- Y'all we stepping back in time today.
0:03
This is one of those perfect meals that you can cook
0:08
at the drop of a hat
0:10
because there's a very good chance
0:12
that you gon' have this in your pantry
0:15
and to me, it's very retro.
0:17
We would just talk and they say,
0:18
"Yeah, welcome to the 70s."
0:19
Eddie and Theresa said that, I said,
0:21
"Oh no, the 60s and the 50s,"
0:26
because I remember my grandmother Paula cooking these
0:29
and mama, had served this a lot
0:32
because it's a good nutritious meal
0:37
and it doesn't break the bank.
0:40
Now this is a can of salmon and it set to drain well.
0:45
So I treat it just like I do tuna fish.
0:50
I don't squeeze my tuna fish to get all the juice out of it
0:56
so it won't be watery.
1:02
This smells very good and you know what?
1:06
There is nothing,
1:10
any better than a salmon croquette
1:13
along with a bowl of hot brits for breakfast.
1:18
God knows and I got a call, my sweet Nita,
1:22
Nita Jones.
1:25
- [Theresa] A.K.A.
1:26
- A.K.A Jelly Ro was with us for how many years, Theresa?
1:35
Over 20. - [Theresa] Well, I'm only 18
1:36
and she's got to be like,
1:38
she had to have been 21 or 22.
1:39
- Yeah, long time with us
1:42
and I love her and she loves me and we keep in contact
1:48
but I need to call her 'cause
1:50
I haven't spoken with her since the quarantine.
1:53
So I've got to do that.
1:54
Eddie, remind me to try to find Nita today
1:58
and make sure she's all right and don't need anything.
2:01
But I tell you what, that woman made the best croquette
2:04
you have ever put in your mouth
2:06
and you know, I don't know.
2:08
She would make it at breakfast time
2:10
when we were cooking lunch,
2:13
she cooked those salmon croquettes
2:15
and they were ever more good.
2:19
I'm gon' ask her today when I talk to her,
2:22
how she made them croquettes so good.
2:26
(laughs)
2:27
But I will tell you this about Nita,
2:30
'cause she and I went round and round.
2:33
When she first joined the team, she said,
2:37
"I gotta have some accent."
2:39
(laughs)
2:40
I said, "The only accent, girl you gon' to get
2:42
"is what's coming outta your mouth."
2:44
(laughs)
2:46
I said, "Honey, that particular seasoning
2:53
"is not real good for us,"
2:55
and a lot of people actually have allergies.
2:59
I know Cookie would get so sick if she accidentally
3:03
ate something-- - [Theresa] 'Cause of the MSG.
3:05
- Yes, because of the MSG and oh,
3:09
it made Nita so mad with me
3:13
but I said, "Honey, I can't help it.
3:14
"I gotta watch out for everybody."
3:16
All right now we've got,
3:18
how much breadcrumbs did we put in here?
3:21
- [Theresa] A half a cup.
3:22
- A half a cup.
3:24
Okay, well you have that half
3:30
and because we're saving some, you know what?
3:36
Now see, I am not opposed to the bones,
3:41
the little bones that are in salmon croquettes.
3:44
I'm just not opposed to 'em at all
3:46
'cause they're so soft and, huh, you want what?
3:50
- [Theresa] I'm going to check on something out here.
3:53
- Okay, she's going to see a man about a dog, I bet.
3:56
(laughs)
3:57
You think, Eddie?
3:59
I wonder if anybody knows what that means.
4:03
Going to check a man about a dog.
4:08
Alright, so I'm gon' put a little more.
4:10
All right, so hopefully that one egg
4:16
will cause it to bind together real good.
4:20
I'm gon' wash my hands.
4:22
All right, so actually I'm going to,
4:30
the recipe calls for Italian bread crumbs
4:36
but I'm gonna try, because I love the crunchiness,
4:43
I'm gonna try the panko on that
4:48
and I need just a little something, something
4:57
to sit this on.
4:59
I don't know where the blade went on this thing.
5:03
- [Theresa] I though it was just me.
