- Hey, y'all welcome back.
0:01
Mom and I are in the kitchen today
0:02
and we're doing one of my favorite things:
0:04
peanut butter and jelly.
0:06
- And we're doing them in a muffin.
0:07
My favorite part is the surprise jelly center.
0:09
These are my favorite.
0:10
- And listen, here's the great part.
0:11
They're all done in a food processor, y'all.
0:16
So, I'm gonna measure out two cups of all-purpose flour.
0:21
Okay, you're putting in a quarter cup of brown sugar.
0:23
These are not all that sweet, are they?
0:26
- Not overpoweringly sweet.
0:28
- Well, we've got the jelly and the peanut butter,
0:30
so there's some sugar in the peanuts.
0:32
So, there's my two cups of all-purpose flour, y'all.
0:36
Now I'm gonna add two tablespoons of baking powder.
0:42
So, they're gonna pump those puppies up.
0:45
I think we just need a half a teaspoon of salt, son.
0:53
Now while you're doing that,
0:55
I've got some wonderful honey-roasted peanuts over here.
0:58
Now, I'm gonna go ahead and start trying to chop on these.
1:01
- Go ahead and start on those.
1:02
I've pulsed together our dry ingredients
1:04
and I'm gonna put in a half a cup of peanut butter.
1:08
And now this is gonna kind of,
1:10
once we beat all of this together,
1:11
it's gonna be kind of crumbly, you know?
1:13
- Uh-huh (affirmative).
1:14
Now, and you're using a smooth peanut butter, right?
1:17
- I am. You're gonna put nuts on the top.
1:18
- You can use crunchy or smooth,
1:20
you know, whatever you've got.
1:22
But I just like creamy peanut butter
1:25
so that I have the option of adding the nuttiness to it.
1:30
And I'm gonna do anywhere between a third and a half a cup.
1:34
It depends on how peanutty you like it.
1:39
(food processor whirring)
1:45
- Now, I pulsed in our peanut butter.
1:46
This is kind of a crumbly dry,
1:48
so I need to get our wet stuff in here.
1:50
I need one egg-- - [Paula] One egg.
1:52
- [Jamie] One slightly beaten egg.
1:55
Well, I'm still chasing these peanuts
1:57
on this board down here.
2:00
- Next, I'm gonna put in one cup of whole milk.
2:10
We've got three tablespoons of melted butter.
2:13
- Oh, yeah. (mumbles)
2:14
Can't forget the butter.
2:16
'Cause that's the only shortening in there
2:18
besides the oil from the peanut butter.
2:22
All right, son, I think I've about got these done.
2:26
Now, while you're beating that up,
2:27
I'm just gonna spray our pan.
2:30
- 'Cause we want our muffins
2:31
to come out very pretty and whole.
2:36
- Mm, smells so good.
2:39
- No, the peanut butter.
2:47
- Now we're gonna go scoop,
2:50
and then mama's gonna put the surprise in.
2:52
- Yep. There's a little surprise in the center
2:55
for everybody with these muffins.
2:58
Now, I'm gonna put about a teaspoon of raspberry jelly.
3:03
You can use any kind of jelly you like.
3:07
If you like grape or you like strawberry, you know,
3:11
you want to pick your family's favorite.
3:13
And, of course, you could always mix it.
3:16
And then Jamie's gonna come back and cover it
3:19
not quite with a full scoop
3:22
so that they're like three quarters filled.
3:25
Do you like raspberries?
3:27
- [Jamie] Love raspberries.
3:28
- [Paula] Not quite so much, son.
3:31
- Okay, I'm gonna take a little of that out.
3:34
- Raspberries are Jack's favorite.
3:36
He puts them on his fingers.
3:38
And see, I thought blueberries,
3:39
he calls them BBs. - BBs.
3:43
- He'll come over and say, Guinea, can I have some BBs?
3:45
- But he can't put BBs on the end of his fingers.
3:47
- Yeah. - He likes to wear them.
3:50
- So what a nice little surprise.
3:52
That peanut butter smells fabulous, son.
3:55
- The profits are in the corners.
3:57
- That's exactly right.
4:00
Those look perfectly delicious, son.
4:04
- Cover them with our nuts.
4:07
- So, the peanuts are packed with flavor, too.
4:11
- Now, we've got all these ready,
4:12
we're gonna go into the oven.
4:13
The universal cooking time for all things,
4:15
350 degrees for 15 or 20 minutes.
4:21
- And over here, I've made a little compound butter, y'all,
4:26
- [Jamie] I'm gonna sit down and taste it full, too.
4:30
And look in there at our surprise.
4:39
Mm, peanut butter and jelly, great time of day,
4:45
with the butter on it.
4:48
- [Paula] So good, son.
4:51
Hey, y'all, it's Paula Deen.
