Today, we're still sticking with the summer theme

and we are going to be making a delicious,

simple smashed date dish,

it's a dessert that you can enjoy for the summer.

You know, we're all about calories,

and wanting to look good in the summer,

it might be a little late now

to try and start thinking about it,

'cause it's a little late in the summer,

but it's still just a healthy option

that's quick and easy, affordable,

that you can make for you and your family,

especially the snack on during the week,

when you're just wanting to soothe those sweet cravings

that you might be having.

And so we're going to make this today,

what we're going to do is take some pitted Medjool dates,

and we are going to take them and put them

in-between some parchment paper right here that I have,

and we're gonna use the bottom of a glass,

and just smash the date.

Just smash it until it's just a little bit thin.

And we're going to take this,

and you don't have to smash it

until you like pulverize it, but ...

Okay, so now we have smashed a couple of our Medjool dates,

as you can see, if you don't have a glass,

you can just do it with your hand

in-between two sheets of parchment paper,

and now what we're going to do is

take a little bit of peanut butter,

and place it on top of the dates.

You could use almond butter,

or any other type of nut butter that you like,

peanut butter is just, you know, readily available,

and you can find it in any grocery store,

but again, I love almond butter,

that would be really, really good in this,

I had this dish in South Africa a couple of weeks ago,

I was there doing some work with, again,

the missionary support that we provide in other countries,

and one of those is in South Africa,

and while I was there, one of my friends made this,

and Sylvie was like, "Oh, do you wanna try it?",

and I was like, "Yeah, absolutely."

And I tried it, it was addictive,

I kept wanting to eat this,

and we had a bunch of other dessert,

one night we had this huge,

they call it "a nation's dinner",

and it was like 40 different people there

from all different countries,

and everybody had to create a specific dish

from their country, and so, you know,

I made something America, I don't even remember,

but we had so much food, so many desserts,

and I didn't want anything else,

I just kept going back to this,

because it was so delicious and so healthy,

and you know, sometimes when you eat healthy food,

but you really don't, not with something like this,

because it's so easy to make,

and you're using really good quality ingredients,

and the flavor is just, that's the byproduct,

and so now what we're gonna do is just finish this up,

Okay, so now that we've added our peanut butter,

we are going to now spoon

some melted semi-sweet chocolate,

if you are Ms. Paula, you're gonna to use milk chocolate,

'cause she does not like dark chocolate,

but we're just gonna spoon a little bit of milk chocolate,

or dark chocolate, whatever you want, melted down on this,

and just cover each one.

If you like a lot of chocolate,

you could just freeze the peanut butter and the dates,

and then dip it in, dip the whole thing in chocolate,

and then just use a fork to dip it out and then refreeze it,

but this is just the simplest way to do it.

And the good thing again is you are using semi-sweet,

so it's not super duper sweet, you can cut the calories,

if you wanted to use carob chips instead of chocolate,

This is a good dessert to, you know,

I like to just take some fresh fruit,

and then add in some fresh mint,

and then I also will take some Greek yogurt,

some full fat Greek yogurt, put it in a bowl,

and then spoon some of that fruit on top with mint,