5:04
I had the same problem earlier, I though it was me.
5:06
- I know, what's up?
5:09
Where did that blade go or was there ever a blade on it?
5:12
- [Theresa] I don't think so.
5:15
- Alright, so here we go.
5:20
Hope I didn't squeeze too much juice out of 'em,
5:24
I could have.
5:29
Now you can make them any size you want to.
5:32
I kinda like 'em little small,
5:34
that way you can feel like you're getting a lot
5:36
'cause you can have two, right?
5:42
Oo, and I am going to love the crunch.
5:45
You know what?
5:47
Before I did that, I meant to spray 'em
5:51
because this is one of those foods
5:54
that you definitely need to spray.
5:58
A lot of foods you don't need to but these we do.
6:03
Okay, pretty, pretty.
6:09
What y'all think?
6:12
I'm gon' to add those breadcrumbs to that.
6:17
What'd you think, Max?
6:19
(laughs) Look at max.
6:21
He thinks it sounds very good.
6:29
These are very elementary, you can...
6:34
Oh darn it, I forgot to spray it again.
6:41
You can take these so many different ways
6:46
if you want to, if you gotta mind to.
6:53
I think I put more onions in 'em.
7:00
My mother, well and course needed to,
7:08
Nina might have put hers in the deep fryer,
7:12
there at the restaurant
7:14
but mama always just fried hers in a skillet.
7:17
How about your mama?
7:19
- [Theresa] Fried 'em in a skillet.
7:21
- Eddie, did your mama make these?
7:22
- [Eddie] No, I don't really remember having--
7:26
- [Theresa] He didnt eat 'em
7:27
but he doesn't need a budget meal in college.
7:28
(laughs)
7:32
- [Theresa] I'm kidding.
7:33
- Theresa said Eddie was rich.
7:35
He didn't need a budget meal.
7:36
- [Theresa] And I have no idea why I said that.
7:38
If you haven't had salmon food,
7:39
that's exactly what makes me think.
7:41
- He's told me that he grew up in a tremendously big house.
7:45
- [Theresa] I was gonna say you have a lot of siblings,
7:47
don't you? - He's one of nine.
7:49
- [Theresa] Oh yeah, your mama
7:50
must've made salmon croquettes
7:52
and you just don't remember.
7:53
- [Eddie] No, I don't remember having 'em.
8:00
- What did y'all eat?
8:01
- [Theresa] You had to feed nine and you had to buy,
8:03
what would that be?
8:04
Almost five or six cans of salmon,
8:05
it ain't as cheap anymore.
8:08
- Did your mother ever fry chicken?
8:10
- [Eddie] No, it's funny the first time
8:12
I ever had fried chicken,
8:15
I think I was a senior in high school.
8:17
I finally had KFC once
8:20
but really fried chicken wasn't until I moved down here.
8:23
- [Theresa] But did your parents feed,
8:24
your mother feed you?
8:25
- [Eddie] We had, you know it's funny.
8:26
My father really wasn't a casserole person
8:30
so we never had casseroles.
8:34
We were a--
8:35
- [Theresa] Is it steak and potatoes?
8:36
- [Eddie] We were a steak and potato family, yes.
8:38
- And they had a lot of lamb too, I think.
8:40
I heard Eddie talk about lamb.
8:42
- [Eddie] Yes, we loved lamb.
8:43
- That's call red chain.
8:45
(laughs)
8:47
I remember one time I begged my mama to buy some lamb chops.
8:51
- [Theresa] That was a big day in our house.
8:52
- And they were so awful.
8:54
She had put 'em in the trash.
8:56
She was so mad with me.
8:57
She said, "Do you know how much those cost me?"
9:02
- [Theresa] Now my mama liked lamb chop.
9:04
That was a special occasion.
9:07
- Never, alright.
9:08
So what else besides, Mr. Rich Breaches.
9:13
(laughs)
9:17
- [Eddie] You would have my parents
9:18
just dying laughing right now.
9:20
(laughs)
9:22
- Filet mignon.
9:23
Did y'all eat a lot of filet mignon?
