- Hey y'all.
0:01
I'm gonna try to make a long story short, short.
0:08
This is for Mother's Day.
0:10
I always, when we were in our first restaurant,
0:15
always served tomato pie on our buffet
0:19
for all the mothers because they loved it.
0:21
And it's so funny, you know, how things just work out.
0:27
We got a text from a friend of ours named Jason.
0:33
Jason, help me think of Jason's last name, Eddie.
0:38
- [Eddie] LaRue. - LaRue.
0:42
Jason LaRue, he is a dedicated,
0:44
dedicated follower of ours.
0:48
So Eddie went to Davis Produce,
0:50
you know my friend Sherry and Randy Davis
0:53
that owns Davis Produce?
0:56
The best vegetables.
0:59
Well, Eddie was in there yesterday,
1:01
and Sherry said,
1:02
"I wanna send Paula some strawberry onions."
1:07
And Jason had just requested that we make,
1:11
that I make a dish with strawberry onions.
1:14
And I thought, well I, you know what?
1:16
How, what am I going to do there?
1:20
Well, Eddie couldn't believe when Sherry said,
1:27
take these strawberry tomatoes home to,
1:30
strawberry onions.
1:31
I'm having trouble talking today.
1:34
Take these to Paula.
1:38
And she said, I want to tell you how to,
1:40
a dish to make with them.
1:42
She said, I want her to make it
1:44
just like she makes her tomato pie, only use these onions.
1:48
So that's what I'm doing and I've,
1:52
oh gosh, it smells so good.
1:53
And I don't know where they get the name strawberry onions.
1:58
'Cause.
1:59
- [Eddie] I guess they're just a sweet, sweet onion.
2:02
- I don't know.
2:03
They don't,
2:04
they don't smell like strawberries.
2:08
Ooh, I cut that one a little thick.
2:10
So I'm just gonna grill these
2:13
on top of the grill with a little butter,
2:17
and I'm using some clarified butter.
2:20
So it's not going to be full of water,
2:26
but you only bake this pie for about 15 to 20 minutes.
2:31
There we go.
2:32
For 15 to 20 minutes
2:34
and we are putting it in a pre-baked pie shell.
2:38
And there's lots of different pie shells you can use.
2:40
You can use a puff pastry pie shell
2:43
or the refrigerated pie shells that you roll out
2:47
or one that comes in the little aluminum pan.
2:51
So I'm not too picky about that because
2:59
the onion is the star of this show.
3:04
So I'm making a recipe without a recipe, y'all.
3:07
Thank you, Sherry.
3:09
I just love Sherry and Randy and the crew that they have.
3:14
They are,
3:16
they're just great, great people.
3:20
Salt of the earth people.
3:22
And I forgot to ask Sherry
3:25
how thick she suggests cutting these onions.
3:28
So I've got some thick as can be
3:32
and then some that's not.
3:35
So anyway, like I said, you only cook this,
3:37
bake this pie for about 15 to 20 minutes.
3:41
So you've got to,
3:42
you've got to cook these onions somewhat
3:47
because they would never get done in just like 20 minutes.
3:52
All right, I've taken some up.
3:54
It's just like
3:57
all you wanna do is just kind of caramelize 'em
3:59
a little bit.
4:02
And as much as I would like for them
4:04
to stay in their big rings, they're not.
4:12
See, they just want to come apart.
4:14
But that's all right.
4:17
That's all right.
4:19
So we're ready to go.
4:20
I think I've got enough onions
4:21
to do a couple of layers.
4:28
Ouchie.
4:30
I'm gonna have to do some renegotiating here, I think.
4:47
Oh.
4:49
Yum, I may have to cook some more onion, Ed.
4:57
Yeah, I'm probably gonna have to cook a little bit more,
5:01
but that's all right.
5:04
It's not a problem.
5:06
All right, so I'm gonna do a little salt.
5:12
A little pepper.
5:13
Yeah, I got pepper.
5:18
I'm gonna take my cup of mayonnaise now,
5:22
and I'm gonna mix it with some Parmesan cheese,
5:25
just some grated Parmesan cheese.
5:28
I may have to increase the mayonnaise.
5:33
Where did I put my Parmesan cheese?
5:35
I can't see it for looking.
5:37
- [Eddie] It's not here.
5:38
- What'd I do with it?
5:40
Oh (Paula laughs).
5:42
Wasn't expecting that.
5:44
Okay, so I'm just gonna put
5:48
a couple of nice tablespoons
5:51
of the grated Parmesan cheese.
6:03
All right, let's see.
6:05
Now I'm gonna put,
6:07
I've got two different kinds of cheeses here.
6:09
So you know, you do your cheeses, whatever you like,
6:13
whatever your favorite cheese is.
6:15
But I'm using a white and a yellow cheddar.
