0:00
- I wanna share with y'all today a recipe
0:03
that has been so, so popular among our friends out there.
0:10
It's got five stars all over the place,
0:14
and it's a quick and easy chicken pot pie.
0:18
Now I'll tell you right off
0:19
this is not the chicken pot pie
0:22
that I made so, so long ago,
0:27
when I was raising my little children.
0:30
It was much more work than this one.
0:34
But nothing can beat that chicken pot pie
0:37
that I used to make,
0:38
and I'd roll the crust out,
0:39
and would lattice it.
0:41
And it was just not only beautiful, it was wonderful.
0:46
But this can be almost as wonderful as that
0:50
with a lot less effort y'all.
0:52
And I know we're all time deprived,
0:56
so let's get going.
1:00
Two cans of cream of chicken soup
1:04
in a large bowl.
1:10
You know if it's got canned soup in it
1:11
it's gonna be an easy recipe.
1:16
All right.
1:16
One can down.
1:35
Okay that's about the best I can do.
1:38
All right, we're gonna add
1:40
one cup of sour cream
1:43
to our soup mix.
1:49
Mix that up.
1:50
I've got a half a teaspoon of parsley,
1:54
a fourth of a teaspoon of garlic powder,
2:02
a fourth of a teaspoon of salt,
2:04
and a fourth of a teaspoon of pepper.
2:11
So we're just gonna mix those up real good.
2:15
And to make this super, super easy,
2:17
you just run through your grocery store,
2:19
and get one of the most wonderful roasted chickens.
2:24
I think all the grocery stores,
2:26
they have really nailed the method
2:31
for roasting their chickens.
2:33
They're always very, very good
2:36
if you don't have the time to roast
2:38
or boil your own.
2:45
So I just wanna stir this up real good,
2:47
make sure everything's mixed up well.
2:58
Oh, shoulder, shoulder.
3:01
Theresa is this a half a cup of soup you've got,
3:04
half a cup of milk you've got in here for me?
3:06
- [Theresa] Yes, ma'am.
3:07
- Okay.
3:08
So we're gonna add a half a cup of milk.
3:11
The recipe calls for one cup of milk divided.
3:15
So the other half of that milk
3:17
is gonna be coming up in a few minutes.
3:25
Now I have sprayed a 13 x 9 x 2 dish over here.
3:34
And now I'm gonna add a package of frozen mixed vegetables
3:41
that I let thaw out,
3:42
and it's the corn
3:43
and the peas and green beans.
3:48
So your children are getting all their vegetables.
3:54
They're getting their protein.
3:56
They're getting the calories with the biscuit,
4:01
which they need, some fat.
4:06
All right, this is so pretty and so bright.
4:11
The way the producers freeze vegetables now,
4:17
they flash freeze 'em,
4:18
and it's just like they're sending 'em to us fresh.
4:25
All right, now the recipe calls for
4:27
three cups of chicken.
4:29
And I'm making sure I got all that dark meat,
4:32
I'm gonna start with that.
4:33
But that's three cups from somebody that doesn't
4:37
wanna use all the meat.
4:41
And that's all right too
4:42
if your family's not a big meat eater.
4:46
All right, I need to get me a knife.
4:50
Now I like to cut my chicken,
4:53
or pull my chicken.
4:54
And I like for it to be big enough
4:57
that you know you're bitting a piece of meat.
5:04
So if you like it shredded,
5:08
by all means shred.
5:10
But I like mine nice and chunky, like me. (chuckling)
5:17
Ain't that right, Eddy?
5:26
So we've got three cups right here.
5:31
But I sure do like the idea of four cups.
5:38
I'm gonna push it just a little bit.
5:44
I can save this little bit for Lulu,
5:47
she does love her some chicken.
5:54
Okay.
5:55
So in that goes.
6:01
Look how pretty that looks.
6:05
Everything your children
6:06
or your husband or your wife
6:10
or your friends.
6:13
We got everything we need in this one dish,
6:16
and I think that's why it's been so popular over the years.
6:24
I think that's the reason.
6:25
All right, I'm gonna step over here,
6:27
and get the things for the biscuits to go on top,
6:30
and I'm gonna give my hands a quick wash.
6:43
Okay, Theresa.
6:44
- Now I poured milk,
6:45
but sometimes you like buttermilk,
6:47
so I don't know,
6:48
and we do have buttermilk
6:49
so I don't know what to do.
6:50
- Yes, we've got lots of buttermilk.
6:52
- And I know that's not enough cheese,
6:54
but that's what the recipe calls for.
6:56
So let me just go ahead
6:57
and hand you this one.
7:00
(Paula laughing)
7:01
- Thank you.
7:06
I guess it's a good thing
7:07
when you get to know each other so well
7:09
you can read their thoughts
7:11
or finish their sentences.
