- Hey y'all, you know what?
0:02
I think hot wings are just anytime.
0:10
You can have them anytime, whether it be summer, winter,
0:14
spring, or fall, everybody loves wings.
0:18
Well, I was flippin' through my new magazine,
0:23
"Cooking with Paula Deen", in fact,
0:24
it's on the newsstands right now.
0:28
When I got my copy, I was flipping through
0:31
and Jamie had what he calls "Winner," W-I-N-N-E-R, "Wings."
0:38
So I thought, "Darn that, Jamie,
0:40
"he's been holding out on his mama,"
0:44
but I know how he and his boys love hot wings.
0:49
So I thought, "Well, since it's so hot outside,
0:53
"I'm gonna do some and I'll be able to cook 'em
0:55
in the air fryer, so that'll keep me from roasting
1:01
out here in this kitchen.
1:04
So, it calls for three pounds of assorted chicken wings,
1:10
the flats and the drumettes,
1:13
two tablespoons of oil,
1:16
that we're gonna pour over our wings,
1:22
and half a teaspoon of black pepper,
1:30
and two teaspoons of salt.
1:38
That looks like a lot of salt,
1:40
but I know that it's gonna be good.
1:45
So we're just gonna take these and we want to just
1:49
mix that all up and get that seasoning
1:51
on every piece of chicken.
1:54
Now, I left the little tid-tats on the flapper part
1:59
of the wing, 'cause to me, I think they're good
2:02
and there's one little bite of meat right in there.
2:08
You know, every time I cook chicken or, with bones in it,
2:14
I think about my brother, Bubba.
2:18
Nobody, nobody could clean a chicken bone like Bubba Hiers.
2:25
In fact, it didn't resemble anything
2:30
when he got through with it.
2:31
You couldn't tell what, where the bones came from,
2:34
what was left, and I have missed
2:37
seeing my brother eat chicken.
2:43
So, this is dedicated to my sweet brother
2:46
that's no longer with me.
2:49
All right, so I've got that mixed up real good,
2:51
I'm just gonna wash my hands,
2:54
and like I said, I'm gonna put 'em in the air fryer,
2:57
and get those to cook,
2:58
and I'm gonna cook 'em on 400,
3:02
and I'll have to check because Jamie's instructions
3:05
say to cook 'em in your regular oven at 400,
3:09
so I've got the air fryer set on 400, but you know
3:15
an air fryer cooks a lot faster
3:17
than, like your regular oven.
3:20
So, we want skin side up, the best we can do that
3:27
with a wing.
3:30
So we just gonna layer those in the there.
3:35
And these are gonna be so good.
3:39
I'm counting on you, son,
3:40
to share something really good with us.
3:47
And like I said, I'm trying to,
3:50
it's not a whole bunch of skin on wings,
3:53
but what skin there is, I'm trying to turn it skin side up.
4:05
Ooh, yum, and these are pretty wings, Theresa.
4:10
Good job on getting the wings, girl.
4:17
She's in la-la land
4:19
over there, she is (laughing). - No, I'm not, I'm listening.
4:20
I'm trying to think of a good response to that.
4:23
I was gonna say Publix did well.
4:28
- Okay, so there they go,
4:31
and you know, to get anything, if you cookin' something
4:34
that you want crispy, we always spray it,
4:38
but because we tossed that in the oil...
4:43
All right, now all we're gonna do is turn that on,
4:48
and I've got it set for 30 minutes, but I'll be chicken it.
4:55
(Paula laughing)
4:56
I'll be checking it about every 10 minutes,
5:02
'cause I don't want it to get away from me.
5:05
All right, now here's the part that where Jamie just,
5:08
it just sounds so delicious.
5:12
We're gonna make a sticky sauce.
5:15
And we're gonna start with ginger.
5:21
We're gonna start by probably makin' a mess,
5:23
is what we're gonna do.
