I cook all my fresh vegetables,

when I'm cooking them Southern style,

I cook them basically the same way.

And I told you when we were doing the black-eyed peas,

the hog jowl is for our health,

we have to have hog jowl on New Year's day.

So I have just cut two nice slices off

and now I'm just gon' cut it down a little bit,

not all the way through,

but kind of close to the rind.

And now I'm gonna put a little spray

in my,

because I'm gonna,

fry this off for my turnip greens.

So I'm gonna come back here

and like I said, I'm gonna fry the wonderful flavors

of hog jowl.

I'm gon' fry those flavors out.

And then we gon' put our greens in.

And I told you I was cheating today,

because I'm using bags

that have been triple washed

and already cut up for me.

And this saves probably about an hour and a half, y'all.

By the time you get the bunches

and you strip all the leaves off and wash them,

two or three times to make sure all the grit and dirt's,

off of them.

So I bought two bags of turnip greens.

And because I love the tartness

of mustard greens,

I bought one bag of that.

So I'm gon' mix my mustard in with my turnip greens

and they're gonna be so good.

- [Eddie] I mean, do you mix them with collard greens-

- No, I don't mix them with collards.

I always cook collards straight up y'all.

But turnip greens and mustard greens are so good together.

And my stepdaughter, Michelle,

when I cook turnip greens and make cornmeal dumplings

and drop down in that wonderful, wonderful broth.

So I may do that too, but right now,

because I don't have to wash these,

it is such a wonderful, wonderful,

to cooking greens.

You can imagine having all those bundles of greens,

all spread out over your kitchen

and then finding things to wash them in.

It's just really something else.

And because,

these come with just the green tops,

you have to buy your turnip green root separately.

And they're getting ready for a New Year's day.

I don't think I've ever seen turnip roots,

packaged like this.

Usually, they're just lose,

and you can buy them like a potato or an onion,

but these are our roots and I'm gonna peel these.

And it doesn't take as long to cook the roots,

as it does the greens, believe it or not?

So I'm gon' put the greens on first

and then I will peel and slice these

and throw these in the pot,

maybe the last 15 minutes of cooking.

And you know what?

I'm just wondering.

I think I'm gon' do one more,

one more slice of hog jowl

because I got three bags, so that would be,

So instead of cooking this hog jowl in water,

I wanted to fry it

and get all that flavoring out of it.

And you see it produced a good bit.

So now we're gonna add our turnip greens

and our mustard greens to that,

and I'm gon' stir them up around in there

and I'm gon' get me some water ready to go in there.

But I'm gon' really try to bathe them good

in all that wonderful flavor that the hog jowl gave us.

Now, the one thing about,

turnip greens or mustard greens,

they're not good,

unless they have a lot of fat on 'em.

And that's just the way it is.

Now, here's the only thing that I don't like

about getting these pre-chopped.

They don't have any kind of machines

that can remove the stems.

And I don't like the stems in mine.

That's why I de-stem 'em,

but I'll just pick them out as I go.

Usually, I will dump these out into a big bowl

and go ahead and de-stem 'em,

before I ever put them in the pot.

But to me, turnip greens are not as bad as collard greens.

I don't like those,

big veins in the collard greens

but the turnip greens, it's not so bad.

All right, so I'm just gonna kind of stir that around

in that hog jowl juice.

And I'll steady be picking out those stems as we go.

Now turnip greens, you can start with a bag,

and you might end up with that many.

Unlike a collard green, a collard green is more dense,

where a mustard and turnip greens, they're more fragile,

they're softer, so they cook down a lot.

So next, I'm gonna add,

let's go ahead and put our mustard in there.

But the one good thing about it, if you see stems,

you know somebody's cooking fresh greens.

And it really depends on how old they are,

A green that has been exposed to cold weather

And those kind of greens,
