0:00
- Happy Easter everybody.
0:02
I'm Jamie Dean here at Mama's house,
0:03
and this is a recipe that is gonna be interesting.
0:08
I have never made this before
0:10
and this is an interesting way to do asparagus.
0:14
This is a great side dish for your family here
0:16
during Easter or spring time.
0:18
Theresa's here filming for me.
0:19
I have my friend Jelly Rose here.
0:22
Nita Jones is here and mom's here, but she's leaving.
0:27
So my friend Jelly Rose, y'all who I've known and loved
0:30
for 30 some odd years, at least,
0:32
this morning we made hoecakes.
0:34
Oh the hoecake cornbread is delicious.
0:36
And we did a casserole that she's still eating
0:39
and she wasn't sure if she was gonna like it
0:41
and she's still eating it.
0:42
So y'all search up the creamy spinach
0:45
and sausage casserole that we made.
0:49
I've got our asparagus about a pound of it.
0:53
And this is where it's a little weird.
1:07
Of course, we're gonna add a little bit of oil on here.
1:13
Some virgin olive oil.
1:14
And y'all look at this.
1:16
Cane syrup, cane syrup, Nita.
1:21
- [Paula] I'm about outta cane, aren't I?
1:22
- You are 1-1/2 tablespoons of cane syrup.
1:25
We're using cane syrup this season, this asparagus.
1:28
So we're gonna toss all this together.
1:32
I mean, who of course has never had asparagus
1:36
with cane syrup and shallots and lemons before?
1:38
And we got our garlic in here
1:41
and once we get all of this coated up really well,
1:47
we're gonna arrange it on our baking pan here.
1:52
Boy, that is gonna be something.
1:54
I can't wait to try it.
1:57
My wife loves when I bake asparagus like this,
2:00
we just normally coat it with a little bit of oil
2:03
and put Parmesan cheese on it and roast it off in the oven.
2:06
And I'm getting kind of tired of that.
2:08
So we might start going down the cane syrup road.
2:12
I'm gonna put some of those shallots.
2:13
- [Paula] Don't knock it until you tried it, y'all.
2:16
Ain't that right, Nita?
2:18
- [Paula] Nita turns her nose up at everything.
2:20
If it eating her fried chicken,
2:21
her collard greens, her hoecake.
2:26
- I'm gonna put some shallots in here
2:27
so I can put some heat on some of these too.
2:29
Roasted shallots or delish.
2:31
So this is the seasoning part.
2:33
My hands are trashed.
2:35
This is going into the oven for about 10 minutes.
2:37
Turn your hat around, come back
2:38
and we're gonna finish this off.
2:39
Hey y'all, we're just about to finish
2:40
our asparagus recipe here
2:42
and Nita told me that when she leaves,
2:44
she's carrying that pasta home.
2:46
I'm telling y'all, you gotta find
2:47
that creamy collard sausage meatball casserole.
2:51
You got to, that's them lips saying I'm bringing that home.
2:54
You can bet that it is good.
2:58
So our asparagus is in the oven, has five more minutes,
3:01
so we're gonna mix together.
3:04
I told y'all this is an interesting recipe here today.
3:09
I'm using cream cheese.
3:10
The recipe calls for goat cheese.
3:14
I would throw it further if we had a wider camera
3:17
so you can see how far I'll throw goat cheese.
3:18
I don't care for goat cheese.
3:20
Y'all can have it all.
3:21
I guess I get it from my mom.
3:23
But you can substitute cream cheese.
3:26
And so I've got cream cheese, sour cream.
3:29
Gonna use a tablespoon of olive oil in here
3:34
and it calls for a little bit of salt.
3:39
And I'm gonna cream this up.
3:42
Now you think, okay, he's roasting asparagus,
3:45
seasoned it with cane syrup.
3:48
Now we got cream cheese and sour cream.
3:54
We'll just wait until you see.
3:56
I'm gonna whip this up really good.
3:58
Theresa this was it for this, right?
4:00
Cream cheese, sour cream, and a little bit of salt.
4:02
- [Theresa] And oil - And my little bit of oil.
4:06
I've got this smoothing out.
4:10
We're gonna spread this, yes,
4:13
spread this on our platter.
4:16
This is a plate from River Bend outside of Albany, Georgia.
4:20
Y'all have heard mama talk about River Bend.
4:22
Her parents operated a gas station and they serve food
4:27
and this was one of the platters that they serve steak on.
4:32
So this platter right here is one of three remaining
4:38
They would serve stake on this.
4:40
And it is probably more than 50 years old
4:46
because my mom lived at the gas station when she was a child
4:51
and worked at the restaurant there.
4:55
I'm gonna clean my plate up a little bit.
4:57
I don't have anything close and I gotta check my asparagus.
5:00
Sour cream, cream cheese,
5:02
a little bit of salt, a little bit of oil.
5:04
We've spread it here.
5:05
This is where we're gonna land our roasted asparagus
5:10
in 3 minutes and 27 seconds.
5:13
It's gonna be good or interesting at least.
5:16
Alright y'all, 10 minutes in the oven.
5:18
We've got our asparagus
5:21
and we're gonna lay this right over the top.
5:25
Now Eddie was just telling me
5:26
that his sister up north would do something like this,
5:31
but she would just do the base.
5:35
It would be the cream cheese, the goat cheese,
5:40
I'm gonna drizzle a little bit of oil over this.
5:48
Just a little bit of oil on here.
5:54
And rather than put asparagus on it,
5:57
she would serve it with crackers.
5:59
Now on top we're gonna put crushed pistachios.
6:04
I tell you what, this is pretty, man,
6:08
that is a nice dish to fix for Easter.
6:13
I hate to mess it up, but I'm going to.
6:16
Lemme grab a plate real quick.
6:24
Get a little bit of our,
6:26
see this is turning into a cream down here
6:28
with this hot asparagus on it.
6:31
I'm gonna save some of this for mom and for Nita.
6:36
Let's give it a test test.
6:41
I have never in my life.
6:48
- [Theresa] I would like it better with goat cheese.
6:51
- I would not like it better with goat cheese.
6:54
- [Theresa] Eddie would like it with goat cheese.
7:00
I can see where that comes in.
7:02
It's really nice on the cream,
7:04
the shallots and the pistachios
7:07
give it some texture and crunch.
7:09
It's a good Easter dish, y'all.
7:13
Cook it for your family.
7:14
Thanks for tuning in y'all.
7:16
I'll see y'all around the kitchen.
7:20