9:24
Oh, I'll tell you what they ate a lot off, lobster.
9:28
(laughs)
9:29
- [Theresa] That's true 'cause that's where you lived.
9:31
Eddie, we're just having fun with you.
9:33
I'm sure your mom made spaghetti.
9:35
- [Eddie] Yes, spaghetti.
9:37
You know that's funny.
9:38
- Doesn't sound like she made it much.
9:40
- [Theresa] I'm trying to help him out here
9:41
and you're working. (laughs)
9:42
- [Eddie] That was usually when my parents
9:46
went out to dinner.
9:48
They made the goulash
9:50
but we called it American chop suey.
9:52
- American chop suey?
9:54
- [Eddie] Yeah, that's a new England thing, I think.
9:57
- All right, so Eddie came from New Hampshire, y'all.
10:04
I can't never remember the name, Madison?
10:05
- [Eddie] Manchester.
10:06
- Manchester, I knew it started with a M.
10:08
Manchester, New Hampshire.
10:12
- [Eddie] New Hampshire.
10:18
- I never met his dad but he's got a wonderful mama.
10:21
I've met some of his brothers and sisters.
10:27
I think I've met two sisters maybe and a brother?
10:30
- [Eddie] Yes.
10:32
- Nice family but there was a lot of 'em.
10:35
They were like the Brady Bunch.
10:39
Eddie's father's first wife passed away.
10:43
She was sick and she passed away
10:47
and his mother had been in the same position.
10:50
So they just said, "Well, let's just mix it all
10:53
"into one bowl."
10:54
- [Theresa] Oh, like in the Brady Bunch.
10:55
- That's what I just said.
10:56
I thought that was one I just said.
10:58
- [Theresa] Well, I think you might have.
10:59
(laughs)
11:01
- [Eddie] Well actually my dad...
11:04
- Your mother had never been married.
11:06
- [Eddie] No, no, yeah.
11:08
- That's right, I forgot.
11:08
- [Eddie] We all have the same father.
11:10
- I forgot, your mother had never been married.
11:12
She met your dad who already had four children.
11:17
- [Eddie] Five children.
11:18
- Five children, okay,
11:19
and then together they had four, right?
11:23
- [Theresa] That's an impressive lady.
11:25
- I know.
11:26
- [Theresa] She takes in five children under her wing
11:28
and makes them her own.
11:29
- Yes and Eddie considers them just like I did baba,
11:36
a full brother. - [Theresa] I just love how
11:38
we've taken a trip down memory lane
11:40
along with our salmon croquettes.
11:42
(laughs) - [Eddie] That I never had.
11:44
(laughs)
11:46
- That he never had.
11:52
Oh, I was so happy, y'all
11:54
when they start identifying who they are.
11:58
It's great so you know not to pick it up.
12:02
So you just ring away.
12:04
- [Eddie] Okay, let's take a little break.
12:05
- Okay, we gon' take a little break while I load.
12:08
All right, we're gonna cook these for 10 minutes, y'all.
12:12
No, five minutes and then I'm gon' turn 'em
12:14
and cook 'em for five more.
12:18
Okay everybody, they've cooked for five minutes.
12:22
Now, I'm gonna spray them
12:25
and then I'm going to flip 'em over
12:29
and they really look very tasty
12:34
and not gon' to be ladend in grease.
12:36
So like I said, if you want some things to brown,
12:39
you really do need to spray 'em
12:41
but it's not often that I feel the need to use that spray.
12:46
Five more minutes. (cooker whirring)
12:54
And come on over here and while that five minutes,
12:57
while we got five minutes, y'all
13:00
I'm gonna just make a quick lemon dill sauce.
13:08
Now I don't remember my mother actually making a sauce.
13:13
I know som folks like a chipotle or (mumbles).
13:19
Like I said, I'm gon' make just a very small amount.
13:26
So I'm gonna add a little
13:33
lemon pepper and a little dill.
13:39
I wish I had some fresh dill but I do not.
13:43
We've got to get some for them,
13:45
our little things out here, Eddie.
13:50
See what kinda luck we can have.
