We're making Aunt Peggy's meatloaf.
0:03
We're gonna move right on to our entree
0:05
which is a wonderful fifties and sixties dish
0:08
an old fashioned meatloaf.
0:11
Just like my mother and my aunt Peggy
0:13
and my grandmother used to make for you
0:15
starting to think I'm going to get rid
0:16
of these fun glasses.
0:18
We're going to start with the ground beef
0:20
a good ground beef, maybe an 80, 20, something like that.
0:25
All right, we're gonna kinda break it down
0:30
and we're gonna add a teaspoon
0:34
and about a quarter of salt.
0:36
And a deepen fourth of a teaspoon of the pepper.
0:40
All right. Now, I've got like a half of a large onion
0:43
and a diced bell pepper.
0:45
And we're just going to mix that in there with that.
0:48
Oops, forgot to take my jewelry off.
0:51
Did I show y'all my engagement ring that Michael gave me?
0:54
I don't want that meatloaf fall in those rings.
0:57
All right. So we're just gonna mash that bell pepper
1:00
and onions up into the hamburger meat.
1:02
Kinda get that incorporated.
1:04
Along with that salt and pepper.
1:06
We gonna take one egg(shell crushing)
1:11
And give it just a few beats.
1:19
And then we're going to add,
1:21
a fourth of a cup of oatmeal
1:25
and this just gives your meatloaf a
1:27
real lightened fluffiness to it.
1:30
And then we gonna take a can of just diced tomatoes
1:42
I'm starting to try and work that into kind
1:45
of a loaf shape right now.
1:47
I'm just gonna take that out
1:50
and put it into our dish.
1:52
And the thing I like about my Aunt Peggy's meatloaf
1:55
is she doesn't top it with just ketchup.
1:59
She takes a fourth of a cup of ketchup,
2:02
and about tablespoon of mustard,
2:06
couple of tablespoons of Brown sugar
2:10
and just mixes those together.
2:12
And the Brown sugar is so good in there.
2:15
You know, just kind of get that meatloaf
2:17
just a little sweetness on the outside.
2:20
And we're just gonna brush that on our meat.
2:23
Doesn't that look yummy.
2:24
So this one's ready to go in the oven
2:26
and we gon put it in a 350 preheated oven
2:29
and we're going to let it cook
2:30
for about 45 minutes to an hour.
2:38
We're gonna have a wonderful aroma coming from the oven
2:41
Let's check that oven and see how
2:43
the other meatloaf that I've gotten
2:44
in the other oven is doing.
2:50
Oh, it looks so good.
2:58
Look at that meatloaf.
3:00
Don't that look good.
3:01
I can smell those bell peppers.
3:05
I'm gonna, just try one of those little in-pieces.
3:16
come over here and get me some of that okra and tomatoes.
3:20
Don't it look just yummy.
3:38
So Good.Takes me back to my aunt Peggy's table.
3:46
You know, some folks just don't like a greasy meatloaf.
3:49
Well, let me tell you how to solve that problem.
3:51
You just land your bacon dish with whatever kind
3:54
of loaf bread you've got in the house
3:56
and it soaks up all your grease
3:58
and you just take your spatula
4:00
and lift your meatloaf out onto your platter
4:04
I hope you'll love my Aunt Peggy's meatloaf
