I am gonna share with y'all my Aunt Peggy's meatloaf recipe.
0:11
And now she, Aunt Peggy,
0:14
did not saute off her peppers and her onions.
0:18
So, I do like to do that.
0:21
(vegetables sizzling)
0:27
because this is what I'm tryin' to work on
0:30
for the restaurant, y'all, here at the Lady and Son's,
0:33
not Paula Dean's Family Kitchen recipes.
0:38
But meatloaf, to me, everybody loves meatloaf
0:42
and it's so good and so all-American.
0:44
But when you slice it, it gets ugly,
0:48
you know, it can get messy.
0:50
So this is what I'm workin' on, y'all.
0:59
and bought some of these little three-by-five loaf pans.
1:04
So I'm gonna make individual meatloafs in these,
1:10
so you'll get your own loaf.
1:12
It won't be all sliced up and crumbled off,
1:16
you will get the whole loaf on your plate,
1:20
at the Lady and Son's.
1:21
And I think people are gonna love it,
1:26
or at least, I hope they will.
1:28
It'll still be our good old homemade meatloaf recipe.
1:34
I've got one pound of meatloaf, I've got my oatmeal.
1:44
Now, the ketchup, this is for the top, right?
1:47
- Yes, ma'am. - Okay.
1:51
- A little off to the side-
1:52
- [Paula] That's a great idea.
1:53
- So you don't use it.
1:56
'Cause we know sometimes-
1:59
- You get a little- - Sometimes,
2:00
I'll get carried away and just go, go, go, go, go.
2:03
- [Theresa] And the next thing I know, it's gone.
2:06
- Alright, so I'm gonna work my oatmeal in there.
2:11
And Aunt Peggy's recipe
2:13
calls for an eight-ounce can of diced tomatoes.
2:18
So this is a 14-ounce can,
2:21
so I'm just gonna use half of them.
2:29
I can't remember what she calls for in the way of spices.
2:34
Theresa, salt or anything like that, does she-
2:38
- [Theresa] I guess I should give you a recipe, huh?
2:41
- Well, ya know, I think I know the recipes until-
2:44
- Honestly, it's just salt and pepper.
2:46
- Okay, that's kinda what I figured.
2:47
So I'll use house seasoning.
2:51
And where did I put it?
2:53
- [Theresa] Oh, I put it... Sorry.
2:55
- Where you put it? - There you go.
2:56
- Okay, that goes in this drawer over here.
3:00
- [Theresa] I was kicking it out for one of our other ones.
3:11
And you wanna just cook these
3:12
until they're kinda transparent.
3:15
(vegetables sizzling)
3:20
I can't stand it when things try to get away from me.
3:25
They're fightin' a losin' battle.
3:29
Well, maybe not on that one. (laughing)
3:38
Okay, I am gonna cut that off and let it cool for a second.
3:43
I think I'm gonna get in here with my hands,
3:48
and I just washed 'em.
3:51
this is the way to get a meatloaf mixed up properly.
3:58
They're still real hot.
4:04
Alright, so I'm gonna go ahead and mix up our topping.
4:09
Where'd our topping stuff go?
4:10
Oh, there it is. (laughing)
4:12
She's trickin' me, y'all! (laughing)
4:15
- [Theresa] I moved it out the way.
4:16
- I know, you did. (laughing)
4:20
Alright, this is the topping
4:23
that I'm gonna put on top of our meatloaf.
4:25
- I'm gonna move this outta the way for-
4:27
- Okay, can I just have that spoon, please?
4:30
for the simmering. - Alright.
4:34
What is it, a tablespoon of mustard?
4:39
- So this just really adds so much flavor to that meatloaf,
4:46
along with some mashed potatoes and collard greens.
5:03
(mustard bottle thudding)
5:04
That took some work. (laughing)
5:06
But that looks about like a tablespoon.
5:27
Pretty good, pretty good.
5:32
Okay, I think this has cooled off enough.
5:42
But I do like usin' the cracked pepper in this.
5:47
I decided to add just a scosche more salt
5:51
because the house seasoning is salt, pepper, garlic powder,
5:59
and it's supposed to have onion powder in it.