13:57
Okay, now I'm gonna just give it a squirt of lemon.
14:09
I'm coming. (laughs)
14:16
I'mma coming, y'all.
14:27
And this is gonna be all in the world that we need.
14:38
I'm running that through my fingers, y'all
14:44
so that I don't get any seeds.
14:50
All right, I'm gon' give it a taste and see what we got.
15:03
I think it's very good.
15:10
Dried herbs are not as strong, it sounds crazy.
15:17
Dried herbs are stronger.
15:19
Yo, hush! (mumbles)
15:31
Dried herbs are stronger than fresh herbs, y'all.
15:35
So if we were using fresh, we wouldn't have to use more,
15:38
almost double what it called for it if we were using dry.
15:44
So that's what we're gonna do.
15:49
That dill makes it real pretty.
15:55
(cooker whirring)
16:06
I don't wanna think my knives need sharpening.
16:22
Leaves are not pretty.
16:39
Pretty, pretty, pretty.
16:43
Okay, has it been five minutes, Eddie?
16:44
Does it look like it's fixed in a bing?
16:52
Lemme just look, look how good those look.
16:55
I'm actually gon' spray 'em again.
17:05
Pick back up and I'm using a canola spray, y'all
17:08
which I think that's as healthy as anything, don't you?
17:13
Do y'all know canola, all?
17:16
Ain't that one to healthiest?
17:18
That peanut oil, believe it or not,
17:21
peanut oil is right up there with healthy.
17:25
- [Theresa] The extra virgin olive oil.
17:27
- Olive oil, yeah.
17:31
I don't care for extra virgin olive oil.
17:33
To me, it's way too strong, I use the light.
17:40
Okay, what do you think, has it been five minutes?
17:44
- [Theresa] I say they're done.
17:45
- [Eddie] Yeah, we've been filming for six so.
17:46
- I'll say they're done too, yeah.
17:51
Okay, so here we go.
18:02
Yummy, yum.
18:05
And I like odd numbers.
18:10
So I'm just gonna do the three.
18:17
It looks very good and what did that cost us?
18:22
Maybe a couple of bucks.
18:28
Theresa, do you know how much that cost?
18:30
- [Theresa] Oh. - The salmon?
18:33
- [Theresa] Maybe $2 for the can.
18:35
- Yeah, so it's a very economical meal
18:39
and one that is, it's got a lot of health benefits
18:44
for your family too. - Oh, salmon's great for you.
18:46
- So I'm gonna bite into it and see
18:51
if they're as good as Nita's, which I know they won't be.
18:57
Nobody could make a salmon croquette like Nita
19:01
but here's to ya, Nita, I'm trying.
19:04
(chuckles)
19:05
That thing's hot as a firecracker, I see it just steaming.
19:11
Now I do like the crunch that we gave it
19:15
with the panko, yeah. - [Eddie] Panko.
19:19
- Hear that?
19:22
Okay, I'm gon' try.
19:23
- [Theresa] Panko wasn't existing in the stores
19:26
back in that day.
19:40
- I think it's delicious.
19:42
- [Theresa] Is it as good as Nita's?
19:44
- Well no. (laughs)
19:46
- [Theresa] She probably puts more onion
19:48
and some garlic in hers.
19:50
- Yeah but this, it's still really good, come taste it.
19:55
You know what I would think I would almost put in it
19:58
to make it a little more moist?
20:03
I think I would put some mayonnaise in it.
20:10
- [Theresa] I thought we put mayonnaise in everything.
20:12
- I know, take that one bite
20:16
and get just some lemon sauce.
20:19
Get you some sauce, girl.
20:20
- Hot double dippin'.
20:28
Oh, I think they're good.
20:32
No offense to Nita 'cause I love her, yum.
20:41
- I would just like to see 'em a little bit more moist
20:45
and to get that, I would spoon in
20:50
a third of a cup of mayonnaise when I was mixing 'em.
20:54
- [Theresa] That's a very good healthy version.
20:56
- This is a very good healthy version.
20:59
Bon Appetit, y'all. (laughs)
