- This dish that I'm fixing to share with y'all
0:03
takes me back to my Girl Scout days.
0:06
This is the one thing that I remember us making
0:11
when we went to camp.
0:13
And I know you have made them,
0:16
at least once in your lifetime.
0:18
This is a fun dish for children to make.
0:21
Naturally for camp,
0:25
this was the easiest thing that
0:29
us girls were able to make.
0:32
And I've got a pound and a half of ground beef.
0:36
I've got two teaspoons of the
0:39
Lady and Son's House Seasoning.
0:42
If you don't have that,
0:44
you can just use seasoning salt of some sort.
0:49
I've got one bell, was this one bell pepper or half?
0:53
- [Teresa] It's a half. A half a cup,
0:55
which is about a half of a bell pepper.
0:56
- [Pauline] Yeah.
0:57
Half of a bell pepper. Yes.
1:00
And we've got some lemon juice.
1:06
This is going be a
1:09
little more than just like a regular hamburger.
1:15
And you can make them anyway, you can make them,
1:17
if you feel like you're fixing them for a finicky family,
1:21
then just put whatever you want to in it.
1:24
Just plain old hamburger meat and salt and pepper,
1:27
if that's what you want.
1:28
Now I've got a cup of,
1:30
this is crushed salting crackers,
1:33
I wouldn't recommend using a buttery cracker
1:36
that might have a little sugar in it.
1:39
I'd use the strictly savory.
1:42
And I'm going to take these rings off,
1:46
because in order to get it mixed up good,
1:49
I got to go in with my hands.
1:53
But I'm going to go in with this hand,
1:55
it doesn't have any kitchen cuts on it.
1:59
All right, so we just going to mix that all together.
2:03
And these are good if you're cooking out
2:09
and the couple, the mama or the daddy or whatever
2:14
is having steak and the children don't want steak.
2:19
Well, this is easy for you to fix for them
2:23
and throw it on the grill.
2:27
And they can have-
2:29
we used to call these hobo meals.
2:36
- [Teresa] We're showing this right before Labor Day.
2:37
So this will be-
2:38
- Yeah, this would be great for Labor Day. Yeah.
2:43
All right, so there we go.
2:45
Now, the last thing I'm going to add
2:47
is one cup of shredded cheese.
2:51
So we are making cheeseburgers.
2:54
Thank you, Teresa.
2:58
And we just want to mix this up good.
3:00
Get all those flavors going together good.
3:12
Get that cheese distributed evenly through that burger.
3:19
Now I am going to be cooking these in the oven.
3:23
So, I'm using two-
3:28
Here, I got to do it that way. I'm right handed.
3:31
I'm using two different tin foils to wrap our burger in.
3:38
And I'm just, this is a heavy duty,
3:41
which you really do need the heavy duty.
3:44
And if you're going to cook them on the grill,
3:47
I would use two sheets of the heavy duty.
3:50
But since I'm fixing this in the oven,
3:53
I'm just going to reinforce it
3:54
with my little tin foil sheets.
4:00
But it really is necessary over an open fire to use the two.
4:06
All right, now we are going to have carrots,
4:09
potatoes, onions.
4:11
We're going to top this with bacon and that's it.
4:15
So I parboiled our potatoes some,
4:19
because there's nothing worse
4:21
than biting into a hard potato.
4:23
And I also parboiled the carrots a little bit.
4:30
So, this is supposed to make four patties.
4:36
So I'm going to kind of just look at it
4:37
and see where we stand.
4:39
These are going to be nice.
4:43
They going to be a lot of meat.
4:54
Okay. Kind of want to make them all the same size.
4:58
That one's got more than the rest of them.
5:04
Okay. So I'll take a little bit of that
5:05
and put over there.
5:11
The beauty of it is you can make them any size you want to.
5:15
If you're feeding a little bitty young person.
5:21
Okay.
5:27
- [Teresa] Tell them why you have a cut on your finger.
5:29
How about you tell them the truth?
5:31
(laughing)
5:33
- Y'all, it looks-
5:34
- [Teresa] I'm watching you try to not use that thumb.
5:35
- I'm not using that thumb.
5:37
And let me tell you, you would say, well, Pauline,
5:40
you're a big fat crying sissy,
5:43
and you can't really see it, but it hurts so bad.
