- Hey, y'all come on in the kitchen.
0:02
What do you think about my hair today?
0:05
Isn't it pretty?
0:07
Well, guess who did it?
0:09
Emily-
0:10
- Hey y'all
0:11
- did my hair and makeup today
0:13
because I'm gonna be on JTV later on this afternoon
0:18
with my- showing my jewelry line.
0:20
So Emily came in to do me all up
0:23
and we got to talking about recipes.
0:27
So Theresa kinda drug Emily
0:30
(laughing)
0:31
over here in the kitchen with me.
0:33
Isn't she beautiful?
0:35
She's just beautiful.
0:36
And she's so sweet.
0:37
She's quiet.
0:38
We're total opposites.
0:40
(laughing)
0:42
She talks with a real sweet soft voice like me.
0:48
(laughing)
0:50
But today and by the way,
0:55
Theresa was telling me a little while ago
0:58
that the recipes that I'm doing today
1:00
and probably for the next few days
1:03
are the top 50 of the most searched recipes
1:08
on my site, Teresa, or is that anybody's site?
1:12
- [Theresa] No, on our site
1:14
- On our site, okay.
1:14
- [Theresa] and it's based
1:15
on the ones that we haven't done yet
1:17
because we've done a lot of your really popular ones.
1:20
- I hope y'all can hear her what she's saying.
1:23
But in fact, the last thing that I did
1:28
it had a lot of requests.
1:30
Oh, I know.
1:31
It was Granite Steps Country Blueberry Coffee Cake
1:36
And we'd had a lot of requests for that one
1:38
and it's good.
1:39
Alright, so Emily, we're gonna start
1:41
with about a pound and a half of hamburger meat.
1:46
We are making beef stroganoff.
1:48
So I'll tell y'all a story about beef stroganoff.
1:53
So let's put this in our pan.
1:57
And we're just gonna crumple that up and brown it.
2:02
And while that's getting hot and brown,
2:06
I'll tell y'all a story.
2:10
Back when I just started The Bag Lady
2:12
I'd been doing it maybe six, eight, nine months,
2:15
something like that.
2:16
Well, a friend of mine, Jeannie Sims,
2:20
we both came from Albany, Georgia
2:24
and she was very, very successful
2:27
in a tour business, here in Savannah.
2:31
And I have to say that
2:33
I have so much to thank Jeannie for
2:37
because she gave me the opportunity
2:41
to cater these big parties.
2:46
And she gave me a job one night for 300 people,
2:53
300 people.
2:55
And I chose to make beef stroganoff for 'em.
3:00
It was in July,
3:01
towards the end of July.
3:03
It was is hotter than Hell.
3:08
And my little kitchen at my house,
3:10
we had about this much counter space,
3:14
no dishwasher, nothing.
3:16
I mean, it was terrible.
3:18
But I made beef stroganoff for 300 people
3:21
in that little kitchen.
3:23
And Peggy came over to help me
3:27
and I had recruited Jimmy, my husband at the time
3:31
to help but it was my first big pay day, Jeannie.
3:35
(laughing)
3:37
It was my first big pay day.
3:39
And I had you to thank, so,
3:42
but I still have nightmares
3:46
about beef stroganoff.
3:48
(laughing)
3:49
Because I didn't use-
3:51
because they were paying me so good
3:54
per person per plate,
3:56
I couldn't give them ground beef.
3:59
So I used the beef that I had to cut into strips.
4:03
And, to me it wasn't nearly as good as the ground beef.
4:08
- You can't beat ground beef sometimes.
4:10
- No. So the recipe,
4:12
if y'all look under my things
4:15
you'll see that I have told you to use-
4:21
I think a sirloin
4:22
What'd I say?
4:25
Thin strips of round steak?
4:26
Honey, you couldn't,
4:28
you couldn't cut a round steak
4:30
with George Washington's teeth.
4:32
You couldn't do it with wooden teeth.
4:36
Don't do that, y'all.
4:37
Just do it with the ground beef.
4:39
So I hear this starting to sizzle back here.
4:43
Oh, Emily, I'm looking for a spoon that I like.
4:50
So this is so, so simple.
4:53
And like I said,
4:54
it's one of those recipes
4:55
that y'all have really requested.
4:58
And you know, even the children, children love this,
5:03
but even the adults love it so much.
5:07
Alright, I'm gonna get some water going for our noodles
5:14
and you can see this ground beef had a lot of water,
5:18
a lot of water in it.