5:25
We're gonna start with butter, ginger, and garlic,
5:30
and we gonna get that to the aromatic stage,
5:35
and then we're gonna add lime juice, soy sauce,
5:41
honey, and two ginger ales.
5:44
And you want to use the full strength ginger ale.
5:51
Don't use the diet, according to Jamie.
5:57
Right, there's the ginger,
6:01
the garlic, and the butter.
6:06
Ooh, and this is gonna just, when it gets hot,
6:10
it's gonna smell heavenly,
6:13
and I think I'm gonna do it on this, high,
6:16
and Jamie said to cook this on high, real high heat,
6:22
for about one minute.
6:29
(light beeping)
6:34
Not gonna take too long though,
6:35
because that garlic will start to burn,
6:40
and we don't want that to happen.
6:42
But Jamie said in his recipe that it's gonna take
6:47
about 30 minutes cooking time,
6:51
which about, that's about the same time
6:53
we're gonna cook the wings.
6:57
So, I want to give you all the right measurements
7:01
that he's given us.
7:03
It is one tablespoon of minced, fresh ginger,
7:09
two cloves of garlic, and a fourth of a cup
7:12
of unsalted butter.
7:20
So, that's getting all mixed up.
7:24
I love the flavor of ginger.
7:27
To me, it sounds like these wings are gonna
7:31
have an Asian flare to 'em.
7:33
What about, what you think Eddie?
7:35
- Yeah, definitely - Doesn't it sound
7:36
- with the ginger, yeah - kind of Asian, yes.
7:43
Mm-mm.
7:46
I have a feeling this is gonna be a good
7:48
sticky, sticky wing.
7:57
(cat meowing) - Speaking of ginger.
7:59
- Yeah (laughing).
8:00
She's a ginger kitty, isn't she?
8:03
Kind of red, like Eddie's almost what you'd
8:06
call a ginger person, right?
8:10
Before it turned gray
8:11
- Yeah. - it was red.
8:12
- [Eddie] Yeah.
8:15
- It's still, you still got some red.
8:17
You're not that gray.
8:19
- [Eddie] No, it's comin'.
8:20
(Paula laughing)
8:23
- The longer you hang out with me,
8:25
the grayer it's gonna get, honey.
8:32
Okay, you smell it, Eddie?
8:35
Mm.
8:38
Yum.
8:48
Smells really, really good.
8:57
And that's boiling, y'all.
9:02
You're only supposed to let that cook like that
9:04
for one minute.
9:10
Mm.
9:12
Oh, I wish y'all were here to smell.
9:20
Okay, now I'm gonna add my lime juice,
9:28
my soy sauce,
9:36
my half a cup of honey.
9:41
So we gonna have some sweet and savory going on here.
9:48
Okay, and now we're gonna add two 12 ounce cans
9:55
of ginger ale, and that's why it's gonna require 30 minutes
10:00
because it's gonna be a lot, lot a, lot a liquid.
10:11
Hope our pan's big enough.
10:15
Being carbonated it's foamin' a good bit.
10:23
All right, let's see how long he tells us to...
10:29
"Bring to a boil and then reduce heat and simmer,
10:32
"stirring frequently until thickened.
10:35
"About 30 minutes."
10:38
(can clicking)
10:41
Come on now.
11:00
Because it's carbonated, it's foaming up pretty good.
11:06
All right, so we're gonna bring this to a boil,
11:11
just like he said.
11:18
I think I'm gonna move to a whisk.
11:20
(whisk clanging)
11:31
Ooh, Eddie, anybody wanna stick your finger in it?
11:38
It tastes so good.
11:43
Okay, so boil, baby.
11:48
I'm gonna put it on high,
11:49
and we're gonna get this show on the road.
11:54
So we're gonna bring all of our ingredients to a boil,
11:58
and it's almost there,
12:02
and then we're gonna let it simmer for about 30 minutes.
