0:00
- We're back to thinking about Memorial Day.
0:08
you know, to, 'cause this is really all about,
0:10
Memorial Day is really all about our fallen soldiers
0:15
that really gave their life for us.
0:18
So we can't thank them enough.
0:20
So anyway, I used to make macaroni salad a lot,
0:27
And it was just very, very plain and simple.
0:31
You know, just like my potato salad,
0:34
my potato salad recipe,
0:36
which is in my very first cookbook.
0:40
But this one is one from the magazine,
0:44
and it's a fancier, jazzed up one.
0:48
So (chuckles) here we go.
0:51
I was just chopping some basil,
0:53
'cause we're gonna put some fresh basil in it.
0:56
I mean this is gonna take nothing.
0:57
It tastes nothing like the one
1:00
that my family grew up on.
1:03
So anyway, I've got my macaroni.
1:06
Make sure you cook it completely done,
1:10
because al dente macaroni salad is not good to me.
1:16
I just always like my pasta done.
1:19
So I'm gonna start with...
1:23
Maybe I'm gonna start with it.
1:25
Maybe I ain't. (Theresa laughing)
1:27
Theresa? - Let's see.
1:28
We might have to go to Eddie.
1:30
- Look, I loosened it. - I bet you did.
1:33
That's what I said to Eddie the other day.
1:35
- Yeah. - It's like, hmm.
1:36
- You loosened it for him.
1:38
- [Theresa] Mm-hmm. That's what I'm gonna say.
1:40
- Alright, one tablespoon of vinegar.
1:46
Two teaspoons of Dijon mustard,
1:50
where I always used, ah, yellow mustard.
1:55
But we'll see, 'cause it's gonna give it
1:57
a totally different taste.
2:05
You know, (laughs) I walk around,
2:07
telling Eddie, Theresa, Michael,
2:10
anybody that'll listen, (laughs) I spend
2:17
half my life looking for stuff,
2:19
and then I spend the other half trying to get it open.
2:23
And that ain't no lie. (laughs)
2:25
Alright, so two teaspoons of Dijon.
2:45
And make sure when you cook your macaroni
2:47
that you cook it in salted water,
2:50
'cause it's like rice or grits.
2:55
If you don't salt them to start with,
2:58
it's gonna be hard to get 'em where you want 'em to be.
3:04
So I'm gonna mix this up
3:08
along with my mayonnaise.
3:25
And this recipe calls for bell pepper, celery, and onions.
3:31
And in mine, I would use
3:35
all onions and celery.
3:39
And I'd have to chop it up real, real fine,
3:42
because my family didn't wanna see it. (laughs)
3:52
My children's father was so opposed to anything like this.
3:59
And he didn't like onion, so I did.
4:04
So I would use onion powder, and he'd say,
4:07
"Oh, that's just the best." (laughs)
4:11
So I was able to get it in there.
4:14
Alright, I'm gonna do just a few tomatoes.
4:20
And I'm gonna add me a little basil.
4:26
Then we'll use that other for garnish.
4:34
I like my macaroni and potato salad,
4:43
because starches will continue to suck up
4:51
And I think we balled off about a half a box
4:56
of maybe a 16-ounce package.
5:00
But I'm gonna stop with that much,
5:01
and see if I need to holler for more mayonnaise. (laughs)
5:09
Right now I think we're alright.
5:12
And I always served my macaroni salad warm.
5:17
So as soon as I got it drained,
5:21
and I also put boiled eggs in mine.
5:24
Like I said, it was just like my,
5:26
just like my potato salad.
5:30
Alright, I think it can stand that.
5:32
But if not, like I said, as it sits,
5:35
now if you pull this out tomorrow,
5:39
your pasta is gonna have absorbed all of the moisture.
5:45
So you'll wanna kick in a little bit more mayonnaise.
5:59
I'm gonna taste it, or seasoning,
6:03
you know, make sure my seasoning is good enough.
6:10
- You like it? - Mm-hmm.
6:14
The vinegar is getting me right here, but it's so good.
6:17
- [Theresa] Mm, it looks good.
6:21
- So totally, totally different
6:26
from the macaroni salad,
6:27
but not- - That's nice,
6:28
'cause sometimes, - It is nice.
6:29
- you want something,
6:30
you like pasta salad, but you want a different,
6:32
- Yeah. - profile to it.
6:37
Jamie used to make a wonderful pasta salad for me
6:45
This really is so tasty.
6:47
- [Theresa] I can smell the...
6:48
- Here, lemme get ya a spoon. Yes.
7:00
Love that vinegar bite.
7:11
- When it sits for a little bit,
7:13
and it really melds into the pasta,
7:14
it's gonna be, that's gonna be a winner.
7:20
- Well that would be great at a Memorial Day party.
7:25
Oh, I'm gonna add just a little bit of ground pepper to it.
7:29
Oh, I couldn't find this for days, Eddie.
7:36
- [Eddie] It was parked behind the um...
7:38
- [Paula] Oh! It was behind this?
7:46
- So you can make this the day before.
7:49
Just remember that little tip about it drying out.
8:00
Mm, I could eat like, a half a bowl of this.
8:06
Have a wonderful, safe Memorial Day, y'all.