5:20
So I'm gonna drain this
5:27
and I swear it looks like water rather than fat, doesn't it?
5:33
Uh-oh!
5:37
I think that's, that's probably good enough.
5:46
Alright, so I'm gonna take that out.
5:50
There we go.
5:51
Get out of there!
5:53
There we go.
5:55
Alright so,
5:56
now I'm going to drop a little bit of butter in there
6:04
and I'm gonna saute our onions and our mushrooms.
6:11
So Emily,
6:13
- [Emily] Yes?
6:14
- Talk to me, girl.
6:16
Alright, say your mother is a great cook.
6:20
- [Emily] Oh, she's a good cook.
6:21
(Paula laughing)
6:23
- Oh my gosh, I'm fooling with Emily.
6:28
- [Emily] She cooks more-
6:30
- Country
6:32
- [Emily] country type foods, yes.
6:33
My dad's a great baker, though
6:35
- Oh is he?
6:36
- [Emily] He is so he does a lot of the cooking.
6:39
She'll be mad I said that,
6:40
but he might be just a little bit better
6:42
of a cook than she is.
6:45
- Well, that is good for your mother.
6:48
- [Emily] It is very good.
6:51
- Alright,
6:52
now I kinda wanna let these like caramelize.
6:57
You notice I only used like a heaping teaspoon of butter
7:01
cause I kinda liked to dry these out.
7:03
I like my mushrooms done brown and dry.
7:08
I don't like a whole bunch of shoestrings.
7:11
Alright this pan's really getting hot now.
7:13
So, I think that's pretty good.
7:19
So, I'm gonna bring this over here, Emily.
7:22
Do you ever make beef stroganoff?
7:24
- I've never made it before,
7:25
but I'm gonna make it this week.
7:26
- No!
7:27
- I haven't
7:28
- No!
7:29
- I really haven't.
7:30
- Well, I am so glad that you're gonna get to taste this.
7:34
- And what a great teacher to have.
7:36
- Oh you're sweet, you are sweet.
7:39
I hope this is half as good as your-
7:44
your table setting that you're gonna teach me.
7:47
Alright so that's a can of cream of mushroom soup,
7:52
and a cup of beef broth.
7:55
And I made my beef broth from a wet base.
7:59
Do you use these?
8:00
- I do, yes. They're great.
8:01
- Love 'em, love 'em, love 'em.
8:04
Alright, so I'm gonna
8:05
you know what?
8:07
I think, just to make sure this is thick enough
8:14
I'm going to take a little of my, Wondra flour.
8:19
This makes incredible gravy
8:23
because it's so fine, it won't lump.
8:27
- Well that's good to know.
8:28
Gravy's always been a little intimidating
8:29
to make for me.
8:31
- Yeah, if you use this kind of flour-
8:33
alright so I'm just going to sprinkle
8:35
a little bit of that in there
8:37
just to make sure,
8:39
you know it gets thick
8:41
because I'm fixing to add that one cup of beef broth.
8:50
And then we're gonna,
8:51
You wanna put our ground beef in there?
8:56
- Just pour it in the cup?
8:57
- Just pour it right on in.
8:59
and then we're just gonna mix this up
9:04
and let it, let it simmer,
9:08
you know, and get all those flavors in there.
9:13
Yum!
9:14
And then we've got sour cream to put in it,
9:17
but you want to wait
9:18
'til right before you get ready to serve it.
9:22
And then we're gonna stir in.
9:24
- Why do you wait 'til the end?
9:25
- Because you know,
9:26
things like that can kind of curve, it can kind of break.
9:29
So we don't want it to do that.
9:35
Okay, so we'll put this back on the stove
9:39
and we'll let that just simmer.
9:41
I'm going to cut our eye down
9:43
'cause I had that thing, I had that eye hot as Hades.
9:50
And if I put too much flour in it
9:54
and it gets too thick, I'll just do this.
10:00
Add a little bit of water.
10:04
And then if it's, if it's-
10:06
if it's taken a lot of the beef punch out of it,
10:10
I can always add a little wet base to it.
10:14
So that's it.
10:15
We're gonna cover that up.
10:16
We're gonna wait for this to boil
10:19
and we always use egg noodles,
10:23
but you can use any kind of pasta you want.
10:29
My grandchildren, seems like they like the Vermicelli
10:36
or either the Angel-hair pasta.
10:39
So you can do any kinda pasta you want with it,
10:42
but this is kinda the traditional.
10:45
Okay, so I'm gonna see if I can find the lid for this.
