0:02
I am standing in for Paula this lovely day.
0:07
Theresa roped me into doing this. (laughs)
0:09
- I just- - And she is very grateful.
0:11
- (chuckles) I sent her a recipe from my childhood.
0:15
It was a dessert that...
0:18
Or, yeah, I guess a dessert
0:20
that my mother would make.
0:22
Growing up, I would say our family house
0:29
friends, relatives, everyone came
0:31
for anything that we were having going on-
0:34
- [Theresa] Eddie, tell 'em how many siblings you have.
0:37
- There are nine of us,
0:42
Let's put it this way, I'm towards, I'm number seven.
0:45
And growing up, if a friend dropped me off,
0:48
you know, after school,
0:49
or you know, friends coming over
0:51
and there would be maybe three or four cars
0:56
in front of the house,
0:56
and they'd be like, "Are you having a party?"
1:00
"I think just more than one sibling showed up
1:02
at the same time, that's it."
1:04
So anyways, when I went home last year for Christmas,
1:08
I was going through some of my mom's recipes
1:12
and I started asking her, I said,
1:14
"There was a dessert you made and it was called Lemon Lush."
1:17
And I said, "I just remember," you know,
1:19
as a kid, it was kind of more,
1:21
I guess like on the side of the table
1:23
that maybe, you know, the adults
1:25
would probably go towards for food.
1:27
It wasn't, you know, your typical cookie or brownie.
1:31
And I, you know, ventured towards the Lemon Lush
1:34
and I thought it was great.
1:36
It has, you know, a nice crumbly base to it
1:43
with chopped walnuts, which I think Paula will like.
1:47
So anyways, we're gonna get started.
1:49
This is, you know, just a couple of steps.
1:52
We do have to bake the base.
1:54
So, what you're gonna do is two sticks of butter
2:00
and you're going to just use a pastry cutter
2:04
and make it kind of crumbly.
2:09
And that's still kind of hard, Theresa.
2:15
- [Theresa] I think that's to help
2:17
with the butter. - [Eddie] Yeah.
2:18
- I mean, with the flour. - Yeah. Yeah, yeah.
2:22
- [Theresa] I've never truly understood
2:24
why you have to keep your butter and your flour cold.
2:28
Maybe there's somebody out there that know that secret
2:31
and can comment on this video.
2:35
- And I can honestly say, I have never made this.
2:37
I've only had the pleasure of eating it.
2:40
So if you're a lemon fan, I think you'll like it.
2:45
Okay, so now that it's all into nice little pieces,
2:49
the butter and the flour,
2:51
that's two cups flour, one cup butter,
2:55
we've got some chopped walnuts.
3:01
- [Theresa] And there'll be a recipe for you.
3:02
I'll link to a recipe, so if you're missing out.
3:07
- [Eddie] And now, you're pretty much
3:08
going to have to just use your hands, and-
3:12
- [Theresa] I made Eddie wash them.
3:13
before we started. (dish scraping)
3:18
- She forced me to wash my hands. (laughs)
3:22
- [Theresa] That's the last thing you gotta do with Eddie.
3:25
- Okay, so I've got it all patted down into a 9 by 13.
3:30
Kind of really wanna press it down,
3:32
get all the butter and flour,
3:34
walnuts all incorporated in there,
3:37
and we're gonna go into a 350 oven
3:41
for 20 to 25 minutes.
3:45
Okay, we're back with step number two
3:49
and we've got one eight ounce cream cheese block.
3:53
Got a cup of powdered sugar,
3:56
confection sugar as Paula calls, (laughs)
3:59
and one cup Cool Whip.
4:02
And so, we're going to start beating it up a little bit.
4:06
(cream cheese squelching)
4:08
Theresa got that very nicely softened.
4:11
- [Theresa] I tried to, I was up early this morning.
4:16
- All right, so I've got the cream cheese
4:18
and the confection sugar incorporated pretty well.
4:23
I'm going to add Cool Whip, one cup.
4:33
All righty, we've got it all blended up.
4:36
And while the crust is baking,
4:41
we're going to just go on
4:42
and stick this in the refrigerator for a little bit
4:45
and we'll move on to step three.
4:48
All right, step three, very simple.
4:51
We're using some lemon jello
4:53
and we're gonna blend it up just normal.
4:56
Two 3.4 ounce boxes with three cups of milk.
5:08
(bowl scraping and thunking)
5:13
Look at that yellow. (chuckles)
5:15
- [Theresa] Very pretty. (Eddie continues chuckling)
5:22
- All right, and we're just gonna get this all blended up
5:24
and again, put it in the refrigerator until crust is ready,
5:27
and then we'll assemble all three pieces
5:29
once the crust is cool.
5:32
Okay, so all three pieces are now together.
5:37
The crust is completely cool.
5:41
After putting both of these in the refrigerator,
5:45
we took 'em out, I re-whipped these a little bit
5:48
just to smooth them out a little bit,
5:50
and we're gonna add the cream cheese layer over the crust.
5:58
All right, so we've got the cream cheese
6:00
all spread out over the cookie base.
6:03
And now, the lemon pudding,
6:08
again, spread right up over.
6:14
Okay, and then, the very last part
6:18
with however much Cool Whip you want.
6:21
I mean, if you wanna make your own just for the topping,
6:26
I don't know that I would do it for the base,
6:29
if you want to add your own, that's great.
6:33
As you can see, that's not gonna be enough,
6:35
so we move to the second one. (laughs)
6:38
- [Theresa] Paula style.
6:41
Eddie, you learned from the best. Your mama.
6:44
- Well, you know what? - And I think your mama
6:46
had a lot on top of it.
6:47
- [Eddie] She did, yeah.
6:49
That's what I was just saying. (Theresa murmuring)
6:50
We need to add a nice, thick layer
6:54
And like I said, I honestly have never made this
6:57
and I don't really remember,
7:00
I was not in the kitchen when she made most of this stuff,
7:03
and I have no idea when she made all this stuff,
7:05
but I'm from the generation. - Well, you shouldn't be.
7:08
- Well, no, I mean I'm from the generation
7:11
where you went out in the morning
7:12
and you came home when it was dark
7:14
and you knew it was time to eat.
7:16
Everything was ready.
7:24
So, we got a nice whipped cream topping to it.
7:31
- [Theresa] What's the last but not least?
7:33
- Okay, so the recipe,
7:37
I don't remember her having coconut on top,
7:40
so I'm just going to top it with the crushed walnuts,
7:44
just a little bit on top.
7:46
- [Theresa] But she does have in your recipe, Eddie,
7:48
that you can add a half a cup of toasted coconut.
7:53
But you know, some people don't like coconut.
7:55
- Yeah. - And adding coconut
7:56
with lemon, you know,
7:57
that might be a different type of flavor (indistinct)
8:00
- Yeah, I don't remember.
8:01
I don't remember the coconut part,
8:03
so we're not gonna do that. (laughs)
8:06
Okay. So, there we go.
8:07
It's ready to eat. No waiting.
8:12
All righty. The moment of truth.
8:13
Let's see how I did. (laughs)
8:17
- [Theresa] Is it what you remember?
8:19
- Well, you know what, I can smell it. It does smell.
8:27
If you like- - Bring back memories?
8:28
- If you like lemon, you will really like it.
8:33
The walnut cookie base is just so good.
8:36
It's nice and crisp and very good.
8:41
I hope you enjoy it too. (chuckles)
8:47
