0:03
This brings back so many memories.
0:06
Some of 'em good, some of 'em hard, y'all.
0:08
My cousin George is here
0:10
and he's over there gobbling down some lunch.
0:14
He lives in Colorado.
0:15
Huh, you doing your part? - [George] I'm doing my part.
0:17
- Yes, he came to check on his mama.
0:20
And so he spent a lot of time
0:22
with great, great my aunt Peggy.
0:26
So what I'm fixing to share with y'all today,
0:29
make sure you keep this in your recipe file
0:33
because it's so good,
0:36
especially during the summer
0:38
when all the fruits are just at their peak.
0:42
And it's french cream.
0:47
because to me, a custard is cooked,
0:51
I'm gonna start by whipping one cup of heavy cream,
0:56
along with a fourth of a cup of sugar,
0:58
is my measurement that I use for each cup of whipping cream.
1:02
I've got lemon juice.
1:04
I've got pineapple juice.
1:06
I've got confectioner's sugar and I've got cream cheese.
1:10
And I made this every day when I started the Bag Lady.
1:16
For y'all that don't know,
1:21
I started the Bag Lady.
1:23
Jamie and I ran our first route on June the 19th, 1989.
1:34
And my husband had given me $200
1:37
for my income tax refund.
1:40
And I took that $200.
1:42
I bought a cooler, a business license,
1:45
and $50 worth of groceries.
1:54
it was such an experience.
1:57
So both of my children and eventually their girlfriends,
2:01
so we had at one time, five routes here in Savannah,
2:08
my boys and their girlfriends ran the four main routes here
2:15
And they would bring in,
2:18
I would wait for them to get back home,
2:21
they'd bring in their receipts,
2:24
and I would take that
2:25
and I would immediately leave for the grocery store
2:28
to go buy tomorrow's food.
2:32
And you know, I said, only in America.
2:36
Only in America can something like that happen
2:41
to a southern, overweight, gray-headed,
2:47
But you know, that's the thing, y'all,
2:51
if you're passionate about something,
2:55
don't lose that passion.
3:00
The only catch is it's gonna require hard, hard work.
3:06
So I went on for the next seven years
3:10
to the hardest time of my life,
3:14
working 16, sometimes 18 hour a day, every day.
3:20
So thank God I was blessed and I survived.
3:26
I was so thankful for my physical ability
3:29
to be able to stand up and work.
3:31
And I still say that today,
3:34
and I've met so many wonderful people along my journey.
3:39
Okay, so french cream,
3:41
I had the little clam shells, you know,
3:44
the clear clam shell containers.
3:49
And I would put my beautiful green lettuce
3:51
and then I'd pile it full of my fruits.
3:54
And then I would have a container of French cream
3:57
for people to dip in.
4:00
And I couldn't make enough of them.
4:03
The women just loved them.
4:11
(mixer softly whirring)
4:14
I'm gonna start out slower
4:15
or else I'm gonna have this all over me.
4:18
So I just dropped my eight ounce package of cream cheese
4:22
in with my whipping cream,
4:24
and it's at room temperature.
4:26
You'll wanna make sure it's at room temperature.
4:29
So now I'm gonna add my confectioner's sugar.
4:34
I'm gonna add my lemon juice.
4:39
I'm gonna add a little pineapple juice.
4:42
Now, it depends on what kind of juice you had.
4:44
I use these juices just to thin it a little bit.
4:50
And this is pineapple juice.
4:54
You know, it was whatever I had in my refrigerator.
4:57
Pineapple, orange juice.
5:00
Gosh, you could even use apple juice.
5:06
I really use that as a thinning agent for it.
5:11
Look at this beautiful French cream, would you?
5:18
beautiful, beautiful.
5:22
And last, I add my zest.
5:27
And I don't add this using the mixer
5:30
because I don't want my zest to get lost in the blades
5:35
and I lose half of it.
5:37
I don't want that to happen.
5:38
So at the end, I just stir or fold that in.
5:47
Okay. (spatula bangs)
5:56
Like I said, I wish my boys were here
6:02
George, did you ever-
6:03
- [George] I'm just sitting here wondering
6:04
when you're gonna say, "He'll do."
6:10
Mmm! - [George] Yeah, he'll do.
6:19
This is the way I like to eat the French custard.
6:24
Oh, the french cream.
6:29
Isn't that delicious? - [George] Mm-hmm.
6:31
- Like I said, keep this in y'all's file
6:43
watermelon, cantaloupe, honeydew,
6:44
whatever kind of fruit you choose,
6:52
Love to the Bag Lady.
6:55
And now the Bag Lady still lives,
6:58
but it lives in the form of my foundation,
7:02
the Paula Deen Bag Lady Foundation.
7:05
And our goal is to help women
7:10
and their children should they have any.
7:12
So it's a very worthy foundation
7:16
and you can go online if you want to
7:18
and learn more about it there.
7:21
So I love you Bag Lady.
7:24
