- I am going to share with y'all a recipe,
0:05
you know, that will taste real good after the holidays,
0:10
because you've probably been eating really,
0:12
really rich things.
0:14
And the weather will probably be colder.
0:17
So I'm going to share with y'all
0:19
the Lady & Sons Chicken Noodle Soup.
0:21
And Casey was saying she has made this many a time.
0:25
In fact, Casey probably cooks more of our recipes
0:29
than Theresa, or maybe even myself. Cause you know,
0:35
when I get to cooking I don't use too much recipes.
0:38
But yeah, I mean, Casey knows about everyone I'm in,
0:42
after she tries one you'll post it.
0:44
Won't you, dear? - Yeah!
0:45
This is really, really good. - Yeah!
0:47
And she has two precious children.
0:51
They are beautiful. Now how old are they now?
0:54
Riley is 11 and Michael is 7. - 11!
0:58
- Yeah!
0:59
- She can't be!
1:00
- She is!
1:01
- She was just 4 a day before yesterday.
1:04
- Yeah, middle school now.
1:06
- No, Casey. - Yep.
1:09
And how's the-
1:10
- Michael's 7.
1:13
- 7 comma 11! - Yeah.
1:16
They grow quick!
1:17
- Well, would you please bring them out here?
1:19
- Yes, of course!
1:20
- I would love to see 'em. - They'd love to see you.
1:23
- Well, they are beautiful.
1:25
So, Casey makes sure she feeds those children
1:29
very, very good nutritious food, don't you?
1:32
- Yep.
1:33
All right, so I'm going to start
1:35
and then I'll tell y'all how this recipe came about.
1:38
It calls for three and a half quarts of water.
1:44
So, this is a one quart measuring cup.
1:48
(water pouring)
1:53
So, that's two quarts.
1:56
(water pouring)
1:58
And then our third quart.
2:06
(water pouring)
2:07
And now, a half.
2:15
(water pouring)
2:16
So, there we go.
2:19
(laughs loudly)
2:21
I'm telling you what- Oh!
2:24
As you get older, Casey,
2:26
these heavy pots can be- - I know.
2:29
hard to deal with.
2:31
You know, I'm going to take this off.
2:32
I'm going to slide the cutting boards off,
2:36
cause
2:38
I wanna cook this on the big eye.
2:42
(switching on gas burner)
2:45
There we go.
2:46
Now, we have a whole chicken.
2:52
I'm going to just put this in
2:55
and we're fixing to have a wonderful, wonderful stock.
3:00
And then we'll, we'll pick the meat
3:04
off of the bone.
3:08
Thank you, Case. I'll keep that. How about that?
3:11
All right. Now, to this,
3:12
I'm going to add three bay leaves or like two and a half
3:17
I'm gonna add three cloves of garlic.
3:28
I'm gonna add-
3:30
- It's Italian. - How much?
3:32
- It is-
3:33
- This is Italian- - Two teaspoons of Italian.
3:35
- Okay.
3:37
Italian seasoning.
3:39
- A teaspoon of the lemon pepper.
3:42
- Perfect!
3:45
And that lemon pepper is good.
3:47
It gives you just a hint of lemon,
3:50
but you
3:51
you would think lemon pepper wouldn't have salt in it,
3:54
but it does.
3:55
Salt is the number one ingredient
3:57
for that particular recipe.
4:03
So-
4:04
- And it also calls for onion.
4:07
- Good, good, good. And that looks like one large onion.
4:14
Okay. So, our stock is going to be really, really tasty
4:19
in the s-
4:22
So, I'll tell you how this recipe came about.
4:25
I'm going to put a nice serving of wet chicken base
4:29
in there,
4:30
to just make sure that our stock has the strength
4:35
that we want it to have.
4:37
And
4:39
towards the end,
4:40
I may even add some more Italian seasoning because, to me,
4:43
that that really makes it nice, Casey.
4:47
- Yep.
4:49
So, Corrie was sick
4:53
and you know, she had a bad cold or something.