5:47
Theresa has been encouraging me to use my mandolin.
5:52
So last night I said, I'm going to use that mandolin.
5:56
But, at some point, our guard has been misplaced.
6:03
And you know how I am about
6:05
getting the very last-
6:08
But let me tell you something,
6:09
they were bloody good potatoes.
6:11
(laughing)
6:12
I wound up having to wash our potatoes.
6:15
So if you use a mandolin, make sure you have a guard.
6:21
'Cause like I said, it looked like nothing,
6:26
but it hurts like a, I don't know what
6:29
and that lemon juice got in it.
6:32
Oh my hair almost stood up.
6:37
So that's the story morning glory.
6:42
All right.
6:45
- [Teresa] Those are nice big-
6:46
- Oh yeah. This is a complete meal.
6:50
- [Teresa] It's generous.
6:51
- Yes. A complete meal.
6:53
Well, most people get four-
6:58
four patties out of a pound.
7:01
You know, it'd be a four ounce, four ounce hamburger.
7:05
- [Teresa] And that's right at one and a half.
7:06
- Yeah. So this is like a six ounce,
7:11
six ounce burglar.
7:14
I'm only that one that way,
7:15
'cause I think I
7:18
may have shorted him his paper a little bit.
7:23
Okay.
7:26
Let me move this out of the way
7:27
so I can get it up close to me.
7:29
Thank you Teresa.
7:34
Yeah, oh my gosh.
7:37
We went out to Flint River,
7:40
girl and boy Scout Camp and made these.
7:46
Time of your life.
7:49
All right.
7:51
So the next thing we're going to do is,
7:53
we're going to layer it with our potatoes.
7:59
And some of us like lots of potatoes.
8:02
- [Teresa] Did you tell them about parboiling?
8:04
- [Pauline] Yes I did.
8:06
Oh, you were on your computer? Yes.
8:09
- [Teresa] Sorry.
8:11
- [Pauline] You know, you could do them straight raw but,
8:16
to me it's just not good to bite into.
8:21
- [Teresa] I wish that you taught me,
8:22
'cause I'm always frustrated with my vegetables.
8:25
- [Pauline] Yeah. They just-
8:26
- [Teresa] They don't cook like the rest of it.
8:27
- [Pauline] Right. Right.
8:28
- [Teresa] 'Cause I'm not a crunchy girl.
8:29
- [Pauline] Uh-uh, no, I don't like crunchy vegetables.
8:33
I like my green beans soft.
8:36
I like my cauliflower and broccoli
8:39
a little on the soft side.
8:44
So, we got a few extra potatoes.
8:48
- [Teresa] That was a lot of potatoes.
8:49
It's kind of hard to-
8:50
- [Pauline] Yeah, it's hard to judge.
8:53
That's all right. They won't go to waste.
8:56
Now, I've just got to see if I can get
8:58
these carrots to stay up there.
9:04
Come on, work with me.
9:07
All right, now I'm going to go ahead and cover those
9:11
with a half a piece of bacon
9:12
and that'll help keep the carrots-
9:14
Oh, I forgot the onions.
9:16
- [Teresa] Yes.
9:16
- [Pauline] How about if I put those last or-
9:21
Let's see, maybe that'll help the carrots stick.
9:26
These are going to be delicious.
9:31
Get back in there you carrot.
9:34
You know that my children are supposed to eat carrots,
9:37
hey, I just stuck them in the hamburger meat
9:39
and it worked out perfect.
9:40
(laughing)
9:42
Okay, let's go back.
9:46
Go back and get the onions on that one.
9:50
Do I hear a mouse in the pantry?
9:53
- [Teresa] Yes. You hear a little Mike.
9:56
- [Pauline] A little mice?
9:58
Not a big rat?
9:59
- [Teresa] Not a big rat.
10:00
(laughing)
10:04
Little Mike, not big Mike.
10:05
- [Pauline] Yes.
10:08
He doesn't like to be called little Mike.
10:10
- [Mike] I told y'all, I'm big Mike. -
10:12
- [Pauline] He's big Mike.
10:13
(laughing)
10:17
- [Teresa] Well, we don't want to confuse them so-
10:18
- [Pauline] No.
