0:01
Guess what season we're entering?
0:07
Why does February seems so early for a strawberry?
0:10
- [Crew] I know, it does to me too,
0:11
but it's the start of it.
0:13
- It's the start of it.
0:14
And how long does it last?
0:16
- [Crew] It's only about a month and a half, two months.
0:18
- Yeah, yeah, well, we are going to start out
0:24
honoring the strawberry with a recipe
0:26
I bet y'all have never used.
0:30
And it's strawberry biscuit casserole,
0:35
which sounds pretty good, doesn't it?
0:38
So we're gonna have to do this in two steps.
0:39
I've got my strawberries
0:41
and let's see, I needed two pounds of fresh strawberries,
0:45
wholed and quartered.
0:48
I've got my sugar that I'm gonna pour over them.
0:54
I've got couple of eggs and I'm going lightly beaten
1:01
before I add 'em in there.
1:09
You know, our chickens are still slow about
1:16
but I had one from the grocery store, Eddie,
1:20
and I reached in there
1:21
and I happened to get one from our coop.
1:25
You would not have, you'd have been blown away
1:29
by the difference in color.
1:30
- [Eddie] Yeah, the yolk is very vibrant.
1:32
- One was a pale yellow,
1:33
and then the yolk out of our coop was like that color.
1:39
All the difference in the world.
1:44
All right, so I'm done.
1:45
I do my eggs, lemon zest
1:48
and lemon juice, little corn starch, little cinnamon.
1:53
And then I'm gonna let this sit
1:57
for about 30 minutes.
2:01
All right, so there's my lemon juice,
2:12
and that's gonna keep those strawberries nice and fresh.
2:16
I need to reach in here and get me something to stir with.
2:25
Can you imagine this on top of biscuits?
2:28
(laughs) Ssounds delicious.
2:32
All right, so here's my corn starch.
2:34
I'm just gonna sprinkle that
2:39
over our strawberries
2:40
and that's gonna make it kind of nice and thick.
2:43
I've got a quarter of a teaspoon of kosher salt
2:47
and looks like about a teaspoon of cinnamon.
2:53
So I'm just gonna mix this up real good.
2:55
And I'm gonna set it aside for about 30 minutes
2:57
and then we're going to come back and put this together.
3:02
You heard me say biscuits in the recipe, so
3:08
we going to be doing our trick
3:11
and adding this to the biscuits.
3:15
So there we go, 30 minutes.
3:17
Okay, y'all we're coming back
3:19
to our strawberry biscuit casserole
3:22
and we have let our strawberries sit in the
3:27
lemon juice, the lemon zest, the sugar, corn starch,
3:31
and a couple of eggs.
3:33
So I'm gonna take my casserole dish
3:36
and it reminds us to bake this in about a three quarter.
3:39
I don't know what this one is,
3:40
but it'll be all right.
3:44
Now, it has been so long since I made this recipe.
3:52
it would've been maybe when I first started on tv.
3:56
But anyway, it's been a long time
3:58
and to me this just doesn't look like it has enough liquid.
4:02
So you told what I'm gonna do.
4:04
I don't have any orange juice,
4:05
but I've got, I've got one of those clear drinks,
4:11
so I'm just going to do that to it.
4:13
Why'd I add maybe a fourth a cup, a third of a cup?
4:16
And I may ruin it, but that's all right.
4:19
I'm just going by my gut and you know I got plenty of gut.
4:26
All right, now we are using Pillsbury Grand Biscuits
4:29
and we are just cutting them in half
4:38
we're gonna get this ready.
4:48
Okay, couldn't remember what came, what came first.
4:54
I'm gonna stick my finger and then see if that,
5:02
All right, so I'm gonna arrange half my biscuits
5:08
and like I said, we saved the paper
5:11
so you could see, let's see what's in here.
5:15
Is that, yeah, eight, an eight count of Pillsbury Grands.
5:44
Okay, I think that's half one,
5:46
two, three, four, five, six, seven.
5:49
No, that'll make eight.
5:52
So that'll be one can.
5:55
And you can see how that fits down
5:56
in my casserole very nicely.
6:01
All right, so I'm gonna ladle
6:07
half of my strawberry mixture.
6:13
And another thing, you know, like when you're dealing
6:16
with bread puddings and things like that,
6:18
I don't like a real dry bread pudding.
6:31
Mm mm mm, what y'all think,
6:36
Okay, here we come with the other can of biscuits,
6:41
and you can see how I'm laying them, just kind
6:47
like when you go to bed at night
6:49
and you're sleeping with somebody, hey, you tuck up to 'em.
6:52
That's the way these biscuits are headed.
7:05
So we'll know pretty quickly if I was
7:09
wrong in adding that Sprite.
7:15
But if you don't have a Sprite
7:16
and you feel like me, you feel like you need
7:27
you can use a orange juice or lemonade, anything.
7:38
This looks pretty good, doesn't it?
7:41
Hot strawberry shortcake.
7:46
We used to have a cheer
7:47
that said something about shortcakes.
7:49
I can't remember it though.
7:51
That's been way too long.
7:54
Strawberry shortcake, huckleberry pie, V-I-C-T-O-R-Y.
7:59
Victory, victory, Albany High,
8:04
but we did a little bit more movement back then.
8:15
All right, so now I'm kind of just getting the strawberries
8:19
and I'm going to leave some of that juice there.
8:24
And as it's cooking, if it looks
8:29
dry, I can pour the rest of that on there.
8:32
All right, now we're gonna top this with turbanado sugar,
8:35
which is, looks like a big grained brown sugar.
8:39
Now that's how much the recipe called for,
8:42
and this is how much Paula's putting,
8:46
that wasn't even enough to cover the top.
8:58
I know there ain't no way you gonna use
8:59
that little bit of sugar.
9:03
So I brought you the box.
9:09
Yum, this looks delicious.
9:12
And y'all remember that I love y'all berry much.
9:19
All right, in the oven, about 25 or 30 minutes, 350.
9:23
Y'all look at our strawberry casserole.
9:28
I think this casserole dish I used was a two quart
9:33
and I needed a three quart.
9:36
So I don't know yet if I made a mistake adding
9:43
but we'll soon find out when I spoon it up.
9:50
Just a little topper.
9:55
Doesn't that look delicious?
9:57
Okay, here comes the unveiling.
10:13
Theresa, come see what you think.
10:19
I think that I made a good call.
10:22
- [Theresa] Oh yeah.
10:23
See what you think. - Well, I can look at it.
10:25
I can look at that. - Yeah.
10:25
Yeah. - And so if it had
10:27
less juice in it, it'd be a problem.
10:28
- Yeah, I think so too.
10:30
So what would you say
10:32
I put, maybe a fourth of a cup of Sprite?
10:35
Not much at all, but just enough to make me feel better.
10:41
Uh oh, whose phone is that.
10:48
Would you answer it, please?
10:52
This is gonna be so hot.
10:54
- [Theresa] She's on, she's on camera right now.
11:04
Okay, thanks, bye. - Delicious.
11:09