6:22
Fresh sliced mozzarella would be delicious in this too,
6:25
Eddie, wouldn't it?
6:27
So listen, I'm just doing like Sherry did to me,
6:32
kind of gave me the gist of it.
6:34
But I want y'all to take this,
6:39
these instructions that have been passed on to me
6:43
concerning the strawberry onions.
6:48
And I want y'all to let me know how you did this
6:53
because there's so many ways you could take this,
6:56
so many ways.
7:00
Okay.
7:03
Now I'm gonna put a few basil leaves on it.
7:10
And those basil leaves, they really, you know, kick.
7:16
So now we're gonna,
7:21
yeah, I'm gonna have to have more mayonnaise.
7:28
'Cause I got to frost the top of this pie too.
7:34
Okay, so I'm just going to try to spread
7:36
that out the best I can.
7:44
It's gonna melt all down in there anyway.
7:49
You know, you know what I'm saying, Burn?
7:54
I'm not gonna have to cook another onion, Eddie.
7:57
- [Eddie] Yeah, I was gonna say,
7:59
it looks like you have plenty.
8:00
- Plenty.
8:05
Plenty, plenty, plenty.
8:12
But I usually don't put mayonnaise.
8:16
I usually don't layer it,
8:18
but it seems like Sherry told me to layer,
8:23
you know, do it in a couple of layers.
8:27
So therefore, I would need more mayonnaise.
8:32
Now for the top layer.
8:38
I'm going to mix
8:42
my fresh grated cheese with that.
8:45
I did Parmesan in the first,
8:48
but now I'm gonna do
8:51
the cheddar now for the top of it.
8:58
It's gonna be good and cheesy.
9:04
Just mix that in.
9:09
Then we're going to frost that pie
9:11
with mayonnaise and cheese.
9:13
I can't think of a better combination.
9:22
Oh my gosh, I just think of so many things.
9:26
I've got a piece of a avocado in there.
9:30
I think top it with a piece of wonderful, fresh,
9:34
ripe avocado would be delicious,
9:39
you know, to serve,
9:41
to garnish that with some avocado.
9:46
Sounds wonderful.
9:48
All right, another little bit of salt, not much.
9:54
A little bit of pepper, not much.
9:56
Y'all have noticed I pre-baked my shell.
10:02
'Cause about 20 minutes is all it's gonna take for this.
10:15
Yum, yum.
10:18
Okay.
10:20
- [Eddie] It's gonna be good for a Mother's day brunch.
10:22
- Oh listen, the mothers loved this, Eddie.
10:27
They just loved it.
10:32
But I had to, I couldn't make it in the form of a pie
10:36
'cause it was on the buffet.
10:37
So I did like puff pastry, you know,
10:41
for the bottom part of the pan.
10:50
Okay.
10:54
And now I've got
10:57
one other thing I think I'd like to do.
11:04
And I think I'd like to cut some green onion tops
11:08
and put on it,
11:10
just in case we don't have enough onions.
11:13
(Paula laughs)
11:15
You know?
11:17
But the onion, the green makes it pretty.
11:30
All right, now I'm gonna come in
11:35
with some fresh coarse ground pepper
11:42
because it's pretty on it.
11:46
Okay, in the oven, 350 degrees for about 20 minutes.
11:51
Just all you need for that cheese to melt
11:55
and your onions to get hot again.
11:58
Look at this beautiful strawberry onion pie, y'all.
12:03
I've let it cool a little bit
12:06
'cause I have a feeling it's probably gonna be hard to cut.
12:10
And you know, when I'm using aluminum pie shells,
12:15
I always come in
12:16
and nip it with my scissors.
12:21
If I can see it to nip it.
12:28
There.
12:32
So you'll wanna nip it
12:36
for the size of your slice of pie.
12:43
All right, so here we go.
12:44
I cut it right there.
12:52
And you know my friend Sherry Davis,
12:56
where did I, where did I nip that other piece?
12:59
Oh, right there, okay.
13:02
My friend Sherry Davis from Davis Produce
13:07
there on Highway 80,
13:10
on the way to the beach.
13:13
So if y'all are going to the beach,
13:17
make sure you stop by.
13:19
Oh look at this,
13:21
and pick up some fresh vegetables.
13:26
Because they have got some good ones.
13:30
You know, now I didn't ask her
13:31
how thick she, to cut this.
13:43
And seems like she told me to just cut,
13:50
like in round slices, circles.
13:53
But I'm almost thinking the next time I make it.
13:59
So good.
14:06
The next thing time I make it,
14:07
I think I'm gonna dice the onions real big
14:10
because it would cut a lot, lot easier.
14:14
But it's delicious.
14:15
Thank you Sherry Davis and your whole team.
14:19
(Paula laughs)