12:09
All right, I'm gonna come over here,
12:10
and I'm just gonna take a peek at our wings,
12:14
and see where we stand there, see how they're doing.
12:21
Oh, and they are doin' (laughing).
12:24
Aren't they doing?
12:27
Okay, our wings are ready,
12:30
and sonny boy, I really do like your recipe.
12:34
The only trouble I had with it was the sauce
12:39
didn't get syrupy like I thought it would.
12:44
I don't know, maybe it's 'cause there was no sugar in it,
12:47
but so at the end of the cook down time, see,
12:52
I cooked it down to what you see there,
12:57
and I actually sprinkled some Wondra flour in it.
13:04
You know, that Wondra is the kind that you can
13:09
just add to whatever you're cookin'
13:13
and it will thicken it without lumps.
13:19
So that's what I did,
13:20
'cause I wanted it a little bit more sticky,
13:23
but it definitely takes longer than the 30 minutes
13:26
on that sauce.
13:29
And it is a sauce, so it's not supposed to be like a syrup
13:34
or anything like that, so it's very, it's very good.
13:41
I love the ginger flavor
13:47
and our wings are just like I like 'em, real crunchy.
13:58
Yummy.
14:01
All right, so we've got some extra sauce,
14:07
so I'm gonna pour that up,
14:11
'cause if you're like me, you can't have
14:13
too much dipping sauce.
14:15
Theresa,
14:16
- I'm coming. - you gonna come help me?
14:18
- [Theresa] Absolutely.
14:23
- Like I said, I just love that,
14:25
the smell of that ginger and that garlic together,
14:29
and the soy sauce.
14:32
Mm-mm, let's dig in.
14:38
Ooh, ow, ooh.
14:39
- They're hot.
14:42
I don't know what we were thinking.
14:42
- Maybe that's why they call 'em hot wings.
14:47
All right, which one did I picked up?
14:49
I guess this one.
14:50
- Oh my gosh. - But I cooked 'em
14:51
really crispy, y'all, because that's
14:54
how I like my wings.
14:55
- Yes.
14:56
- If you don't like yours crispy, then back up off the time.
15:04
Mm-hmm, mm-hmm, they're good.
15:05
- They are very good, and I like the sauce.
15:07
I like the way it's,
15:08
I think it's thick enough. - Mm-hmm, mm-hmm, mm-hmm.
15:11
Well, I did add a little bit of
15:12
that Wondra flour. - Yes, I watched you.
15:15
- (giggling) I know you did.
15:21
And I'm not pushing any one product,
15:24
but I'll show y'all what I'm talking about.
15:33
It's a quick mixing flour and you can sprinkle it right
15:37
into your liquid, and it's not gonna clump.
15:39
Like if you try to sprinkle it with regular flour,
15:42
you'd have more lumps and bumps than a camel.
15:47
So, that comes in awfully handy,
15:51
that Wondra. - This comes in awfully good.
15:52
- Mm-hmm.
15:55
You done good, Jamie.
15:58
- [Theresa] Really good.
16:00
- We'll have to check out Bobby's recipe
16:02
in this month's magazine,
16:03
- And maybe try that one.
16:04
- 'cause Bobby goes to the healthier, more low calorie.
16:08
- That's why we don't do 'em very often.
16:09
(Paula laughing)
16:11
- And Jamie-
16:13
- But we love you, Bobby.
16:14
- Mm-hmm.
16:16
Jamie gets down to the nitty gritty.
16:18
- Mm-hmm.
16:19
- What his guys like.
16:23
Mm.
16:25
- [Theresa] You gotta end the show so we can eat more.
16:28
- Okay (laughing).
16:30
- [Theresa] And Eddie can have one.
16:32
- I forgot about Eddie, he might like a wing.
16:35
Well, we will see you later.
16:37
We love you and we send you that along with wishes
16:42
for best dishes.
16:45
Bye-bye.
