0:00
- I wanna share with y'all today
0:02
some really, really happy, happy memories.
0:04
I was living downtown in my little pre-civil war house.
0:08
It was so tiny, and so cute, and I loved it.
0:11
But one day, I got up and said, "I wanna live on the water."
0:15
So I came out here to Wilmington Island,
0:18
the first and only place I looked at, I bought it,
0:23
because it was in a subdivision called Turner's Cove,
0:30
and there was six condominiums that were right on the water.
0:35
In fact, when you walked out your back door,
0:37
you could almost spit in to the creek.
0:40
So I had been there almost a year, like nine months,
0:44
when my dogs ran in front of me
0:48
and ran around that big wall, right up to this man,
0:56
who scared me, 'cause I ran and chased my dogs around there,
1:01
and there was this man with shaggy bear, shaggy hair,
1:07
propped on his fence talking on his cellphone,
1:13
And so I apologized and got out of there
1:15
just as quick as I could.
1:17
Well two weeks later, my dogs did the same thing,
1:21
Otis and Sam, and so I chased 'em right back.
1:27
At least this time, I knew where they were going.
1:31
And so I stayed and asked him a few questions,
1:36
and a friendship began forming that day.
1:43
And it's a long story, so I'm gonna tell it now,
1:45
but it's a funny, funny, funny, funny story,
1:48
and I tell all about it in my book,
1:52
"It Ain't All About The Cookin'," my memoirs.
1:56
And so we decided, because he had two children,
2:02
I had two children, plus a niece and a nephew,
2:06
so all together, there was six children,
2:10
and before I knew it,
2:15
it seemed like it was always somebody's birthday.
2:18
So I chose one Sunday out of each month.
2:22
If you were born in January,
2:23
we had a party for all the January birthdays.
2:27
February birthdays, March birthdays, we had a lot in March.
2:31
But we would have the best time.
2:34
We would cook out, we'd get out in the yard
2:36
and play games, and oh, we just had so much fun.
2:42
It was like a birthday party when we were a kid,
2:46
but now we were big kids.
2:48
And so many fun memories.
2:52
Well, we were having one of those Sunday birthday parties,
2:57
and my nephew, Corrie's brother, Jay,
3:02
who was no longer with us,
3:03
he was this beautiful, beautiful young man,
3:06
and he cared about his body, and he was a clothes horse,
3:10
and he really took a lot of pride in the way he looked,
3:14
and he was drop-dead good looking.
3:18
He was one of the most handsome men I've ever known.
3:24
So he watched what he ate,
3:26
so I decided that I was doing hamburgers
3:29
for this particular birthday party.
3:31
And I said, "Well I wanna make 'em special."
3:35
Because I think we had three birthdays
3:38
in that month of March, so I wanna make 'em special.
3:44
So I took my ground beef,
3:50
I put me a stick of butter in the freezer.
3:55
You can see where this thing is going, can't you?
3:59
I got my hamburger meat, my ground beef, in a big bowl,
4:05
and I seasoned it with salt, pepper, garlic powder,
4:26
and the final ingredient, after I got this mixed up good,
4:33
was gonna be one of my favorite condiments
4:37
in the whole entire world.
4:42
I thought, "Now what can make these burgers better?"
4:49
And I remember one time, I made, on one of my shows,
4:54
a Krispy Kreme cheeseburger.
4:58
And that happened quite by accident,
5:00
so I think I got talked about a good bit for that.
5:04
They accused me of trying to kill everybody.
5:09
Even though I said, "Once in a lifetime item.
5:15
"You can only eat that one time in your life."
5:18
But it was so good, that sweet with that savory.
5:20
So I decided that I would take my frozen butter,
5:27
and cut it up in to cubes,
5:31
and just mix it in with my ground beef.
5:36
And the reason I froze it is because I want it
5:41
to have an opportunity to melt slow.
