- Hey, y'all you ready to get back in the kitchen today?
0:03
Oh, I know I am.
0:05
It's a nice day down here in Savannah.
0:07
Started out kind of dreary.
0:10
And I was telling Eddie the other day when it's raining
0:14
and dark outside, and it's cloudy,
0:17
I love to get in my kitchen and cook.
0:21
And I don't know,
0:24
there's just something about bad weather.
0:26
So it looks like the sun's trying to come out here.
0:28
So you know when that sun comes out
0:30
I don't want to cook quite as bad
0:31
as I did when it was cloudy. (chuckles)
0:34
But I'm excited about being with y'all.
0:37
And the recipe that I wanna share with y'all today
0:41
is one of those comfort food recipes.
0:48
To find my comfort food recipes,
0:51
I headed straight to Cooking with Paula Dean Magazine.
0:56
So, I'm gonna make
1:01
this barbecue baked bean casserole for y'all.
1:05
And I know that I had a friend
1:11
that we went to school together,
1:15
and she had a son the same age as Bobby.
1:19
And so we'd get together and let the boys play.
1:23
And sometimes Bobby would go out to Scott's house and play.
1:31
And Bobby would come home and say, "Mama,
1:34
Miss Katherine done made the best baked beans,
1:37
but she's got hamburger meat in it."
1:40
So I said, "Oh, well, you know, it sounds good."
1:43
I said, "I'll try to make it."
1:45
And I made it, he said it wasn't as good. (laughs)
1:49
So if any of y'all have got a baked bean recipe out there
1:54
that calls for hamburger meat, pass it on.
1:57
Cause I'd love to share it with everybody
1:59
because I remember tasting Katherine's,
2:02
and it was really good.
2:03
So this is one of those easy, easy recipes to do.
2:10
We're using a canned baked bean,
2:13
which these baked beans are so good.
2:17
In fact, most of the time I'll start with one of these,
2:19
and then I, you know, kick in things that I want in it,
2:23
like I'll put lemon, I'll put ketchup, mustard,
2:27
onions, bell pepper.
2:28
And like I said, sometimes if it's not sweet enough,
2:32
I'll put some brown sugar or just regular syrup in it.
2:36
So, but it's got a great base to it.
2:40
And to that, I'm gonna add a cup of barbecue sauce,
2:44
tomato paste, onions and bell pepper, Worcestershire sauce,
2:50
olive oil, and we're gonna use two pounds
2:55
of Lloyd's Shredded Pork in the original barbecue sauce.
3:02
So, I mean, this is really a convenient thing.
3:06
So, I'm gonna add our olive oil to our pan,
3:11
and I've had that pan heating back here.
3:15
So, in goes our bell pepper. (pan sizzles)
3:21
I told y'all I had it heating. (laughs)
3:26
It might have been right before catching on fire, Eddie.
3:34
Okay.
3:36
(pan sizzles)
3:47
And Theresa, you've already
3:47
got the oven pre-heated, don't ya?
3:50
- [Theresa] Girl, I am on it.
3:52
(Paula laughs)
3:54
- Broom Hilda is on it this morning, she said, y'all.
3:59
I love Broom Hilda. (laughs)
4:03
All right, so while I'm waiting for that to cook,
4:04
I'm gonna (spray hisses) just spray that a little bit
4:09
so it won't stick.
4:13
And after that gets to where we want it to go y'all,
4:19
we gonna add our other ingredients.
4:26
Ooh, I love that sizzle that we had going.
4:29
So I'm gonna move everything over here.
4:32
Cause it's eventually, going in that pot.
4:36
(pot sizzles)
4:41
So that's, it's pretty translucent y'all.
4:45
So, they're almost ready.
4:47
I don't want to over cook them.
4:50
You know, I want them to still be...
4:53
I don't want them to be mush.
4:55
All right, so I'm gonna share with y'all the picture
4:59
of the finished casserole,
5:02
because I love when I make a recipe
5:05
that I've never cooked before,
5:07
I love looking at a picture because that tells me
5:11
what I'm supposed to be aiming for.
5:15
So, when we get all this together,
5:18
we're gonna put crumbled corn bread on top.
5:22
Okay. So that's ready, y'all.
5:27
We're gonna start throwing in everything.
5:32
We'll put our tomato paste in there.
5:36
I'm going to put our barbecue sauce.
5:42
You can use any barbecue sauce that you like.
5:51
That is your choice.
5:55
Ooh, that's a good, sweet, smokey barbecue sauce
5:57
that we're using.
5:59
All right, in with the pork.
6:07
This almost kind of looks like Brunswick Stew,
6:09
Eddie, doesn't it?
6:11
- [Eddie] Yeah, it kind of has that sweet smell to it.
6:14
- Yeah.
6:24
You know, I'm gonna have to be
6:25
very, very, very, very, very honest,
6:29
I don't usually use things like this
6:33
that are already done,
6:35
but I feel like there's enough people out there
6:42
that like some convenience foods once in a while,
6:45
especially when they're in a hurry
6:47
and want to have something in their kitchen,
6:52
in their stock kitchen to be able to go to
6:58
when they're in that hurry, that we can all get in.
7:03
Okay, so here it goes are beans.
7:13
Mmmm.
7:15
- [Eddie] So what is this? Side dish or main dish?
7:18
- [Paula] Well, I would say it would be a main dish Eddie
7:20
because of the meat.
7:22
- [Eddie] Mmm hmm.
7:23
- Wouldn't you say?