7:15
That's why I've kept her what, how many years?
7:17
20 something?
7:19
- [Theresa] Yep.
7:21
- All right.
7:22
So I'm using, what does it call for?
7:25
Two cups?
7:26
- [Theresa] One and half cups of baking mix.
7:28
- One and a half cups of baking mix.
7:29
Well you know for sure that I'm using
7:34
Paul Deen biscuit mix, it's just so, so good,
7:39
but it's any kind of mix that you have
7:43
that you can get at the grocery store.
7:45
I think mine is only online
7:48
if y'all wanna try that.
7:50
And it calls for a half a cup of sharp cheese,
7:54
and a half a cup of milk.
7:59
So we're just gonna mix this until all the dry ingredients
8:09
are moistened,
8:16
and then we're gonna drop it on top
8:18
of our chicken pot pie essence.
8:33
I picked a little bowl, didn't I y'all
8:36
to make this crust.
8:41
All right now at this point I like my biscuit batter
8:51
to be a little thinner,
8:53
so I am gonna grab that buttermilk Theresa,
9:00
'cause right now it is pretty stiff.
9:12
So I wanna, I wanna make it just a little bit looser.
9:20
- [Theresa] Would you like a bigger bowl?
9:22
Oh no, this one's perfect.
9:28
See now how dry that was?
9:33
And I like, since we're using this
9:36
for a topping on our dish,
9:39
I like it to be a little thinner
9:42
so it will kind of spread out on top of our casserole
9:47
and not just land in globs.
9:49
So that's,
9:52
like I said I change my own recipes
9:54
all the time y'all. (chuckling)
9:56
That's what you're supposed to do.
10:00
So that's probably,
10:04
I might have used a half a cup of buttermilk.
10:11
Now I sprayed our dish
10:13
with a little olive oil.
10:17
So I'm gonna pour this in our dish.
10:33
Get every last drop.
10:45
And this can feed a lot of people ya'll.
10:50
- [Theresa] All the triplets you got?
10:52
- You know, if they saw something green
10:54
they would probably say I don't eat that.
10:59
But last night I made Michael and me a wonderful supper.
11:05
I made a marinara sauce,
11:09
and then I cut it with half and half,
11:12
making a creamy marinara,
11:16
and it consisted of fresh shrimp and bacon.
11:24
It was so good.
11:25
- [Theresa] They thought it was good?
11:26
- Well I don't know.
11:27
I've got some left,
11:28
so I thought I'd call Claud,
11:30
and see if she would like to try that tonight
11:32
for their supper, 'cause I cooked a bunch.
11:38
All right, so you can see
11:40
about how thin I've got this batter.
11:46
And now we're just gonna drop this on top of our pie mix.
11:57
And I hope y'all understand what I'm saying
12:01
when I said a thinner batter,
12:06
'cause that way it will spread more
12:08
rather than just having a glob of dough.
12:15
So to me this is just more appealing this way.
12:20
But you can do it any way your heart desires.
12:26
And, Theresa, I didn't use anymore cheese.
12:31
Just when you think you know somebody they change.
12:38
You know, I've said for years
12:40
just when I think I got the answer
12:42
they change the damn question on me.
12:46
So I feel like I don't make much progress.
12:52
Okay.
12:53
How easy was that?
12:57
So in the oven it goes, 350 preheated oven.
13:05
We're gonna bake it probably about 45 minutes.
13:09
Let me check and see.
13:11
Maybe see how that loose batter,
13:16
you know I've made dishes like this before
13:19
where you could pour the biscuit right on top of it
13:23
it would be that loose.
13:25
So, Theresa, would you mind
13:26
putting that in the oven, please?
13:28
- [Theresa] Not at all.
13:30
- All right, easy chicken pot pie.
13:33
We made it,
13:34
look at this,
13:35
look at that beautiful chicken in there.
13:37
We let this cook for about 45 minutes,
13:39
and we let it cool some
13:42
so I can taste it without-
13:46
- [Theresa] Burning off your mouth.
13:48
- Pulling the skin off the inside of my mouth.
13:57
This is so delicious y'all.
14:02
Mm.
14:05
And I'm so glad that I added some buttermilk
14:11
and made that batter thinner
14:13
so it spread out
14:14
so everything could have a little-
14:16
- [Theresa] Little space.
14:18
- Have a little biscuit with it
14:22
instead of just mounds sitting up.
14:27
Delicious y'all.
14:28
I understand why those out there
14:33
that have made this recipe gives it five stars,
14:36
'cause it's delicious.
14:39
- [Theresa] Well it's you're recipe.
14:40
- I got grease on my glasses. (laughing)
14:46
So good.
14:50
So I'm glad y'all are liking it.