5:45
So I mix this up just like this, and I patted 'em all out,
5:57
and I put 'em on a tray with parchment paper.
6:02
I'm out of parchment paper.
6:09
Cling clang, I can't wait
6:10
to get a lot of room back in my kitchen.
6:16
So I took my burgers, and I patted 'em out,
6:23
and they look so beautiful.
6:27
And my precious little nephew came in the kitchen,
6:37
and I proceeded to tell a story,
6:41
'cause he said, "Those look so good, what is that?"
6:49
And I said, "Garlic."
6:53
'Cause I wanted him to eat one.
6:56
So we cooked 'em, and we got through eating 'em,
7:02
and Jay came up to me and he said,
7:04
"Aunt Paula, that was the best garlic cheeseburger
7:08
"I have ever put in my mouth."
7:12
And we all started laughing.
7:15
And he said, "What, what's the matter?"
7:18
I said, "Well Jay, I told you a little tiny fib,
7:22
"because I was afraid you wouldn't eat it,
7:25
"but that was butter, not garlic." (laughs)
7:30
So we all had a big laugh.
7:34
But this butter, as it melts while they're cooking,
7:42
It's just so good the way it flavors that ground beef.
7:49
So I try to hide 'em in there the best I can,
7:52
but sometimes it's a little hard to do.
7:56
Now these are gonna be a little tinier.
7:59
And naturally, we cook these on the, whoa,
8:01
look at the piece of butter trying to get away from me.
8:05
That piece of butter don't know who they're dealing with,
8:07
do they, Eddie? (laughs)
8:11
Alrighty, so I'm not gonna try to cook these
8:22
I'm gonna cook them in the Air Fryer.
8:27
And like I said, our butter's gonna melt,
8:29
but it's gonna melt throughout that burger,
8:34
and it's gonna be so, so good.
8:39
And naturally, I served this
8:45
with some good ol' steamed buns.
8:49
My grandma taught me to put a colander
8:54
in the top of a pot, and then a dish rag,
9:02
and then put my buns, whether it be hot dog buns
9:07
or hamburger buns, and just steam 'em,
9:11
where they're real soft, but they're very, very hot,
9:16
and it just makes for a succulent burger.
9:27
This is coming along mighty good, y'all.
9:31
Mmm, I did a good job of hiding the butter in that way.
9:36
All right, did you see that, Eddie?
9:41
- All right, as I do everything, I'm putting this on 400,
9:50
and any time I'm doing something like this, y'all,
9:54
I put it on for 10 minutes, and then I check.
10:03
I check it after that, because these machines cook quick.
10:07
I know mine does, I really don't know
10:09
about others out there, but my brand cooks very, very fast,
10:13
quick, and I don't wanna overcook 'em,
10:20
but when I turn 'em over and cook 'em
10:22
for another couple of minutes,
10:23
I'm gonna put some cheese on 'em,
10:28
and it's gonna be good, good, good.
10:33
And Jay, I can't tell you, honey, how much we all miss you,
10:40
Well y'all, I set the timer for 10 minutes
10:44
on our butter burgers, and you know what,
10:47
they're done perfectly, 10 minutes.
10:54
Look, perfect, perfect doneness.
10:59
So it's time for the cheese, cheese please.
11:07
Oh my gosh, I got a royal flush, Eddie.
11:12
No, I've got five aces, they're all just alike. (laughs)
11:17
So put the cheese on 'em, run 'em back,
11:20
just for less than a minute,
11:22
and serve these up on warm buns with lettuce, tomato,
11:30
mustard, mayonnaise, ketchup, pickles, avocado.
11:38
Did I say tomato, lettuce and tomato, did I say that?
11:44
I do love avocados on my burgers.
11:46
But any kind of cheese you want,
11:50
and you gone be eating a lip-smacking,
11:56
Paula Deen's butter burger.
12:01
Thank y'all, Love and Best Dishes.
12:04
This brought back a lot of fun memories for me,
