet enough for you,
9:32
just add a little brown sugar.
9:34
But to me, they're very, very good and easy.
9:41
- [Speaker] And Jamie did a french onion burger.
9:46
These would go so good with it for Memorial Day.
9:48
- Wow. - So hopefully,
9:49
they'll watch that video as well.
9:51
You can do a French onion burger and serve it.
9:53
- Tell me how he did it.
9:55
- [Speaker] He caramelized onions.
9:57
- [Speaker] You watched the video?
9:58
You need to watch the video.
10:00
- I do. I been on the road.
10:03
- [Speaker] It's not on yet.
10:04
It's a Memorial Day. - Might as well.
10:05
- [Speaker] But they'll do it right before,
10:06
it'll air right before this one.
10:10
- Well, good 'cause my son knows a good burger
10:16
So whatever you're doing, have fun doing it,
10:21
and I'm sending you love and best dishes