7:24
I mean, but you could if you were having ribs,
7:29
or pulled pork, you know,
7:31
you could serve this just as a side.
7:34
But I think it would also work, you know,
7:40
as a main dish with coleslaw
7:45
and some good old Texas bread.
7:50
Mmm. That's very good.
7:56
Ooh, that barbecue sauce, it's tangy.
8:06
All right, I was about to forget our Worcestershire sauce.
8:11
So, see how simple this is? Just simple, simple, simple!
8:18
And I tell you what, on a Monday, I like simple.
8:24
Woo, this is gonna feed a crowd, y'all. (laughs)
8:29
And gas, oh my gosh. (laughs)
8:34
It's gonna give you some bad gas, but it's worth it.
8:41
Just plan on hanging out by yourself (laughs)
8:46
after you get through eating this.
8:48
Yum. Okay, just that quick, we've got this ready y'all.
8:58
And coming in with the cornbread.
9:11
You can just use a boxed cornbread
9:17
or you can make your own corn bread
9:19
just depending on what you want.
9:25
I'm gonna about be able to cover the whole thing.
9:29
But I do like the idea of some of the beans showing,
9:32
you know what I mean?
9:34
What is that saying?
9:35
Beans, beans, musical fruit,
9:36
the more you eat, the more you toot.
9:39
Toot, toot! (laughs)
9:45
Oh my gosh, I get tickled at my own self sometimes, y'all.
9:48
Okay, so in the oven, this goes for,
9:52
I can't remember that part.
9:55
Okie dokey, 30 minutes.
10:01
If y'all knew how many recipes
10:03
were rumbling around in my head, you'd say,
10:08
"How come you ain't crazy, Paula?" (laughs)
10:11
Well, I may be!
10:14
Okay, so that looks very good.
10:19
You know, if you go into somebody's house,
10:20
and you've been invited to the house for a barbecue,
10:24
that'd be a great side dish to take, wouldn't it?
10:29
So 30 minutes.
10:32
Okay, that was a fast 30 minutes, y'all.
10:35
Bobby just walked in the back door.
10:38
Bobby?
10:40
- [Bobby] Yeah?
10:40
- [Paula] You want a taste?
10:45
You want a taste?
10:48
- [Bobby] (indistinct)
10:49
- [Paula] Huh?
10:50
- [Bobby] Taste what?
10:51
- [Paula] Taste this baked bean casserole.
10:54
Do you remember, I was just telling...
10:56
- [Bobby] Fresh out of the oven?
10:57
- Yeah. I was just telling our friends...
10:58
- [Bobby] Too hard to taste.
10:59
- I was just telling our friends out there
11:02
that I remember you coming home,
11:04
you'd been out to Katherine.
11:06
- [Bobby] Scott Farr.
11:07
- Yes. And you came home and you said, "Mama..."
11:09
- [Bobby] Does that got ground beef in it?
11:11
- No, it's got shredded pork in it though.
11:14
So, that's why I want you to taste it.
11:17
And when you came home and asked me about the baked beans
11:20
with hamburger meat in there, I said,
11:22
"Okay, I'll make some."
11:23
But then you said it wasn't as good as Miss Katherine's
11:26
So, I didn't never make it again.
11:28
So, I have asked anybody out there that has
11:36
a baked bean dish that calls for a burger, hamburger meat
11:43
y'all please call me.
11:45
- [Eddie] That sounds a little bit like chili to me.
11:47
- Yeah.
11:48
- [Bobby] No. But it's not. - [Eddie] It's not?
11:49
- It wasn't though, was it Bobby?
11:51
- [Bobby] No, it was just like that.
11:52
In fact, - See how much I'm giving him?
11:54
- [Bobby] I only had it once, and it was not fancy.
11:59
It was just a... - [Paula] Oh no.
12:02
- [Bobby] I don't know if she, maybe she ground the beef.
12:06
- Oh, it was ground beef, yeah.
12:09
Cause seems like I asked her about it, son.
12:12
- What I'm saying is maybe it was ground beef,
12:15
and she had browned it already
12:17
and then mixed it in - Yes.
12:18
- with the baked beans and then put it in the casserole dish
12:20
and put bacon on top - Yes.
12:22
- [Bobby] and then put it in the oven.
12:23
- Yes.
12:24
- [Bobby] Seems to me that that's what it was.
12:25
- Cause otherwise it may... - But this was 1986,
12:28
so it's hazy. (Paula laughs)
12:30
- So otherwise it would have been so greasy.
12:34
You know, you couldn't have put the raw hamburger meat
12:36
in the beans and cooked it that way.
12:39
You'd of had a puddle of grease.
12:41
So what you think?
12:42
- Mmm. Very good. (Paula laughs)
12:46
What else is in it? Man that's good.
12:49
- A can of pork and beans... - [Bobby] Okay.
12:54
- You know it's baked beans, a can of baked beans,
12:57
- [Bobby] Mmm hmm.
12:59
- bell pepper, onions, a little Worcestershire sauce.
13:02
- [Bobby] Mmm hmm. Ooh, that pork's good.
13:04
- Mmm hmm.
13:05
- [Bobby] Enjoy it. I gotta go, I've got a honey do list.
13:07
- Okay, sonny boy.
13:08
- [Bobby] But that's a delicious dish.
13:10
- Well thank you!
13:11
- [Bobby] Bye y'all!
13:12
- Bye Bobby and by y'all.
13:15
Loving best dishes, to all of y'all.
