- Hey, everybody, it's Bobby here,
0:02
and I've got a great recipe for you today
0:04
that I think you're really gonna like.
0:05
A little something different for us
0:08
but super Southern too at the same time.
0:10
We're gonna do creamy lemon grits
0:11
with asparagus and fried eggs.
0:14
Not exactly what you'd expect here,
0:16
but it's gonna be really good.
0:18
So first step is to get our grits cooking
0:20
'cause they take some time so let's go ahead and do that.
0:23
I'm going to add to the saucepan chicken broth,
0:50
And we'll bring that to a boil
0:56
and then we'll cover it.
0:57
And this is gonna cook for about 35 minutes.
1:01
And I'll tell you, before we get too far into the recipe,
1:05
my mom does not like stone-ground grits,
1:07
which is what this recipe calls for.
1:09
I like 'em. Mama doesn't.
1:11
So I'm using regular Quaker Quick Grits for this recipe.
1:15
All right, so we'll just get this boiling
1:17
and put our grits in and let 'em cook
1:19
so we'll take a break and come right back.
1:21
We're beginning to percolate here, so in go my grits.
1:26
And I want you to know,
1:26
if you make the same choice that I did
1:28
to go with a quick-cooking grit
1:38
you're gonna have to make some adjustments with the liquid,
1:40
just so you know, so check your recipe
1:42
if you make that change.
1:43
So we're gonna cover this and let it simmer
1:45
for about 30 or 35 minutes and we'll come back.
1:48
Our grits look really great.
1:49
They've been cooking for about 30 minutes
1:51
and they're nice and creamy and pretty thick.
1:53
Now the next step is gonna be
1:55
to add in some Parmesan cheese, cream cheese,
1:58
a little bit more heavy cream
2:00
'cause you always need a little more heavy cream,
2:03
I'm just gonna go ahead and put a chop
2:05
on the tarragon really quick before we mix it in.
2:08
Tarragon is, I don't know about you,
2:10
but it's one of my favorite flavors.
2:14
It's really good in chicken salad.
2:15
That's one place I can think of it.
2:18
Oh, it's just a really, really good herb.
2:22
I like it. Smelling nice.
2:27
Take the time to finely chop on it.
2:30
It looks good. Really good.
2:34
So in goes our Parmesan cheese.
2:40
It's a cup and a half of Parmesan cheese.
2:41
This is gonna be some really thick and creamy grits.
2:47
And then some softened cream cheese.
3:08
These are gonna be some tasty grits.
3:13
Yeah, check that out.
3:17
Man, those things look,
3:21
with Parmesan cheese, ooh-whee.
3:26
They're just right. And now...
3:31
And here's our tarragon.
3:35
Mix, mix, mix, and then we'll come back.
3:36
The next step will be, we'll go to our skillet here
3:38
and we're gonna cook up the asparagus
3:40
so take a quick break.
3:41
One more and we'll come right back.
3:44
We're ready to prepare our asparagus.
3:47
Gonna start with a couple of tablespoons of butter
3:49
here in our skillet, which is...
3:52
I'm just gonna go ahead and add my asparagus
3:55
and we'll cook it for three or four minutes
3:57
and I'll just turn it gently.
4:07
It's trimmed and clean. Asparagus is gorgeous.
4:11
We were talking about it here amongst ourself.
4:14
I like my asparagus with a little snap to it,
4:17
to cook it sort of al dente.
4:18
I like it nice and hot,
4:20
but I don't like to overcook it where it becomes rough.
4:23
Just put some color on it.
4:24
That butter is gonna give it some nice flavor.
4:26
At my house, when I'm cooking asparagus by itself,
4:30
I like to squeeze a little lemon over the top of it
4:34
and some chunky salt.
4:36
Man, I'll eat this just like that.
4:39
That asparagus is beautiful, so.
4:41
Now, in the very same pan, turn it back on here.
4:45
In the very same pan, I'm gonna cook our eggs.
4:49
There's butter already in there.
4:51
I'm gonna add a little more because yeah,
4:53
well, I'm gonna add more because dairy needs fat, obviously.
4:58
And also, eggs benefit from being cooked
5:00
in an already warmed pan.
5:03
So when you're making eggs at your house, put your skillet
5:06
on the stove top with nothing in it, just bare,
5:11
and let it warm up for a few minutes on simmer.
5:14
I always do that and the eggs cook beautifully
5:17
and they cook quickly and they don't stick to the pain.
5:21
Just gonna crack my eggs
5:23
and try not to break the yolks here into this bowl.
5:27
Wow, that's some fragile shells.
5:29
Yeah, try to keep the yolks intact
5:36
and we'll slide 'em right into the pan just like this.
5:40
And we're gonna cook them up, not scrambled, just fried.
5:44
I'll come back and clean that up in a few minutes.
5:52
Make sure the heat's just right.
5:53
Yeah, I want a nice simmer here.
5:56
I'm just gonna my eggs into the pan
6:07
Let 'em be and cook for a minute.
6:11
And then, after a couple minutes on the heat here,
6:17
we'll put our lid on until the whites set
6:20
so maybe we should take a break
6:22
and we'll come back in a couple of minutes
6:23
when they are (blows kiss) perfecto.
6:26
I covered our eggs for the last couple of minutes
6:29
Yeah, and they look nice.
6:35
Those look wonderful.
6:38
That one right there.
6:41
Little bit soft on the inside still, but that is okay.
6:47
And slide our eggs out onto this plate.
6:53
Oh boy, do those look beautiful.
6:55
- Yeah. - Obviously, I topped 'em
6:57
with a little bit of salt and pepper.
6:59
Now into our skillet,
7:03
a couple of tablespoons of lemon juice.
7:10
I mentioned the lemon juice.
7:11
Citrus goes so far in so many different recipes.
7:15
It just adds so much.
7:16
It's got the, you know,
7:18
it's just got that thing, that oomph factor.
7:23
So I'm gonna let that lemon juice get hot.
7:28
We will use two eggs on each bowl of grits here.
7:33
This is a hearty, hearty serving.
7:44
Two beautiful eggs over those grits.
7:47
Wow, look at that. That's beautiful.
7:49
I would be happy to be served that in a restaurant.
8:00
A little bit of asparagus.
8:04
Yeah, it looks great.
8:26
And right over the top,
8:33
a little bit of lemon juice and butter.
9:02
On the asparagus that had not had any salt yet.
9:07
And voila. Gosh, does that look nice.
9:12
Creamy grits with eggs and asparagus.
9:15
What a great looking, hearty dish.
9:19
That's a really nice looking, hearty dish
9:21
that is really easy to make at home and it looks fantastic
9:25
so make this for your family and friends.