10:19
- [Teresa] They think it's Michael.
10:31
- [Pauline] All right.
10:48
Just stick those carrots right down in that burger meat.
11:02
How fun.
11:07
This is a dish I think that the kids would have fun
11:13
coming in and helping you put together.
11:16
All right, so we're just going to seal that up.
11:19
(tin foil crinkling)
11:25
Just like that.
11:26
And we are going to put these in the oven.
11:31
- [Teresa] Do you still need this tray?
11:31
- [Pauline] 350 oven. No honey, I can use this one.
11:34
- [Teresa] Okay.
11:35
- [Pauline] I can just-
11:36
Well where did that other one go?
11:38
- [Teresa] Well, that's what I thought.
11:39
- [Pauline] Where'd it go?
11:40
There it is.
11:41
(laughing)
11:42
- [Teresa] I thought we'd used it.
11:46
- [Pauline] Thank you.
11:47
- [Teresa] You bet.
11:49
- [Pauline] You know, you might want to rinse it,
11:51
'cause I did, I was measuring out those burgers.
11:54
Yeah.
11:56
(tin foil crinkling)
12:04
So whatever you and your family like is-
12:09
But this is wonderful,
12:12
wonderful way to feed the full family.
12:17
(tin foil crinkling)
12:27
Jamie and Brooke said that
12:31
their lives changed when Jack
12:34
got old enough to eat table food.
12:38
And they said they were absolutely not
12:42
going to cook two separate meals.
12:46
And they didn't, they sure didn't.
12:50
And they'd all sit down at five o'clock and have supper
12:55
and little Jack learned to eat
12:59
whatever his mother or daddy was cooking.
13:07
Which turned him into a good eater.
13:11
Okey doke. There we go.
13:12
Now, how long did I say I'm going to cook this for?
13:16
45 minutes?
13:17
- 30 minutes
13:17
- [Pauline] 30 minutes?
13:18
- 35?
13:23
- 45 minutes.
13:24
But on the camp fire,
13:27
you'd have to be very attentive to it
13:31
and I wouldn't cook them directly on the coals,
13:35
like I do my onions,
13:40
but put them just on the grate.
13:41
And it might take a little longer there but,
13:45
we'll be back in 45 minutes.
13:48
Y'all this is a meal that calls for a picnic.
13:53
I mean, these are just perfect.
13:55
I'm going to put it on a paper plate
13:58
and we might eat supper outside tonight.
14:03
So let me open one up and show you
14:07
what this looks like.
14:11
Look how good that looks. Oh my gosh.
14:15
Memories, memories.
14:19
Jane Dayton's mother was our troop leader.
14:26
(buzzing)
14:28
And naturally, Jane was in the troop that I was in,
14:33
in her mother's troop. Look at this.
14:37
Oh, the potato
14:40
and the burger.
14:45
Hmm.
14:50
There's very, very, very little grease in this meal,
14:55
even by laying a strip of bacon on top.
14:58
Teresa bought the meat.
15:00
You must have bought some good, good ground beef.
15:03
- [Teresa] The lean ground beef.
15:05
- [Pauline] The lean.
15:08
That's why it's not soaking in grease.
15:15
It is so good.
15:18
Mm.
15:20
Memories, like a corner of my brain.
15:26
Just a little salt.
15:33
And that bacon just gives it a wonderful flavor
15:39
and the carrots will make you pretty.
15:43
That's what I always heard.
15:45
Or maybe they'll help you see better.
15:48
- [Teresa] One or the other.
15:49
- It was one or the other. Yep.
15:53
Delicious.
15:57
If you're a camper, this is a great meal.
16:01
You can do ahead and put them in the freezer.
16:04
And when you start packing for your camping trip,
16:08
just take them out of the freezer.
16:09
One of those easy, easy meals.
16:12
- [Teresa] I hope somebody will try this for Labor Day.
16:13
- Yeah.
16:15
It would be a great one for Labor Day.
16:17
And I hope it brings back memories for y'all too.
16:21
'Cause I know you've had it at one point or the other.
16:25
So y'all have a happy Labor Day and be safe.
16:32
'Cause I'm going to be with y'all again one day,
16:35
like next Monday.
16:36
(laughing)