6:03
So it's not like a lotta salt, so I'm kickin' that up
6:09
with just a little bit of my sea salt, my kosher salt.
6:16
Okay, so we washed the pans.
6:19
Thank you, thank you.
6:20
Now, I think I'm gonna spray 'em.
6:25
I can't remember last time when I was testin'.
6:31
My hands don't wanna hold on to nothin'.
6:38
Just gonna give 'em a light spray on the bottom.
6:53
Now, when I tested this out before,
6:57
I said I'm gonna do it two ways.
6:59
I'm gonna put the topping on the bottom of the pan
7:03
and then put the meatloaf on top of it.
7:06
So I did two that way, and the other two, I did it on top
7:12
just like you would if you were cookin' in a regular oven.
7:16
So I actually liked it better on top,
7:20
so that's the way I'm gonna do it.
7:21
And we have to remember, this is one serving, one meatloaf.
7:35
I wish I had a scale.
7:36
In fact, if we decide to do 'em this way at the restaurant,
7:42
we're gonna have to have a scale, ya know?
7:52
And see, I just like the shape of that.
7:57
So we had some tomatoes left,
8:01
ya know, from our 14-ounce can.
8:03
So I didn't do this before, but I'm just gonna take...
8:08
Ya know, I hate to waste anything,
8:10
so I'm just gonna put a little dollop of that on it.
8:23
And then, I'm gonna cover it with our magical sauce
8:29
that makes it so good.
8:32
since these are smaller than a normal big size,
8:34
would you still bake these at 375-
8:36
- No. - Or would you go to 350?
8:38
- I'd bake 'em at 350.
8:43
how long I cooked them for the other day, maybe 25 minutes,
8:49
I mean, it wasn't a gracious long time.
8:54
- [Theresa] You could prep these,
8:55
and like if your husband, like mine, takes food to work-
9:01
you could make these and bake 'em off as you need 'em.
9:05
- Yes, he could take it to work, put it in the microwave-
9:08
- [Theresa] And heat it back up again?
9:09
- And heat it back up.
9:11
- [Theresa] Mix in mashed potatoes.
9:13
- [Theresa] And he'd be be happy camper.
9:14
- Take him two slices of white bread and some mayonnaise,
9:21
and have a meatloaf sandwich.
9:22
- Mm-hmm. - Nothin' no better.
9:25
Alright, so what y'all thinkin'?
9:27
- Yum. - What are y'all thinkin'?
9:29
So, in the oven they go.
9:32
And let's start out that 20 or 25 minutes, Theresa, on 350.
9:37
And like I said, you can make them,
9:41
put them in the freezer just like this-
9:43
- [Theresa] Should they go on a pan, or no?
9:46
- Yeah, I did, I put 'em on a pan, a sheet pan.
9:50
you could put these in the freezer just like that,
9:53
take 'em out, thaw 'em, cook 'em.
9:56
- I mean, that's amazing.
9:58
- Thank you, thank you, thank you.
9:59
Once in a while, I'll come up with a good idea. (laughing)
10:02
- [Theresa] She's come up with a lot.
10:03
- What do you think about the many one-servin' meatloafs?
10:15
you really don't even have to buy these pans
10:20
because you can just mold 'em.
10:24
Alright, well, here's a test.
10:28
I'm gonna take a bite outta somebody's. (laughing)
10:32
I'll take a bite outta Aunt Peggy's, she won't notice.
10:50
Theresa, come taste this, please.
10:52
- [Theresa] Oh, I have no problem with that.
10:59
Here, I'll give ya a spoon so you-
11:01
- It's hard to be a taste tester.
11:02
- I know it is a tough life, but somebody's got to do it.
11:06
- Exactly. (Paula laughing)
11:12
- Delicious, isn't it?
11:13
Tastes like mama's meatloaf.
11:18
- Finish that other bite.
11:19
- Don't worry. (Paula laughing)
11:22
I was tryin' to do a princess bite.
11:24
- You know, this is just an all-American dish, isn't it?
11:27
- It's just perfect, and it's perfect size.
11:31
All-American is apple pie.
11:34
Hope y'all enjoy it.