4:57
I mean, but she was pretty sick and she said,
5:01
"Paula, I just need,
5:05
I just need something to make me feel better."
5:08
"Well, I'll make you some."
5:10
She said, "Well,
5:12
the only chicken noodle soup I like is from Chick-fil-A."
5:17
I said, "Well, I'm not going to Chick-fil-A.
5:21
So you just tell me what it's like,
5:25
and I'll try to get as close to theirs is I can."
5:29
Well, so I made it for her and she said,
5:33
"This is better than Chick-fil-A's!"
5:36
I said, "Well, good. I appreciate you guiding me
5:41
on the ingredients as to what you think you would want."
5:46
So, it's going to take the better side of 30 to 45 minutes
5:50
for that chicken to cook.
5:52
And
5:55
I have everything in it right or not, Case?
5:57
- [Casey] Yep, that's it.
5:59
All right. Let's see, I don't put any salt and pepper in it
6:01
at this particular time.
6:03
- [Casey] You can go and put a little bit in there. Yep.
6:05
- Yeah. I think our will, because if you don't,
6:09
sometimes it's hard to get it salty enough.
6:13
I'm going to add one teaspoon of salt
6:17
and this is a half a teaspoon that I'm measuring with.
6:21
And I'm going to
6:25
put some coarse ground pepper in it.
6:28
I just love-
6:30
You know, I have a preference.
6:33
I just like the coarse ground pepper so much more than I do
6:36
that real fine ground up.
6:42
Okay. So, that was a teaspoon on each of salt and pepper.
6:50
Let's see-
6:51
- [Casey] Just let that cook down for up to 45 minutes.
6:53
- Yes. Yes. - And then we'll pick
6:56
the chicken off
6:57
and then we'll put the rest of the soup together.
6:59
- Okay.
7:00
Do you not think the carrots need to go into that?
7:04
How did I do this? It's been many years
7:06
since I formulated it. - Yep.
7:07
You bring the soup back to a boil,
7:09
should remove the chicken and then
7:10
add the carrots. - Yeah. Add the carrots.
7:11
- And then the celery. - Yes.
7:13
Because I like,
7:15
I don't like crispy carrots.
7:19
And in this soup, I want the carrots done.
7:22
So, it will be to boil in a second
7:26
and then I'll pour that in and I'm gonna-
7:29
Once it starts boiling, I'll lower the temperature
7:33
and put a cover on it.
7:35
This has come to a boil.
7:36
So, I'm going to go ahead and add our carrots
7:39
and add celery.
7:42
You know, the recipe-
7:42
Sometimes, my recipes get switched around a little bit,
7:49
I think unbeknownst to me.
7:51
So, it said to add that at the end,
7:54
but we're not because we want that to add those flavors
8:00
to our stock, to create a wonderful, wonderful stock.
8:04
So, in that goes, and then
8:06
I'll be back and look at you again, chicken,
8:08
in about 40 minutes.
8:11
All right. And we'll cut that down.
8:15
And he'll be just fine in there.
8:19
All right.
8:19
Now, I'm jumping back into our
8:23
Lady & Sons Chicken Noodle Soup.
8:25
We let the chicken cool.
8:29
And Casey pulled it off the bone
8:32
and left it in nice big chunks.
8:35
It's going to be delicious in there.
8:37
So, what we're going to do next is cook our pasta.
8:42
So, that'll probably take maybe 10 minutes.
8:50
So, we'll let that go. I'm going to go in and add mushrooms.
8:55
Now, you can use fresh or canned.
8:58
I'm using canned today.
9:01
And
9:06
so, that's it.
9:07
Just going to put the lid back on that
9:10
and let that pasta cook. Ouch!
9:14
Ouch! I said, it's no wonder
9:16
I don't have any fingerprints left.
9:17
- Oh, my goodness!
9:20
- I am burning those suckers off!
9:22
So, if you want me to do a robbery for you and just call.
9:26
because they won't know who I are or nothing.
9:31
No fingerprints.
9:33
All right.
