- Y'all I love it you've heard me say it a thousand times.
0:04
I just love it when y'all send me your family's
0:07
favorite meals, that you've cooked for them over the years.
0:12
Well, we've got one in and I could tell that
0:15
there's some German descent there.
0:18
It's from Candy Cheney in rural Minnesota,
0:23
and she has been cooking this, her adult life.
0:29
She has two daughters and they are still to this day,
0:32
cooking it for their family.
0:34
And it's a sauerkraut casserole.
0:39
Now sauerkraut is like soured cabbage,
0:44
this goes through a process.
0:49
My aunt Piggy can't eat a hot dog without sauerkraut
0:55
Eddie loves sauerkraut so does Theresa.
0:58
And I love sauerkraut when I cook it with pork ribs
1:03
and kraut it's so good.
1:06
Well, Candy said this recipe is just delicious
1:09
that she cooked it for so many years for a family of four.
1:14
And she said usually no leftovers.
1:17
So Candy says "Loving best dishes to you dear Paula."
1:23
And thank you for sharing something that's near and dear
1:28
And sure enough, my German grandma Tilly,
1:31
taught us how to make our own homemade sauerkraut.
1:34
And it's so easy and just the best.
1:37
Well, maybe one day we'll get that recipe from you Candy
1:40
and try to make our own homemade sauerkraut.
1:43
But this recipe is so simple.
1:46
And thank you again Candy,
1:50
because I feel like my friend's out there are looking
1:53
for something delicious, but easy and cost efficient.
1:58
So we're gonna start with a pound and a half of ground beef,
2:04
and we're gonna brown it off along with garlic and onions.
2:19
Now Candy says, if it has a lot of fat left in the pan
2:25
drain some of that, but she recommends that you leave some
2:30
up because that's what gives it all the flavor.
2:33
And especially since this dish has rice in it,
2:37
so that rice is going need some seasoning.
2:42
Okay. So we're adding our onion
2:46
and our fresh garlic.
2:51
And we're just going let that cook
2:53
and brown a little bit.
2:55
We don't have to kill it because it's gonna bake
2:59
for about 45 minutes to an hour in the oven.
3:02
So we just kinda want it maybe like half cooked, not much.
3:13
Now Candy didn't tell me whether she covered this dish
3:19
So I'm gonna say, since it's got rice in it,
3:22
we're going bake it off.
3:24
That moisture needs to stay in there.
3:27
So I'm going cover it with foil
3:29
and Candy you can let me know down the road,
3:33
whether you cover yours or leave it uncovered.
3:39
All right. We got everything in our pan
3:41
and it starting to get hot.
3:44
I am going to add one teaspoon of salt
3:50
and little shy bit teaspoon of pepper.
4:01
So there she blows she's ready to brown now.
4:08
Okay. Y'all I drained a lot of the juices,
4:14
off of it but I left some.
4:17
Cause that's what Candy told me to do.
4:20
So now I'm gonna add my sauerkraut.
4:24
And she said, use one to two cups.
4:26
Well, I'm using the full two cups
4:30
because I do wanna be able to taste the sauerkraut in it
4:34
and it smells so good.
4:39
All right. Now I'm gonna stir in one cup of long grain rice.
4:53
And now did y'all notice
4:58
it ain't got a drop of butter in it. (chuckles)
5:02
That's unusual y'all. (chuckles)
5:07
Okay. So half a pint of sour cream.
5:18
And the last thing we're gonna put in
5:20
is three cups of beef broth.
5:28
This looks very good.
5:30
Just like this done it.
5:44
Like I've said so many times,
5:46
we know we get in ruts
5:50
as to what we make and
5:57
when I get recipes from y'all,
6:00
I appreciate it so much cause it gets me out of my rut
6:08
and Candy also said, I wanna make sure my broth
6:17
Candy also said to check during cooking
6:21
to see if you've got enough moisture in your dish,
6:24
because it might need to add a little bit more water,
6:29
which that makes me think that maybe she cooked it
6:35
- [Eddie] That looks like it has a lot of liquid.
6:37
- Aha, this has a lot of liquid.
6:40
So it looks like I'll start out with it covered,
6:46
and then if it looks really, really
6:54
oops, if it really, really.
6:56
I think this containers almost too little.
7:01
So, Eddie and I switched it to a 13 by 9 by 2.
7:06
So the recipe called for a five cup casserole dish,
7:12
but I don't know Candy if I put more ingredients in here?
7:18
But anyway, it worked out perfect in the 13 by 9 by 2.
7:23
So I'm gonna put this in the oven and I'll check it.
7:27
And if it looks like we need to take that ten foil off
7:31
to cook some of the liquid, that's what we'll do,.
7:33
But I tell y'all I snuck a little taste of the broth.
7:37
And it's very good. It's very, very good.
7:43
All right. So one and a half pounds of ground beef,
7:46
one small diced onion, one cup of rice,
7:49
three cups of beef broth, a half a pint of sour cream,
7:52
one to two cups of sauerkraut, salt and pepper,
7:56
and one teaspoon of garlic, fresh minced garlic.
8:01
So it's going in the oven Candy.
8:04
And I can't hardly wait to pull it out.
8:07
Okay. Y'all our sauerkraut casserole is ready and
8:16
this looks and smells so good.
8:21
And once again, this is from Candy Cheney
8:29
and she was just so sweet.
8:31
She said, "I hope this email gets to you.
8:37
I got this recipe from a good old friend
8:39
and everyone in our family just loves it.
8:42
Even though it sounds like it wouldn't be too good,
8:47
So I'm gonna dig in Candy.
8:52
I love the looks of it.
9:03
You could fix a salad to go along with this
9:08
and you'd have a full meal wouldn't you?
9:11
- [Eddie] Looks good it's barbecue side something different.
9:36
(claps hands) That's so good Eddie.
9:41
And you get just a little hint of the sauerkraut,
9:48
just that little bit of tang.
9:52
It is really, really, really, really good.
9:57
And I so appreciate you thinking about us Candy.
10:07
And I did use two cups and Candy said either one to two cups
10:11
of sauerkraut and I did use a full two cups
10:14
and that's what I would recommend.
10:16
Cause it makes it so good Teresa.
10:18
So get that plate right there and come get you some.
10:22
Cause it is delicious.
10:26
So I thank you dear so much.
10:31
And you know, I always try to send you loving messages.
10:39
you might already have this recipe.
10:44
Love to y'all let me hear from you.
10:47
And before I sign off, y'all can't decide whether
10:53
to cook it covered or uncovered.
10:55
So I cooked it for about 30 minutes, 25 minutes
11:00
maybe covered, and then I uncovered it.
11:04
So I'm guessing that maybe she cooked it uncovered.
11:09
So that's what I would try.
