- Y'all, I'm gonna share with y'all today a recipe
0:04
for one of the most delicious,
0:06
easy coffee cakes you'll ever taste.
0:09
And a friend of mine that owned
0:12
Granite Steps Bed and Breakfast, it was next door to me,
0:19
I lived on Abercorn and the Granite Steps
0:22
was to my right-hand side.
0:24
And she shared this recipe with me
0:30
because she did things like this
0:32
to serve her guest in the morning.
0:34
You know, brunch-like things.
0:36
You're not going to believe how easy and delicious it is.
0:39
So it's easy blueberry skillet coffee cake.
0:44
I've got my cast iron skillet.
0:47
I'm gonna put my butter
0:51
and my brown sugar in that skillet.
0:54
And we going to just let it cook
0:56
just for a couple of minutes until the sugar dissolves.
1:00
And Theresa has the easy part, canned biscuits.
1:08
And I've got butter, flour,
1:20
And we are making the streusel topping.
1:25
And I've got sliced almonds.
1:30
And we're just gonna do this
1:35
for just a, till we got kind of chunky chunks.
1:41
(food processor whirring)
1:42
I think that's perfect
1:43
because I like to be able to taste my nuts.
1:47
You know, I don't want 'em ground so fine
1:51
that you don't know a nut's in there,
1:54
but you can do it any way you choose.
1:57
We got our streusel ready, just that quick.
2:01
Now, we're gonna come over here
2:02
and we're gonna turn on this butter and brown sugar,
2:09
and we're going to let the butter melt
2:12
and the brown sugar dissolve.
2:15
Then we're gonna put our biscuits right on top of that.
2:20
And then we are going to add our blueberries
2:28
and our streusel topping.
2:30
So this won't take but a second.
2:32
Okay, so our brown sugar is dissolving,
2:39
and we want that evenly distributed in our pan
2:45
because that's what we gonna put our biscuits on,
2:52
and we want everybody to have a fair chance
2:56
at some butter and brown sugar.
3:05
Okie-dokie, so we just gonna put these around.
3:24
It calls for, how many does it call for?
3:27
Eight, 10 or 12? I can't remember.
3:29
- [Theresa] It really only calls for a 12-ounce can.
3:32
- 12 ounce. - So it doesn't really
3:42
It's been so long since I made these,
3:44
and I don't know why, y'all.
3:48
So we're gonna just scatter all these blueberries
3:52
and we're using fresh blueberries.
3:54
But you know, you can use a canned blueberry
3:57
or frozen blueberry will work good as well.
4:03
But it's always nice to use fresh if you can get it.
4:11
- [Theresa] My father-in-law has fresh blueberries
4:13
and I need to go out and pick some.
4:17
When we were living at the other house,
4:19
we used to plant blueberry plants for Jack
4:25
because he loved coming over and picking the blueberries.
4:29
Did I say blueberries or blackberries?
4:30
- [Theresa] You said blueberries.
4:37
- 'Cause they're easy to pick, it's not like a blackberry.
4:42
I'm too scared to pick blackberries
4:44
'cause of them snakes wound around there
4:47
to catch those birds.
4:50
You know, when they come in to get 'em a berry,
4:54
they get more than a berry.
5:00
I'm just going to sprinkle a little butter on top
5:04
since it has some on the bottom.
5:06
We don't wanna cheat nobody out of no butter, do we?
5:10
Okay, I should have beat this up a little bit more,
5:13
but I'm not gonna worry about it.
5:16
So we gonna put our strudel on top of our biscuits.
5:31
That was a beautiful B&B.
5:37
Does anybody know what that building's being used for now?
5:42
- [Paula] The Gastonian?
5:44
- [Cameraman] It may have been turned back into a house.
5:46
- [Paula] Oh, really?
5:48
- [Cameraman] But it was Granite Steps, wasn't it?
5:50
- [Paula] Granite Steps.
5:51
What did I call it, The Gastonian?
5:52
- Yeah. - There is a Gastonian
6:02
All right, all right, all right.
6:05
So in the oven this goes,
6:09
and this is what it's gonna look like
6:13
when we take it out of the oven.
6:14
And you're gonna want to serve it right out of the pan
6:16
that you've cooked it in.
6:18
And if there's any way you can get your timing right,
6:23
try to serve these warm.
6:27
People will love them.
6:30
I'm choosing which one I want, y'all.
6:34
I think I'm going to take that tiny one.
6:40
Go take the smallest one.
6:45
See where that butter was, and that brown sugar.
7:05
Just to make it a little bit more fattening,
7:08
I'd probably take some powdered sugar
7:10
along with a little milk and make that icing
7:13
like you do for cinnamon rolls.
7:21
And then I won't have to eat
7:22
anything the rest of the weekend
7:25
'cause I used all my calories in one coffee cake.
7:36
Mm, love and best dishes from Granite.
7:43
It was Granite Steps,
7:44
wasn't it? - Yeah, mm-hm.
7:48
