- What's on your mind, son, what's on your mind?
0:02
- Georgia's on my mind.
0:04
- [Paula] And today, Bobby and I are gonna bring
0:05
a little Georgia into your kitchen.
0:08
- Together, we're dangerous.
0:09
- We are gonna start with a fresh spinach salad,
0:12
topped with a warm bacon dressing.
0:16
- What do you think about when you think of Georgia?
0:19
- You think of vegetables, and look,
0:22
look out there at the water.
0:23
- And I think of Savannah, and I think of--
0:23
- You think of fish! - Fresh seafood.
0:25
- Bobby and I was out in the garden, y'all,
0:27
picking some spinach.
0:29
I've found that I love to grow all your green leafy things,
0:32
lettuces, spinach, broccoli.
0:35
Y'all, look that beautiful spinach.
0:37
- Yeah, and you got the best garden in Savannah too, by far.
0:41
- Well, it's a little ol' bitty humble garden, but you know,
0:45
it's amazing what you can render.
0:49
I'm frying up some bacon, y'all.
0:51
We've got about five or six slices of bacon.
0:54
Bobby is gonna be making us a fresh spinach salad.
0:58
- We're gonna make it together.
0:59
- Yes, with a warm bacon dressing.
1:01
- All right, Bobby, I'm gonna take this bacon up.
1:05
'Cause you know, I don't like my bacon, for a spinach salad,
1:09
really, really crisp.
1:11
I got about eight cups of fresh spinach here
1:13
from your garden and it looks beautiful.
1:15
- It does look beautiful.
1:17
- And we're gonna make a real simple bacon vinegarette.
1:19
Okay, you ready to get started?
1:20
- Yeah, so I'll start on your dressing.
1:23
All right, tell me what I'm doing.
1:25
- You're gonna use a half a cup of red wine vinegar
1:27
and two tablespoons of honey mustard.
1:29
- And you want me to just put this right there.
1:31
Right there in to it. - In the pan
1:32
with the bacon drippings. - Right there in to it.
1:34
And I'm gonna chop up about a tablespoon and a half
1:36
of shallots, and we'll add this to your bacon drippings.
1:40
Of course, the most important part is the bacon grease.
1:43
- Yes, drippings, Bobby, bacon drippings.
1:47
- Grease, mama. (Paula laughs)
1:50
- [Bobby] Score the shallot just a little bit.
1:51
- Little salt and pepper.
1:55
Look at that, how delicious that looks.
1:59
- Well, I'm sure that it is already.
2:03
- Mmm, ooh, that bacon flavor, it's so good, son.
2:10
- It sure don't hurt nothing.
2:14
- Sure don't hurt the flavor.
2:15
- It's a great base though, I mean.
2:19
I love hot dressings on lettuce.
2:21
- I do too, I do too.
2:22
Right over some fresh spinach
2:24
and the way it just wilts it up right away.
2:27
If you eat it right when it's hot like that.
2:29
- So should I reduce that down any, Bobby?
2:32
- Yeah, we don't want to boil it up.
2:34
- [Paula] Okay, son, that looks like--
2:36
- [Bobby] Yeah, that's probably a couple tablespoons.
2:38
- Uh-huh, that looks good.
2:40
All right, now I've got our dressing simmering
2:42
and I'll help you slice up our mushrooms.
2:48
Toss in the mushrooms into the salad.
2:55
- Wow, that shallot, I am so sensitive
2:56
to cutting and chopping, you know, things like this.
2:59
That shallot's already got me going.
3:03
- Bobby's chopping half of that red onion, y'all,
3:06
and I'm gonna be slicing up
3:07
about two and a half cups of mushrooms.
3:11
- [Bobby] All right, I'm gonna toss these mushrooms
3:11
and these onions in the spinach a little bit.
3:15
You know what, I know it only call for half of that onion,
3:17
but I'm gonna take a little bit more
3:20
and slice it up and throw in there.
3:23
I do love that purple onion
3:24
in a spinach salad. - I do too.
3:26
All right, son-- - Could you start on that?
3:28
- I'm gonna chop this bacon up and toss it on
3:32
and you can come on down here and pour some dressing.
3:36
- [Bobby] Yeah, I think we're good,
3:37
I'm gonna go ahead and turn this off.
3:38
- Oh yeah, perfect. - This looks beautiful.
3:41
All right, this is really hot, I'm right behind you, okay?
3:46
Now for spinach salads,
3:48
you wouldn't wanna dress the whole bowl
3:51
unless you were gonna eat it right then,
3:53
because you can't put this in the refrigerator and save it.
3:58
Bobby, you just, your little eyelashes.
3:59
- I'm just crying all over the place.
4:01
- Your little eyelashes are just wet.
4:08
Those onions get me every time.
4:10
- Look how good this does look, delicious.
4:15
- [Paula] Clump, a stool.
4:18
Let's dig in and try this salad.
4:20
- Mmm, isn't that great? - Bobby, this.
4:25
- It's not greasy in any way.
4:26
- No, there was not that much drippings.
4:33
Naughty and the nice. - The naughty. (laughs)
4:35
The naughty and the nice. - You think?
4:42
Hey, y'all, it's Paula Deen.