10:51
I'm gonna-
10:54
Mhm!
10:57
I'm gonna put a little salt in that
10:59
and a little pepper,
11:02
and maybe a little garlic.
11:06
Alright so a little pepper,
11:10
a little salt,
11:13
and where did that garlic go?
11:19
There it is, I think that's it.
11:22
Garlic powder, a little of that
11:32
and a lid, and we gonna be good to go.
11:34
We have- look at that.
11:36
Look at our stroganoff,
11:39
just marrying all those flavors together.
11:43
And I've got my salted water back here for my pasta
11:47
and I'm probably just gonna cook
11:50
about three quarters of a bag
11:53
or maybe a little bit more.
11:56
Alright, so this will be ready in seven to nine minutes.
12:02
You know what?
12:03
I'm just gonna go ahead and cook that whole sack
12:06
and now I'm gonna have to add some more water to it
12:13
and wait for it to boil again,
12:14
but that's alright.
12:17
That's alright.
12:18
Hopefully Emily and Eddy and Theresa
12:23
will like it enough
12:25
that they'll eat it all up.
12:28
Okay, seven to nine minutes
12:33
and then we'll be eating.
12:34
Okay. We're back with Emily,
12:37
my hair and makeup friend that takes such good care of me.
12:42
And we are making one of my family's favorite dishes
12:48
and that's beef stroganoff.
12:50
And I ain't trying to do it fancy with some kind of steak,
12:53
I'm using hamburger meat
12:56
and my family has all agreed that that's the best.
13:00
So the only thing we have to do Emily
13:02
and Emily says she's never made this.
13:04
- I haven't, I can't wait to try it.
13:05
- I can't believe it.
13:08
So our last step Emily and y'all,
13:13
is to put one cup of sour cream in this
13:19
and the reason you wanna put it in at the last minute
13:23
is you don't want that cream to break in it.
13:28
So you certainly don't-
13:29
wanna make sure this doesn't boil, Emily.
13:32
- Okay.
13:33
- You know, you can have your, your eye on simmer
13:43
I'm gonna bring this over here.
13:45
- [Emily] It looks delicious.
13:46
- Doesn't it look delicious?
13:47
You know, I added that little touch of water to it,
13:51
it may be a little, a little bit too thin,
13:54
but that's all right.
13:56
It's gonna eat good.
14:00
Alright now it may need some more salt to it,
14:03
because sour cream just screams for salt.
14:09
Okay so I'm gonna dip you up some noodles.
14:20
And let me see, this'll get it up good.
14:32
And you can garnish this with some green onions
14:40
or some cheese, you know whatever,
14:45
whatever you like the garnish with.
14:50
And go ahead and taste it, now!
14:51
It's hot, it's hot!
14:55
But I have a feeling that you'll start making this.
14:59
- Well it certainly does look delicious.
15:02
- Mhmm
15:06
You know, it's just one of those good, old honest foods,
15:09
- Comfort food.
15:10
- Comfort food.
15:11
- And on a cold day, this is delicious.
15:13
- Yes! Yes!
15:16
So, Ooh, Theresa.
15:21
- [Theresa] Yes ma'am.
15:22
- Now I know Eddie can't film and eat this
15:25
but do you want some?
15:27
- [Theresa] I'm good right this moment
15:28
- 'Cause all you're doing is holding up that chair
15:30
or holding that chair down, right.
15:32
- [Theresa] Okay, yeah.
15:34
- It's so good, Theresa.
15:37
- [Eddie] This is, this is one of my favorites too.
15:39
- Is it?
15:41
- [Eddie] I think it's- yes,
15:41
I think whenever you ask what I want for my birthday dinner,
15:46
this is it.
15:47
- Did you say beef stroganoff?
15:48
- [Eddie] Yeah. And I think Bobby,
15:50
this is Bobby's birthday dinner too, isn't it?
15:52
- No, goulash.
15:53
- [Theresa] No his is goulash.
15:55
Bobby's Goulash.
15:59
So like I said, you really need to taste it
16:02
after you put your sour cream in it.
16:07
- [Theresa] So good
16:08
- It's so good.
16:11
- I love it.
16:15
And this is one of those dishes that anybody can make,
16:20
you don't have to be a chef.
16:30
I look so forward to setting the table for us.
16:34
And so we'll be back with Emily in a couple of days
16:39
and all of us here send y'all love and best dishes.
16:43
You know we do.
16:46
Thanks for spending a little time with me.