9:34
Now, I know it might seem like a whole lot of steps
9:37
to this Chicken Noodle Soup, but it's so worth it.
9:40
And it really is very easy.
9:43
I'm going to add a little bit of rosemary now to our soup,
9:48
and I'm gonna add some parsley.
9:54
And I'm going to add our chicken.
9:59
Beautiful, fresh bowl of chicken.
10:04
All right!
10:07
It looks so good.
10:13
Doesn't it look good, Mikey?
10:15
- [Mike] Yes, ma'am.
10:15
- All right. I'm going to add a little Sherry.
10:20
Just a little.
10:23
And you can always add more at the table.
10:28
You can pour a little pitcher of it.
10:31
And, I always, always,
10:34
and it may not call for this in the recipe.
10:36
But you know what I do, Casey?
10:40
- Had to add the butter.
10:40
- Yes. I always add a little butter
10:43
to blend that butter flavor through the noodles.
10:51
Okay.
10:54
Right now, though, this is at the very last step
10:56
because I add a little bit of heavy cream
11:01
to the end of my soup.
11:03
But I don't let this come to a boil.
11:05
You know, I want all the boiling to be done with.
11:09
So, in goes our heavy cream.
11:17
Yum!
11:18
And that heavy cream, you don't have to use that,
11:21
but it does just take it to another level.
11:28
And if it's Corrie approved.
11:31
She can be a little turd.
11:35
All right.
11:37
Now, the last thing I'm going to add
11:38
is fresh grated Parmesan cheese.
11:45
Okay. I'm going to save some for garnish. Okay?
11:48
- Okay. All right.
11:50
- And we need a little butter for our
11:53
for our French bread, don't we?
11:57
So, there's you some butter.
12:01
I just cut it a little thin, I'm gonna take this one.
12:05
Here's me some butter.
12:10
There's nothing like French bread.
12:14
(soup splashing)
12:24
I'm gonna sprinkle it with a little bit more cheese for ya.
12:28
- Yum!
12:29
- And there is your serving, missy ma'am.
12:32
- Thank you!
12:33
- You're welcome!
12:35
Mike, would you like some of this?
12:38
- [Mike] No, thank you.
12:41
- You don't know what you're missing.
12:42
- I know, he wonders,
12:43
"Why in the heck does she keep bothering me?"
12:50
All right. I'm going to turn that off
12:53
because I don't want it to boil.
12:58
And if you want some more Sherry-
13:00
- This looks perfect!
13:01
- You can put it in there.
13:07
This is good for one year olds, y'all.
13:09
- Mm.
13:10
- Isn't it?
13:20
- So good.
13:21
- I wish Corrie was here to have some.
13:24
She moved to Birmingham.
13:27
Oh!
13:32
Oh! I think I've got my bread too hot to eat.
13:36
- So good!
13:42
- I'm going to let it cool though, I mean
13:44
I mean it. Oh!
13:49
It's hot as fire.
13:52
You know what? I don't see enough yellow in mine.
13:59
If you want some more yellow, there it is.
14:01
- Mm.
14:07
- Mm, mm, mm, mm, mm.
14:18
This is so good.
14:19
- So good.
14:20
- Guess what you and your children and your husband
14:23
are having for dinner tonight.
14:24
- Some Chicken Noodle Soup.
14:28
- Mm, mm, mm.
14:31
Like I said, I know it seems like a complicated recipe,
14:34
but it's not.
14:36
- So worth it! - You know,
14:37
it's just boiling your chicken,
14:38
you know, waiting for that to cook
14:39
and then picking it off the bone and that's it.
14:43
- It's worth it. - Mm, mm, mm.
14:47
- That French bread
14:49
dipped down in that rich broth is so good, isn't it?
14:52
- It is.
14:54
- Well, I hope this feels so good, you know,
14:57
on that cold January day that you come to say,
15:01
"Thank you, Paula."
15:05
Love and best dishes, y'all.
15:07
Thank you, Casey.
15:09
- Thank you, Paula.
