- Hey everybody, if you're like me,
0:02
you eat lots of eggs and we definitely do at my house.
0:05
I've got a family of five,
0:06
so we go through flats of eggs so quickly.
0:10
for not having a chicken house.
0:16
We should have fresh eggs at our house.
0:17
We go through 'em like water.
0:19
So, I'm gonna make an omelet today. Egg white omelet.
0:22
So this is like a very, very healthy,
0:24
kind of a blast from the past.
0:26
This is an old recipe of mine.
0:28
Onion, tomato, spinach, and egg whites.
0:33
and just really healthy and good for you.
0:35
So, I always put the skillet on the stove
0:39
and let it heat up to receive the eggs.
0:41
So, five minutes or so to let the skillet get nice and warm.
0:45
And I've done that today.
0:47
I've got a little bit of oil in there. I'm using olive oil.
0:50
At our house, we use a lot of avocado oil,
0:55
but I'm at mama's house and she doesn't have any.
0:58
So, you know, that's okay.
1:01
I'm gonna start out by sauteing my onions just a bit
1:07
and to that, I'll add my tomato and spinach.
1:10
A good tip when you're making omelets,
1:12
lots of people cook the egg first
1:16
and then add the ingredients of the omelet later
1:22
What I like to do is prepare everything in the skillet.
1:26
Go ahead and cook the vegetables or the meats
1:29
or whatever you have a little bit first,
1:34
and then just pour my eggs right on top.
1:37
I've always done it that way and it seems to just come out,
1:41
everything's just better.
1:44
It's easier. Less mess.
1:46
Takes a little bit of the pressure off
1:53
from skillet to skillet.
2:03
I'll get my ingredients going.
2:06
Get a little translucence on the onions,
2:13
and get these veggies nice and warm.
2:18
Okay, everything's really looking good here in our skillet.
2:21
We've got the egg whites
2:22
and we did this the old-fashioned way.
2:23
These are actually separated eggs from egg whites.
2:26
They do make just the egg whites
2:28
that you can get at your local grocery store.
2:30
So, you'll find 'em in a carton right next to your eggs,
2:33
but these are divided egg whites and we've whisked them.
2:36
And I always salt my eggs a little bit before I cook 'em.
2:38
So, even when I do like just scrambled eggs at the house,
2:41
I always crack the eggs into the bowl,
2:43
salt them, and then whisk that in.
2:45
So, just a little tip for you.
2:47
I've got all my ingredients
2:48
spread pretty evenly over the bottom of the pan here.
2:56
Go ahead and add my egg whites,
2:58
see if I can get a nice consistent omelet here
3:01
without sticking it to the pan.
3:20
you have to be a little bit more careful
3:21
'cause boy, will they stick.
3:24
And it looks like we're gonna be okay here.
3:28
Yeah, it's already starting to,
3:30
you can see it's already starting to come together.
3:33
Just wanna make sure that it doesn't,
3:40
So, I'm gonna give that just a minute
3:41
to sort of start to come together.
3:43
Why don't we take a break and we'll come right back.
3:45
- [Paula] Hey, Lulu. What do you want?
3:47
- [Bobby] Oh, you know what she wants.
3:48
- [Paula] You want a treat? - [Bobby] Food, baby.
3:50
Egg whites are tough to cook.
3:52
They can stick, they can be really fragile. They can break.
3:55
All sorts of things can happen with 'em
3:57
when you don't have those yolks in there.
3:59
But I think we've got the makings
4:00
of a nice-looking omelet here as long as it doesn't stick
4:04
and if it's not the color of coal underneath.
4:09
So, let's cross our fingers.
4:11
Hope that this will slide right out.
4:19
We didn't add any cheese,
4:20
but if you wanted to,
4:21
you could at this point, right in the center.
4:30
- That is a really nice-looking omelet.
4:43
What kind of trick was that?
4:55
if you like egg white omelets and I do,
4:59
today's your lucky day. (clicks tongue)
5:01
You should make this at home. Beautiful.
5:03
It is egg whites, spinach, tomatoes...
5:08
- [Paula] Onion. - And onion. (laughs)
5:11
Sorry, I got distracted.
5:12
And it looks beautiful,
5:13
so make your egg white omelets at home.
5:15
And again, separate 'em.
5:17
Instead of buying the,
5:18
instead of the cheat code
5:19
of buying the egg whites in the box,
5:23
you can separate 'em at home and make beautiful omelets.
5:30
Hey, y'all, it's Paula Deen.
